1 ½ cups all-purpose flour
1 cup brown sugar
1 teaspoon ground cinnamon
5 ripe bananas, or more to taste
⅔ cup coconut oil, melted
2 tablespoons coffee
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease an 8x4-inch loaf pan with cooking spray.
  • Mix flour, brown sugar, and cinnamon together in a large bowl.
  • Mash bananas to the consistency of oatmeal. Mix in coconut oil, coffee, and vanilla extract. Pour over flour mixture; stir together with a wooden spoon. Pour batter into the greased pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 minutes to 1 hour. Cool for 20 minutes before slicing.

3 large black bananas
75ml vegetable oil or sunflower oil, plus extra for the tin
100g brown sugar
225g plain flour (or use self-raising flour and reduce the baking powder to 2 heaped tsp)
3 heaped tsp baking powder
3 tsp cinnamon or mixed spice
50g dried fruit or nuts (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
  • Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
  • Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
  • Bake for another 20 minutes, or until a skewer comes out clean.
  • Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.

1 cup organic granulated sugar
1 1/2 cups mashed ripe bananas (3 medium)
1/2 cup refined coconut oil, melted
1 teaspoon vanilla
1/4 cup unsweetened vanilla almond milk or soymilk
1 teaspoon apple cider vinegar
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts, if desired

Steps:

  • Heat oven to 350° F. Grease bottom only of 9 x 5 x 3-inch loaf pan.
  • In large bowl, beat sugar, bananas, coconut oil and vanilla until smooth. Stir in almond milk and vinegar. Add flour, baking soda and salt; stir just until moistened. Stir in walnuts. Pour into pan.
  • Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean and crack in top of loaf appears dry. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan, and place on cooling rack. Cool completely, about 1 hour, before slicing. Wrap cooled bread in plastic wrap, and store in refrigerator.

1 3/4 cups (210 g) spelt flour (whole wheat, unbleached all-purpose, or gluten free blend), see notes
1/3 cup (75 g) organic pure cane sugar (or 1/2 finely chopped dates)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
pinch of mineral salt
1/3 cup (75 ml) neutral flavored oil (or coconut oil in liquid state, vegan butter at room temp or applesauce
1 teaspoon vanilla extract
4 small or 3 large overripe bananas (about 1 1/2 - 1 3/4 cups (338-410g)), mashed
1/4 cup (56 ml) almond milk, use only if needed
1/2 - 2/3 cup chopped walnuts
1/4 - 1/2 cup chocolate chips (mini or regular)
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees F. Grease your loaf pan.
  • In a medium sized mixing bowl, mash 3 - 4 bananas (about 1 1/2 cups to 1 3/4 cups works well), add oil/applesauce and vanilla extract, mix again. Add the flour, sugar, baking soda, baking powder and salt, and mix well, but don't overmix, just enough until the flour is combined. Batter will be slightly thick and a few lumps is ok. If mixture seems too thick, add milk, especially if using heavier flours such as whole wheat or whole spelt (you're more inclined to need it).
  • Pour batter into a greased loaf pan. Bake for about 50 min - 1 hour. Ovens vary, mine usually takes 50 minutes. You can also do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool for 10 min before slicing.
  • Original method: In a medium/large size bowl, combine flour, sugar, baking powder, baking soda and salt, set aside. In a medium bowl, mash bananas. Add the oil, vanilla and bananas to the dry ingredients and mix until combined, do not overmix. If mixture seems too thick, add the almond milk (especially if using heavier flours such as whole wheat or whole spelt, you're more inclined to need it).
  • Pour batter into a greased loaf pan. Bake for about 50 min - 1 hour. Ovens vary, mine usually takes 50 minutes. You can also do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool for 10 min before slicing.
  • Keep covered on the counter for up to 3 days or in the refrigerator up to 1 week. Keep in the freezer for up to 2 months. Thaw the wrapped loaves overnight in the refrigerator. Reheat in the microwave or a toaster oven with a door.

3 medium overripe bananas ((Notes 1 and 2))
1/3 cup organic granulated sugar
1/3 cup organic brown sugar
1/3 cup canola oil ((or your favorite baking oil))
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt ((Note 3))
1 cup chopped walnuts ((or pecans, vegan chocolate chips, or your favorite banana bread stir-in))
1/4 cup organic brown sugar

Steps:

  • Preheat the oven to 350°.
  • Lightly oil a 9-inch loaf pan and arrange a strip of parchment paper width-wise along the center, with just a bit hanging out over each side.
  • Peel the bananas and place them into a large mixing bowl. Mash them well with a fork or potato masher.
  • Add sugar, brown sugar, oil, and vanilla to the bowl. Stir until well-mixed.
  • Add the flour to the bowl, then sprinkle the baking soda, cinnamon and salt on top of the flour.
  • Stir everything together just until mixed. Don't overmix. The batter will be thick.
  • Fold in the walnuts.
  • Spoon the batter into the prepared loaf pan and smooth out the top with the back of a spoon.
  • Sprinkle the top with brown sugar.
  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the pan from the oven and transfer it to a wire rack. Allow the loaf to cool for at least 15 minutes before removing it from the pan.
  • Slice and serve.

  • FILLING: On a lightly floured surface, roll out the dough into a long rectangle ~1/4 inch thick (the dough should measure roughly 12 x 20 inches). Brush with melted vegan butter and top with cane sugar (I used a little brown sugar mixed in with the cane sugar) and 1/2 - 1 Tbsp cinnamon (up to preference // amount as original recipe is written // adjust if altering batch size). Then add banana slices so it's easy to roll, and walnuts.

If you don't have a stand mixer it can be kneaded by hand on a lightly oiled surface but it is quite a messy job.
