SIMPLE GREEN SALAD WITH APPLES AND ALMONDS
This is a recipe for a very simple and delicious green salad with apples and almonds. The salad takes about 10-15 minutes to prepare and can be served as a side dish for most meat. Because this salad is very light it's a great summer salad and perfect if you are having a barbecue. We normally make this salad if we are in a hurry and still want a healthy element in our dinner. In general we have salads for most of our dinner meals - a salad can be very easy to make and it's a great way of getting a wide variety of different vitamins and oils.

Steps:
- Step 1: Rinse the lettuce and cut it in smaller pieces. Put the lettuce in a bowl or on a salad plate.Step 2: Rinse the cucumber and apple and dice them. Mix them with the lettuce.Step 3: Dice the avocado and put them on top of the salad. We have made a simple guide how to dice an avocado the very easy way. Find it on our blog.Step 4: Rinse the scallions (spring onions) and cut them in smaller pieces. Mix them with the salad.Step 5: Coarsely chop the almonds and sprinkle them over the salad. The salad is now ready to be served.

- Combine vinegar and shallot in bowl; whisk in oil. Season with salt and pepper.
- Arrange enough pancetta in large skillet to cover bottom. Cook over medium heat until brown, turning and adding more pancetta as slices shrink. Transfer to paper towels. Add almonds to drippings in skillet. Cook until golden, about 3 minutes. Transfer to bowl and cool. DO AHEAD Dressing, pancetta, and almonds can be made 2 hours ahead. Let stand at room temperature.
- Place 2 lettuce leaves on each of 8 plates. Drizzle with some dressing. Place mâche, nuts, and apples in large bowl; crumble in pancetta. Toss with enough dressing to coat; mound on lettuce.

- Combine onion, cider vinegar, white wine vinegar, sesame seeds and paprika in small bowl. Mix in 2 tablespoons sugar. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.
- Melt butter in heavy large skillet over medium heat. Add almonds. Stir until almonds begin to color, about 2 minutes. Sprinkle remaining 1 tablespoon sugar over. - Toast the pepitas: In a medium-sized skillet, toast the pepitas over medium heat, stirring frequently, until they are turning golden on the edges and making little popping noises (if using pecans instead, warm them just until they are fragrant). Transfer the pepitas to a small bowl to cool.
- Make the dressing: In a cup or jar, whisk together the olive oil, vinegar, honey, mustard and salt until well blended. Season to taste with pepper.
