This black pepper sauce recipe is kind of like gravy and great to serve with meats such as steak, chicken chop and pork chop. However, it is not creamy like peppercorn sauce.

1 can Beef broth (14.50z (411g))
5 cloves Garlic
1/2 Onion (small)
2 tablespoons Soy sauce
1/2 tablespoon Worcestershire sauce
1/8 teaspoon Salt
2 tablespoons All purpose flour
1 tablespoon Vegetable oil
1/2 tablespoon Brown sugar
3/4 teaspoon Black pepper (Ground (suggest add 1/4 teaspoon and to your taste) )

Steps:

  • Minced garlic
  • Cut onion into small pieces
  • After that, add 1 can of beef broth, 2 tablespoons of soy sauce, 1/2 tablespoon of worcestershire sauce, 1/2 tablespoon of brown sugar, 2 tablespoons of flour and 3/4 teaspoon of black pepper in a container and mix them well.
  • Add 1 tablespoon of vegetable oil into non-stick pan and stir fried minced garlic and chopped onion for a little bit. And, add 1/8 teaspoon of salt.
  • Pour the mixture into the pan and let it cook and simmer for 5-10 minutes. Keep stirring the sauce until it's thicken.

It's very light and flavorful and pretty low in fat, depending on what kind of milk you use. I made this up because I didn't have any butter for my kids' noodles, and dry noodles just won't do!

  • Heat olive oil in a saucepan over medium-low heat. Add garlic, cook and stir until fragrant, 1 to 2 minutes. Add milk, salt, and pepper; stir constantly until simmering, about 2 minutes.
  • Whisk water and cornstarch together in a bowl until smooth. Add water-cornstarch mixture to sauce; stir continuously until sauce is thickened to desired consistency, 3 to 5 minutes.

3 (1 to 2 pound) lobsters, head off, claws cut in half, tail cut into 4 or 5 medallions (shell on)
20 garlic cloves, thinly sliced
2 cups sliced scallions (save 1/4 cup of sliced green scallions for garnish)
2 tablespoons ground black pepper, medium ground
2 cups white wine
2 cups chicken stock
1/4 cup fish sauce
4 tablespoons butter
Salt, to taste
Canola oil, to cook
Canola oil, to cook
1 finely diced yellow onion
1/2 tablespoon minced garlic
1/2 tablespoon minced ginger
3 stalks lemon grass, minced, white part only
4 cups cooked jasmine rice
1 lemon, juiced
Salt, to taste

Steps:

  • In a large, hot saute pan coated well with oil, saute the lobster. Add the garlic, scallions, and black pepper. Deglaze with wine and add chicken stock and fish sauce. Add butter and check for seasoning.
  • Lemon grass fried rice: In a saucepan on high heat coated with oil, sweat the onions, garlic, ginger and lemon grass. Season. Add the rice and saute the rice for 3 to 5 minutes until hot. Add lemon juice and check for seasoning.
  • PLATING On a large dinner plate, mold a mound of rice in the middle and top with lobster. Garnish with sliced scallions.
  • WINE: Fruity Alsatian Riesling, not bone dry like Trimbach, Hugel. We used Gunderloch, Riesling

1 (24 fluid ounce) bottle fish sauce
1 (8 fl oz) jar minced garlic
4 pounds beef top sirloin, thinly sliced
6 tablespoons sesame oil, divided
¼ cup fresh ground black pepper
2 bunches cilantro, leaves picked (discard stems) and divided

Steps:

  • Stir fish sauce and garlic together in a large glass bowl. Add beef slices and toss to coat. Marinate meat for 15 minutes.
  • Heat 1 1/2 tablespoons sesame oil in a large skillet or wok over medium-high heat. Carefully add about 1/4 of the beef slices to the oil and saute until mostly browned, 3 to 5 minutes. Season beef with 1 tablespoon pepper and about 1/4 of the cilantro; continue cooking until the beef is no longer pink, 2 to 3 minutes more. Remove beef with a slotted spoon to a serving platter and repeat process with remaining ingredients.

2 tablespoons peanut oil
1 onion, halved and thinly sliced
2 garlic cloves, crushed
600 g steak fillets, cut thinly 2 . 5cm strips
2/3 cup beef stock
3/4 teaspoon cornflour
1 1/2 teaspoons cracked black pepper
1 tablespoon soy sauce
1 tablespoon hoisin sauce
steamed rice, to serve

Steps:

  • Heat wok over medium high heat until hot.
  • Add 3tsp oil.
  • Swirl to coat.
  • Add onion and garlic. Stir-fry 1-2 minutes. Transfer to bowl.
  • Increase heat to high, Add 3 tsp oil and half the beef. Stir fry for 3 minutes. Remove from wok to plate. Repeat with remaining beef.
  • Blend together 1 tablespoon stock and cornflour. Combine mixture with remaining stock, pepper, soy and hoisin sauce. Pour into wok.
  • Cook stirring for 3 minutes until sauce comes to the boil.
  • Return beef and onion mixture to wok.
  • Stir fry 2 minutes until all heated through.
