BASIC FRIED EGGS RECIPE

Steps:
- Spray small non-stick skillet with cooking spray. Heat skillet over medium heat.
- Break eggs into skillet. Cook until done as desired (see below for cooking options).
- Transfer eggs to plate, yolk up. Season with salt and pepper.

EGG-FRIED RICE
Don't call the Chinese takeaway - make your own egg-fried rice. Use leftover rice, or cook and dry it on a plate before using so it doesn't stick to the wok

Steps:
- Cook the rice following pack instructions, then drain, spread it out to steam-dry and set aside.
- Heat 2 tbsp of the oil in a large wok over a high heat, then add the onion and fry until lightly browned, around 5 mins. Add the rice, stir and toast for about 3 mins, then move to the side of the pan.
- Add the remaining oil, then tip in the egg mixture. Leave to cook a little, then mix in with the rice - stir vigorously to coat the grains or, if you prefer the egg chunkier, allow to set for a little longer before breaking up and stirring through. Tip into a serving bowl and scatter over the spring onion to serve.

FRIED EGGS
There are many ways to fry an egg. I personally want my eggs on the more "cooked through" side but I don't want to risk breaking the yolk by flipping them over in the pan. I use my sunny side up method, but steam them without flipping if I want them to be on the more done side. The important thing with fried eggs is giving each one enough pan real estate to fry properly and not run into one giant mass. Another trick? When I want more protein and less yolk, I fry one yolk with three whites like a giant Willy Wonka egg white. If you like texture, add coarse salt instead of kosher.

- Fry the eggs: Place a skillet over medium heat and add the butter. When it begins to brown, crack 2 eggs, a distance apart, into the butter. Lower the heat, season them lightly with salt and cook 2 to 3 minutes or longer, if desired. Repeat with the remaining 2 eggs.
- More cooked: If you want your egg yolks cooked through, add a splash of water to the pans, cover and cook for 1 to 2 additional minutes. This steams the eggs. Alternatively, you can run the pans under the broiler for 1 minute. Season with salt and pepper. Serve immediately.
- A fried variation: Crack an egg in the pan to fry and add two additional yolks. The 3:1 white to yolk ratio makes for a higher protein, lower cholesterol egg. Fry according to above instructions.
FRIED EGGS
Steps:
- In a 7- or 8-in. skillet or omelet pan, melt butter over medium heat. Break eggs, 1 at a time, into a custard cup or saucer, then gently slide into the pan. Immediately reduce heat to low. Cook slowly until whites are completely set and yolks begin to thicken. , For eggs sunny-side up, cover pan and cook until yolks thicken, but are not hard. For basted eggs, spoon butter in pan over eggs while cooking. For over-easy eggs, carefully turn eggs to cook both sides but do not cover pan.

SIMPLE FRIED EGG SANDWICH
My daughter really likes this sandwich. She usually has 2 at a time. The mustard used in this recipe can only be found in Ontario, Canada as far as I know. So some Canadians will know it. You can substitute though. Just don't use the regular kind unless you want to of course.

Steps:
- Crack the egg in a lightly buttered frying pan on medium heat.
- Break the yolk and cook on one side then flip and fry on the other side.
- Salt and pepper to taste.
- Turn off heat.
- Place the slice of cheese on top and melt slightly.
- Meanwhile toast the bun as you like.
- Spread the mustard on one or both sides of the bun and place the egg between them.
- Makes a nice snack or light lunch with some raw veggies or salad on the side.
