Best ever curried sausages recipe. Just like grandma made!

600 grams thin beef sausages ((6 or 7 sausages))
1 medium onion (sliced)
1 tablespoon olive oil
1 carrot (peeled and slice diagonally)
1/2 cup peas
1 apple (grated)
1 banana (chopped into cubes)
1 tablespoon Keen's Curry Powder
3 tablespoon plain flour
1/4 cup desiccated coconut
2 1/2 cups chicken stock ((625 ml))
salt and pepper (to taste)

Steps:

  • Heat half of the oil in a large frying pan over med-high heat.
  • Add the sausages and cook for 5 minutes or until browned. Remove sausages from the pan and slice into pieces diagonally. Set aside.
  • Add the remaining oil to the frying pan and cook onion over medium heat until translucent.
  • Add curry powder and stir over heat until onion is well coated. Add flour and stir over heat for a couple of minutes. Add coconut and stir to combine.
  • Pour stock into frying pan and stir over heat for 30 seconds.
  • Add carrot, peas, apple and banana and simmer for 2-3 minutes.
  • Add sausages and simmer for 10 minutes, or until sauce thickens and sausages are cooked through. Add salt and pepper to taste.

Curried Sausages are a classic Aussie style comfort dish that's easy to prepare and full of flavour. Grilled sausages, fried onions and vegetables are simmered in a gravy-like curry sauce. The BEST curried sausages you'll try.

2 teaspoon Olive Oil
8 Beef Sausages
1 Brown / Yellow Onion, halved and thinly sliced
2 Garlic Cloves, minced
2 Carrots, sliced
1 Potato, diced
1 Tomato, diced
2 cups Vegetables - choose a mix of Pumpkin, Butternut Squash, Broccoli, Cauliflower, Green Beans etc. Cut into bite sized pieces.
3-4 cups Beef Stock (see notes below)
2 tsps Curry Powder (Mild)
2 tablespoon Worcestershire Sauce
2 tablespoon Tomato Sauce / Ketchup
Salt & Pepper, to taste
1 cup Frozen Peas
2 tbsps Cornflour / Cornstarch

Steps:

  • Heat 1 teaspoon of oil in a frying pan on medium heat, then brown sausages on all sides. Remove sausages from pan and chop into small pieces.
  • Heat remaining oil in a large pot on medium heat, then add onion and cook, stirring regularly, until softened. Add garlic and cook, stirring regularly, for 30 seconds.
  • Add in the rest of the vegetables (except for the frozen peas) and the chopped sausages, then cover with beef stock (you may need 3-4 cups). Stir in worcestershire sauce, tomato sauce, curry power and season with salt and pepper. Cover and bring to boil, then reduce heat and simmer uncovered for 30 minutes or until the potatoes are tender.
  • Mix cornstarch with 2 tbsps of cold water, then add to the pot along with the the frozen peas and stir through. Continue to cook uncovered, stirring regularly, for 5-10 minutes until the sauce thickens.
  • Serve on a bed of rice or mashed potatoes.

1 cup mixed vegetables
1 chopped onion
1 tablespoon flour
1 teaspoon curry powder

Steps:

  • First boil the sausages and remove the skins.
  • Slice them up into chunks.
  • Place them in a saucepan with sufficient water to cover,.
  • Add onion, vegies and bring to the boil.
  • In a small cup put flour, curry powder and enough cold water to make a paste.
  • Remove saucepan from the heat and stir in thickening and replace on element.
  • Bring saucepan back to a simmer and cook until vegies are done.

600g / 1.2lb sausages (, of choice (Note 1))
2 garlic cloves (, minced)
1 onion (, halved and sliced)
1 carrot (, peeled, sliced on the diagonal)
1 tbsp curry powder (, or more (Note 2))
3 tbsp flour (, any type (Note 3 for GF))
2 cups (500ml) chicken stock/broth (, low sodium)
1 tsp sugar
1/2 tsp salt (, plus more to taste)
1/2 tsp black pepper
1 cup peas (, frozen)

Steps:

  • Heat oil in a large skillet over medium high heat.
  • Cook sausages, turning to brown all over then remove. Optional: slice sausages into pieces on the diagonal.
  • In the same skillet, add garlic and onion. Cook for 2 minutes until translucent.
  • Add curry powder and stir for 30 seconds.
  • Add flour and mix for 30 seconds.
  • Gradually pour in chicken stock, mixing constantly.
  • Add carrots, sugar, salt and pepper, stir well.
  • Add sausages and peas, bring to simmer and cook for 3 minutes or until sauce thickens.
  • Serve over mashed potato, rice, pasta or noodles. For low carb, try mashed cauliflower!

This is a fantastic recipe I got from a cookbook that my brother gave me. When I was growing up my father used to make these delicious curried sausages that the whole family loved. Now that he's advanced in years he can't remember how to make it. Fortunately I found a great recipe that tastes just like it! Now that I am grown and have a family of my own I make the curried sausages for them and they love it too! You can serve them on their own or sometimes I serve them with a side of mashed potatoes and they taste great. Hope you enjoy :-)

1 onion, Chopped
2 garlic cloves
1 teaspoon ginger
2 teaspoons curry powder
1 teaspoon chili powder
1 1/2 teaspoons paprika
3 teaspoons poppy seeds
2 tablespoons oil
1 1/4 kg medium sized beef sausages
6 peeled tomatoes, Quartered
2 tablespoons mango chutney
420 ml coconut milk

Steps:

  • Place onion, garlic, ginger, curry powder, chili powder, paprika and poppy seeds in a food processor, and process until smooth.
  • Heat 1 tbsp oil in a saucepan and cook sausages over a medium heat until browned.
  • Remove sausages and wipe out pan.
  • Leave sausages to cool for 15 minutes then slice into 2cm thick pieces.
  • Heat remaining oil in the pan.
  • Add spice paste and cook, stirring for 2 minutes.
  • Mix in tomato, mango chutney and coconut milk.
  • Add sausages and simmer covered for 20 minutes, stirring occasionally.

New Zealand Curried Sausages image

Another recipe sent to me by a New Zealand friend. This recipe tastes great the next day so make sure you make plenty. Use either a mix of coriander and cumin or just use curry powder. You may like to add several scrubbed and chopped potatoes or kumara (sweet potatoe) to the recipe, do this when adding the onions. Fruit type chutney is nice added too.

25 g butter
1 -2 teaspoon ground coriander (or 1-2 tsp curry powder instead of the coriander and cumin)
1 -2 teaspoon ground cumin
1 teaspoon turmeric
10 -12 links pork sausage, cut into about four pieces
1 -2 onion, chopped
1 -2 carrot, chopped
2 (400 g) cans chopped tomatoes
1 (400 g) can coconut cream
2 tablespoons coconut
2 tablespoons sultanas
1 -2 banana, chopped
apple (optional)
salt and pepper

Steps:

  • In a large deep frying pan or electric frypan, melt butter. Don't let it spread all over the pan but keep in a smallish area.
  • On top of that, as it melts, place spice mixes. Mix the spices into the butter and cook a minute or two till the spice flavour has expanded.
  • Stir sausages through the butter and spice mix.
  • Add onions and carrots and stir through also.
  • Cook a few minutes stirring every now and then, till the sausage and onion are starting to brown a little and the mix is sticking to the pan surface.
  • Add tin tomatoes and stir through. A wooden spatula is easiest for this - and will help you lift the brownings from the surface of the pan to mix through to give extra flavour.
  • Add coconut cream and stir through.
  • Add coconut, sultanas and bananas. Maybe some apple.
  • Simmer all together for 1 - 1 1/2 hours or till the mix is as thick as you want. Try not to use a thickening agent as the flavour is better this way.
  • Season to taste and serve on rice.

Add enough water to your cornflour in a cup to make a smooth paste and add to curry. Turn up the heat and the sauce will thicken.
