1/2 cup minced fresh gingerroot
1/2 cup Worcestershire sauce
1/4 cup cider vinegar
1/4 cup dry red wine or beef broth
2 garlic cloves, minced
1 beef flank steak (1-1/4 pounds), cut into 1/2-inch strips
1 package (3 ounces) thinly sliced prosciutto, cut into 1/2-inch strips
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
SAUCE:
2/3 cup cream cheese, softened
1/4 cup heavy whipping cream
2 tablespoons lemon juice
2 tablespoons minced fresh basil
2 tablespoons minced fresh tarragon
1 tablespoon minced fresh parsley

Steps:

  • In a bowl or shallow dish, combine the first 5 ingredients. Add beef and turn to coat. Refrigerate at least 4 hours., Drain beef, discarding marinade. Layer 1 slice steak and 1 slice prosciutto; roll up. Repeat with remaining slices of meat., Thread onto metal or soaked wooden skewers. Brush with oil; sprinkle with salt and pepper. Grill, covered, over medium-high heat or broil 4 in. from heat until beef reaches desired doneness, 10-12 minutes, turning occasionally., In a small bowl, beat cream cheese and cream until blended. 1/2 cup soy sauce
1/4 cup vegetable oil
3 tablespoons prepared horseradish
2 tablespoons rice wine vinegar
1 tablespoon grated fresh ginger
1 tablespoon honey
1 pound sirloin, cut into 1-inch cubes
6 scallions
Nonstick cooking spray, for the grill
1/2 cup mayonnaise
2 tablespoons prepared horseradish
1/2 teaspoon hot sauce
1/2 teaspoon Worcestershire sauce
1/4 teaspoon kosher salt
1/4 teaspoon ground ginger

Steps:

  • For the steak skewers: Assemble the marinade by combining the soy sauce, vegetable oil, horseradish, rice wine vinegar, ginger and honey in a bowl. Put the sirloin in a large ziptop bag and pour the marinade over the meat. Gently massage the meat and place in the refrigerator for a minimum of 1 hour.
  • In the meantime, prepare for the skewer assembly. Put the wooden skewers in a shallow bowl of water and soak for 1 hour. This will prevent burning on the grill. Discard the water after soaking.
  • Prep the scallions by slicing the white and light green parts into 1-inch pieces. Set aside for the skewers. Then, slice the dark green tops and set aside for the sauce.
  • For the horseradish sauce. In a mixing bowl, combine the mayonnaise, horseradish, hot sauce and Worcestershire. Stir in the salt, ginger and reserved scallion tops. This can be stored in an airtight container in the refrigerator. When ready to serve, pour the horseradish sauce in a small bowl and garnish with a few more pieces of scallions on top.
  • Preheat a grill or grill pan over medium-high heat. Spray with nonstick cooking spray.
  • Slide 4 to 5 cubes of beef onto each skewer, alternating with pieces of scallion (discard the marinade). Grill until browned and crispy, 3 to 4 minutes on each side. Serve warm alongside the horseradish sauce for dipping.

1 jar (24 oz.) CLASSICO Vodka Sauce Pasta Sauce
1 cup CLASSICO Roasted Red Pepper Alfredo Pasta Sauce

Steps:

  • Heat grill to medium heat.
  • Wrap prosciutto slice around each steak; secure with wooden toothpicks. Brush both sides of steaks evenly with oil. Grill 7 to 10 min. on each side or until medium doneness (160°F).
  • Meanwhile, cook pasta as directed on package, omitting salt. While pasta is cooking, cook and stir peppers in large skillet sprayed with cooking spray on medium heat 2 min. Stir in wine; cook 2 min., stirring frequently. Add pasta sauce; stir. Cover; simmer on medium-low heat 3 to 4 min. or until heated through, stirring occasionally.
  • Remove and discard toothpicks from steaks. Place 1 steak on each of 4 serving plates. Drain pasta; place next to steaks. Reserve 1 cup pasta sauce mixture; spoon remaining pasta sauce mixture over pasta. Serve reserved pasta sauce mixture as a dipping sauce for the steaks.

6thick slices of coarse-textured bread , such as a country loaf, each cut into 4 rough chunks

handful of sage and thyme, finely chopped

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Thread the ingredients onto skewers in the following order for tastiest results: lemon, bay leaf, prosciutto, bread, steak, lemon, bay leaf, prosciutto, bread, steak, bay leaf - you will have 12 skewers. 8 slices prosciutto (not paper-thin, 6 oz total)
12 fresh sage leaves (stems discarded)
4 teaspoons olive oil

Steps:

  • Cut fillets lengthwise to separate smaller and larger portions, then pat dry and season with pepper. Wrap each piece of fillet crosswise in a slice of prosciutto, leaving ends of fillet exposed if necessary and tucking 1 or 2 sage leaves between prosciutto and fillet (use 1 leaf for smaller pieces of fish).
  • Heat 2 teaspoons oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then sauté the 4 larger pieces of fish 4 minutes. 2 boneless skinless chicken breasts fillets
4 slices of prosciutto or smoked streaky bacon
1 tbsp plain flour
1 tbsp olive oil
handful of sage leaves
25g butter
150ml dry white wine
4 tbsp double cream or crème fraîche
cooked pasta , to serve

Steps:

  • Put the chicken breasts between two sheets of greaseproof paper and beat with a rolling pin until roughly twice their original size. Lay two rippled slices of prosciutto on top of each breast and secure with cocktail sticks. Dust each breast lightly with flour, then season with salt and pepper. (Can be made several hours ahead up to this point, and chilled.)
  • Heat the oil in a frying pan, drop in the sage leaves (they should sizzle) and fry for 30 seconds until just crisp. They can burn quickly so watch them. Lift out the leaves with a slotted spoon and drain on kitchen paper. Add the butter to the pan, let it melt, then fry the chicken for 3-4 minutes on each side until cooked and well browned. Remove from the pan and set aside.
  • Pour in the wine, stirring well to scrape all the lovely sticky bits from the bottom of the pan. Let the mixture bubble until the wine is reduced by about half. Stir in the cream or crème fraîche, put the chicken back in the pan and heat through. Scatter the fried sage leaves on top and serve with pasta tossed with a little olive oil and some freshly chopped sage leaves.
