I used to get these fries at cheap little Greek restaurants. When I moved, however, no place served them anymore. So I started experimenting and found it was quite easy to make them on my own. These are a simple and delicious way to do fries.

2 teaspoons lemon juice
1/3 cup feta cheese
1 tablespoon all purpose Greek seasoning (if Greek seasoning is unavailable, use 1/2 T oregano plus 1/2 t each thyme and parsley)

  • Cook French fries according to package directions.
  • Sprinkle with lemon juice; sprinkle on feta cheese and seasoning.
  • Serve and Enjoy!

BASIC ROUX

This is an adopted recipe and I will submit any revisions should they be needed once I make this. Make a large batch of roux and keep it refrigerated or frozen. Refrigerated or frozen roux will keep well for up to two months and can be added in its cooled form directly to your soups or sauces for a little quick, thick pick-me-up! It is advisable to add cold roux to a hot sauce or soup.

4 ounces butter or 4 ounces other fat
4 ounces flour

Steps:

  • To make a basic roux start by measuring, by weight, the amounts of fat and flour desired.
  • It's a one to one ratio (e. g. 4 ounces of fat and 4 ounces of flour equal 8 ounces of roux).
  • Butter is the most commonly used form of fat.
  • Melt the butter over medium heat, careful not to start browning it, then slowly add the flour to the butter, whisking constantly.
  • Within 2 to 3 minutes the roux will have a consistency of a cake frosting.
  • Both fat and flour have various levels of moisture content and the possible choices of fat and flour that can be used are many.
  • For example, butter contains a small amount of water.
  • However, bacon fat, which has been perfectly rendered, contains no water.
  • Within these variables there are varying levels of consistencies.
  • If your roux is too thin, add a small amount of flour.
  • If it is too thick, add a small amount of fat to thin it out.
  • When cooking with a roux, be sure to add only cool liquids or ingredients to a hot roux, or vice versa.
  • As you incorporate the liquid into your roux, be sure to whisk frequently and add the ingredients slowly.
  • Then heat the entire mixture until it comes to a simmer.
  • This process will keep the roux from creating lumps.
  • Once all of the liquid has been added to the roux, cook the sauce or soup for at least 20 minutes, otherwise your finished product may have a granular or gummy texture.

3 large russet potatoes, peeled and quartered
2 tablespoons olive oil
1 tablespoon butter
Salt and freshly ground black pepper to taste

Steps:

  • Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
  • Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
  • As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.

We make breakfast for our Saturday staff and students and I was requested to make a large batch of Greek home fries. In a hurry after work on Friday, I decided to experiment. These are now the Saturday potatoes side for the breakfasts at school. I also have to make additional amounts as DH and DS said "not fair" if we do not get any. LOL Enjoy! I reduced amounts for a family of 4-6 not the 30 I need to make for Saturdays. adjust seasonings to taste.

4 medium potatoes (I like red)
1 medium onion, chopped small
3 tablespoons olive oil
1 garlic clove (diced)
1 teaspoon oregano
1 teaspoon pepper
1 teaspoon basil (I use fresh so chop into small pieces)
1 tablespoon lemon juice (I use more to taste as I love the freshness)
3 teaspoons butter or 3 teaspoons margarine
1/2 teaspoon kosher salt

Steps:

  • Wash and pierce potatoes and microwave 10 min (varies depending n power of microwave) until you can push a dent in to potatoes.
  • Let cool.
  • Slice in quarters then slice into 1/2 inch pieces.
  • In the meantime add oil, garlic, pepper, oregano and diced onions in a large fry pan (big enough to hold potatoes).
  • Sauté until just cooked, when onions turn translucent (about 3 minutes).
  • Once potatoes are cut, add to fry pan, add butter and basil and cook over medium heat, stirring so potatoes can pick up all the juices and flavors.
  • Turn to low, cover and let cook for an additional 10 minutes (approx) until potatoes get the crispy brown edges. mmmmm.
  • Add lemon juice and mix.
  • Serve.
  • Note: times are approximately depending on microwave and stove type. I have propane so it cooks hot.
  • ** Add in more or less spices to your liking. I need to adjust for students. With my family, I add in more garlic and lemon and no salt.
  • ***Prep and cook times overlap- this is on the table at my home in less than 30 minutes start to finish.

4 russet potatoes (about 2 pounds), peeled and cut into a 3/4-inch pieces
Kosher salt
5 slices bacon (about 4 1/2 ounces)
3 tablespoons vegetable oil, like soy, peanut, or corn
1 medium yellow onion, thinly sliced
Freshly ground black pepper
1 tablespoon chopped fresh parsley leaves, optional
Pinch cayenne pepper, optional

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
  • Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
  • Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. 3 tablespoons extra virgin olive oil
2 lbs potatoes, cut into small cubes, about 5-6 cups (1/4-1/2 inch)
1/2 teaspoon salt (to taste)
1 1/2-2 cups onions, chopped small
1 teaspoon dried basil (optional)
1/2 teaspoon dried thyme (optional)
1 cup diced bell pepper (I love red, but any color will do)
1 -2 tablespoon garlic, chopped
fresh ground black pepper
sour cream
minced scallion (or chives)
salsa
hot pepper sauce
ketchup

Steps:

  • If you like, scrub potatoes and cut into 1/2" cubes. Place in pan with water to cover and bring to a boil. Cook until just tender, then drain and set aside. You may prep in advance, store them in fresh water in a tightly covered container in the reefigerator. Drain and dry completely befroe using. You don't need to bring to room temperature. I sometimes skip this part and cut smaller and throw into pan.
  • Place a 10" skillet or saute pan over medium heat on stovetop. After a few minutes, add 1 tbls. of the olive oil(or enough to cover the bottom of the pan, wait about 10 seconds, then swirl to coat pan. Turn the heat up to medium high and add half the potatoes, spreading them into a single layer in the hot oil. Let cook a few minutes, then turn down the heat to medium and let cook, without stirring for 5-8 minutes. Resist stirring.
  • Sprinkle in about 1/8 teaspoon of the salt and turn the potatoes over, using a metal spatula. I check to make sure they are getting nice and brown and crispy on the underside before turning. If they are not, let cook a few more minutes. Spread into a single layer and cook without stirring for another 5-10 minutes, or until golden brown. Scrape from the bottom to loosen the potatoes, and toss them around in the pan. Cook for another minute or two, then move them to a bowl, scraping out and saving all the tasty brown tidbits from the bottom of the pan. Repeat this procedure with the remaining potatoes, using another tbls. or so of the oil and another 1/8 teaspoons salt.
  • After cooking the potatoes, scrape out the pan and wipe with a damp paper towel.(I sometimes skip wiping out the pan if it is fairly clean). Return pan to heat and when hot, add remaining tbls. of oil. You can also melt in a little margarine or butter if you like. Wait 10 seconds, then swirl to coat bottom of pan.
  • Add the onions and saute over medium heat for 5-10 minutes, or until it becomes very soft. Sprinkle in the remaining 1/4 teaspoons salt, along with herbs, bell peppers, and garlic. Continue to cook, stirring often, for another 5 minutes or so.
  • Return the potatoes to the pan and stir them into the onion mixture. Saute over medium heat for another 5-10 minutes(more if needed), or until everything is done to your liking.
  • Taste to adjust the salt, and grind in some fresh black pepper.
  • Serve hot or warm, topped with your favorite toppiings. Enjoy!

½ large onion

1 pinch garlic salt, or to taste

Steps:

  • Cut potatoes into 3/4-inch cubes. Cut onion into 2 or 3 slices, then cut rings in half and separate the layers.
  • Heat oil in a 10-inch nonstick skillet over medium-high heat. Add cubed potatoes to the hot skillet and season with garlic salt and seasoned salt. Spread them out evenly over the bottom and allow to cook for 5 to 8 minutes without turning. Turn, and continue cooking, turning every 5 to 8 minutes, until evenly browned.

This came as a request from a friend for her birthday after she came back from Greece. I don't normally like oregano but i like a little on these.

16 ounces frozen french fries
olive oil
oregano (to taste)
salt (to taste)
pepper (to taste) or paprika (to taste)
1 cup yogurt (I use strained Greek yogurt when i can or just strain my own in cheese cloth overnight)
1/2 lemons, juice of or 2 tablespoons bottled lemon juice
1/2 seedless cucumber, finely chopped
2 garlic cloves, minced
2 tablespoons of fresh mint (can use dry but fresh is always better) or 2 tablespoons fresh dill (can use dry but fresh is always better)
salt

Steps:

  • Fill shallow pan with 1/2 to 1 inch of olive oil (the stuff in the big tin jug on the bottle shelf of the store -- don't waste the really good stuff).
  • Heat oil to 350 (or until bubbles form around a wooden spoon).
  • Fry bag of french fries to desired level of brown and drain on paper towels.
  • Season to taste with salt, pepper, paprika, and oregano.
  • To make the tzatziki sauce you can either chop everything by hand and mix or throw it all in the food processor and pulse a few times. I like garlic so I usually add more.

  • (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries.
