from fine cooking, this is a wonderful recipe to adapt to your personal tastes. this recipe is vegetarian, but you can add meats, change the type of cheese and use vegetables that you have on hand- be creative. I made this for the break fast last week end, and my guests just loved it.

1/4 cup cornstarch
1 1/4 cups milk
2 large eggs
2 large egg yolks
1 cup heavy cream
1/2 teaspoon salt
pepper
1 pinch cayenne
1 pinch nutmeg (optional)
butter or oil, for the pan
1 tablespoon oil
1/2 lb mushroom, sliced
1 onion, chopped
1/2 red pepper, diced
1 small zucchini, quartered lengthwise and sliced
salt
1/2 cup grated gruyere cheese
2 tablespoons snipped chives
2 teaspoons fresh thyme

Steps:

  • heat oven to 425.
  • butter or oil a 2 quart au gratin or 7x11 pyrex dish.
  • for the batter:.
  • put cornstarch in a medium bowl.
  • whisk in 1/2 c milk until smooth.
  • whisk in eggs and egg yolks until smooth.
  • gradually add remaining ingredients.
  • (you can also mix this in a blender).
  • for filling:.
  • heat oil in a saute pan.
  • add onions and red pepper, saute 2-3 minutes.
  • add zucchini and mushrooms, saute until softened and liquid is gone.
  • arrange the filling in the prepared dish.
  • sprinkle with cheese and herbs.
  • pour batter over all.
  • bake until top is golden brown, and custard is set, 25-30 minutes.
  • let it sit for 30 minutes before serving.

Clafoutis are baked French pancakes, usually filled with sweet cherries. This savory version calls for corn, Swiss chard and leeks instead of fruit, and includes plenty of Gruyère for a salty depth. It will emerge from the oven puffed and golden, then quickly deflate. Fear not, it still tastes wonderful after it flattens out, though for the best presentation, try to time it so your guests are at the table when it is ready. Serve it for brunch or a light dinner with a tomato salad on the side, if you're making this in tomato season. In winter, sliced oranges drizzled with olive oil and salt are nice, too.

3/4 cup whole milk
3/4 cup crème fraîche
4 large eggs
2 1/2 tablespoons all-purpose flour
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh dill leaves
3/4 teaspoon kosher salt, more as needed
1/2 teaspoon ground black pepper, more as needed
1 cup coarsely grated Gruyère or Cheddar (about 4 ounces)
2 tablespoons extra-virgin olive oil
2 large or 3 small leeks (white and light green parts), halved lengthwise and thinly sliced
2 cups corn kernels (from 2 to 3 ears, or frozen and thawed)
1 large garlic clove, grated on a Microplane or minced
1 large bunch Swiss chard, stems removed, leaves coarsely chopped (8 cups)
1/4 cup grated Parmigiano-Reggiano
Fresh lemon juice, for serving
Red pepper flakes, for serving

Steps:

  • Heat oven to 375 degrees. In large bowl, whisk together milk, crème fraîche, eggs, flour, parsley, dill, 1/2 teaspoon salt and 1/2 teaspoon pepper until smooth. Whisk in 3/4 cup Gruyère.
  • Heat olive oil in a 9-inch oven-safe skillet over medium heat. Add leeks and sauté until they are soft and golden, about 10 minutes. Stir in corn, garlic and a pinch of salt; cook until garlic is fragrant and corn is tender, 2 to 3 minutes. Add chard leaves a handful at a time, and cook until they are wilted and tender, about 4 minutes. Season the mixture with 1/4 teaspoon salt and a few grinds of black pepper.
  • Pour crème fraîche mixture over the corn and chard mixture, and then sprinkle the remaining Gruyère and the Parmigiano on top. Transfer skillet to oven and bake until custard is lightly set, about 40 minutes. Serve topped with a sprinkling of lemon juice and a pinch of red pepper flakes.

1/4 cup cornstarch
1 1/4 cups whole milk
2 large eggs
2 large egg yolks
1 cup tsps kosher salt
1 pinch cayenne
1/2 cup crumbled cheese (divided)
1 -2 tablespoon of finely chopped fresh herbs (such as basil, chives, dill) or 1 -2 tablespoon flat leaf parsley

Steps:

  • Position rack in the top third of the oven and preheat to 450°; butter muffing tins.
  • Put the cornstarch in a medium bowl.
  • Whisking steadily, slowly pour in 1/2 cup of milk, mixing until quite smooth. Whisk in whole eggs and yolks, mixing again until smooth and gradually rest of the milk, the cream, salt and cayenne.
  • Put 1/2 tsp of the grated or crumbled cheese and and pinch of the fresh herbs into each of the muffing cup; add 2 tbsp of the batter.
  • Bake for 15 to 18 minutes.

2 small zucchini (about 8 oz/225 g each, diced into 3/4-in (2 cm) cubes)
1 small eggplant (about 6 oz/170 g, diced into 3/4-in (2 cm) cubes)
1 tbsp 15 ml extra-virgin olive oil
1/2 tsp 2 ml kosher salt, or fine sea salt
Freshly ground black pepper
4 large eggs
1/2 cup 125 ml milk
1/2 cup 125 ml heavy cream (35% m.f.)
1/4 tsp 1 ml kosher salt, or fine sea salt
1/2 cup 125 ml all-purpose flour, sifted
1/4 cup 60 ml chopped mixed fresh herbs (basil, Italian parsley, oregano, tarragon, etc.)
1 tbsp 15 ml minced chives
10 large stem-on cherry tomatoes
1 log
1/4 cup 60 ml toasted sliced almonds

Steps:

  • Preheat the oven to 450°F (220°C). Line a baking sheet with parchment paper. Spread the diced zucchini and eggplant over the baking sheet, then drizzle with the olive oil and season with salt and pepper. Stir to coat the vegetables with the oil, then roast for 10 minutes. Remove from the oven and let rest while you prepare the savory clafoutis.
  • Lower the oven temperature to 350°F (175°C). Oil a 9-inch (23-cm) springform pan, then line with a large square of parchment paper, carefully pushing it to the bottom of the pan and pressing against the sides so they are covered to the top of the pan.
  • In a large mixing bowl, beat the eggs, milk, cream, and salt together. Add the sifted flour and whisk to incorporate. Stir in the fresh herbs and chives.
  • Scatter the roasted zucchini and eggplant over the bottom of the prepared springform pan. Give the savory clafoutis batter another quick whisk, then pour over the roasted vegetables. Dot the clafoutis with the cherry tomatoes, stem side up, then tuck slices of goat cheese in between.
  • Bake the savory clafoutis for 30 minutes, or until puffed and golden brown. Transfer to a wire rack and let cool to room temperature.

1/2 cup ground almonds
2 tablespoons all-purpose flour
7 tablespoons sour cream
7 tablespoons whole milk

1/3 cup black olives, pitted and halved
2 tablespoons fresh basil, finely chopped

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 9" pie dish or 8 individual baking ramekins.
  • Whisk eggs and salt together until pale and thick.
  • Sift flour and almonds together and fold into egg mixture. Stir in sour cream and milk.
  • Spread cheese cubes, tomatoes, and olives over bottom of baking dish. Sprinkle basil leaves over the top.
  • Pour batter over vegetables and cheese. Bake for 40 minutes (20 for ramekins), or until golden brown. Allow to sit for 15 minutes before cutting. Serve warm or at room temperature.

2 eggs
1/3 cup sugar
3 tablespoons flour
2/3 cup half-and-half
3 tablespoons butter, melted
3 -4 pears, peeled and cored
1/2 cup cranberries
sugar, for dusting (optional)
cinnamon, for dusting (optional)

Steps:

  • Preheat oven to 375. Butter a 9 inch glass pie plate.
  • In a medium bowl, whisk together eggs and sugar till lightly colored.
  • Whisk in the flour and half and half. Stir in the melted butter.
  • Pour the mixture into the prepared pie plate.
  • Arrange the pears in the batter (you can leave the pears in halves, but I cubed mine) and surround with cranberries.
  • If desired, dust top with sugar and cinnamon (or whatever spices you like - I added in some allspice as well).
  • Bake for 25 to 30 minutes, or till the pears are tender and the custard is lightly browned.
  • Cool slightly and serve.
  • (The original recipe says this serves 6-8, but 3 of us polished it off at breakfast quite easily).

150g caster sugar
50ml kirsch
225g cherries, pitted and kept whole
¼ tsp almond extract (optional)
2 large eggs and 2 egg yolks (freeze the whites for another recipe)
200ml double cream
45g plain flour
butter, for the dishes
1 tbsp icing sugar
vanilla ice cream, to serve

Steps:

  • Simmer 50g of the caster sugar and the kirsch together in a pan over a medium heat until the sugar has dissolved. Stir in the cherries and simmer for 1-2 mins until softened slightly and you have a syrup. Pour into a bowl and set aside to cool.
  • Whisk the almond extract, if using, with the eggs, yolks and remaining 100g caster sugar in a bowl until smooth. Whisk in the cream and flour to combine. Leave for 10 mins to rest. After that, it should be the consistency of pancake batter.
  • Heat the oven to 180C/160C fan/ gas 4. Butter six shallow ceramic dishes (ours were 125ml, 10cm round and 2.5cm deep.) Divide the cherries between the dishes, pour over the batter, then drizzle the cherry juices over the top.
  • Put on a baking sheet and bake for 25 mins until golden brown. (They will deflate once out of the oven.) Dust the icing sugar over the top and serve warm with the ice cream.
