I created this Old World favorite from a dish I had during my travels. The flavorful entree is perfect for weeknights or special occasions. I like to serve this slow-cooker bratwurst with pasta. —Gerald Hetrick, Erie, Pennsylvania

4 pounds uncooked bratwurst links
3 bottles (12 ounces each) German-style beer or 4-1/2 cups reduced-sodium chicken broth
1 jar (32 ounces) sauerkraut, rinsed and well drained
4 medium Granny Smith apples (about 1-1/4 pounds), cut into wedges
1 medium onion, halved and thinly sliced
1-1/2 teaspoons caraway seeds
1/4 teaspoon pepper

Steps:

  • In batches, in a large nonstick skillet, brown bratwursts over medium-high heat. Transfer to a 7-qt. slow cooker. Add remaining ingredients., Cook, covered, on low 6-8 hours or until a thermometer inserted in sausage reads at least 160°.

6 small red potatoes, quartered
3 fresh baby carrots, cut into thirds
4 cups water
2 fully cooked bratwurst links, cut into 1-inch pieces
1-1/2 cups fresh broccoli florets
1/2 cup fresh cauliflowerets
1/2 cup sliced onion
1/3 cup cider vinegar
3 tablespoons sugar
2 tablespoons canola oil

Steps:

  • Place the potatoes, carrots and water in a large skillet. Bring to a boil; cook, uncovered, for 10-15 minutes or until potatoes are crisp-tender. Stir in the bratwurst, broccoli, cauliflower and onion. Cook 3-5 minutes longer or until vegetables are tender. , In a small bowl, whisk the vinegar, sugar and oil; add to sausage mixture. Bring to a boil; cook, uncovered, until liquid is reduced by half.

1/2 cup water
2 chopped green onions
2 tablespoons steak sauce, like A1
1/2 teaspoon red pepper flakes
1 teaspoon italian seasoning
1/2 teaspoon salt
1 (28 ounce) can diced tomatoes with juice, the kind with green pepper already added
2 cups uncooked basmati rice, soaked for 8 hours

Steps:

  • Place water, sausage and green onions in crock pot.
  • Add steak sauce, red pepper flakes, Italian seasoning and salt.
  • Cover with lid and cook on low for 6-8 hours or on high for 3 hours.
  • Stir in uncooked rice and tomatoes with juice.
  • Cover and cook an additional 1 hour.

After reviewing several other bratwurst and sauerkraut recipes, I found that none of them fit what I wanted, so I made this up, and it was delicious. Perhaps someone else looking for that good, simply bratwurst and sauerkraut recipe will find this useful.

1 lb uncooked bratwurst
1 lb yukon gold potato, in 1 . 5 inch chunks
1 onion, in 1 inch chunks
1 (14 ounce) can sauerkraut
1/2 cup water
1 teaspoon fresh ground black pepper
1 teaspoon dried parsley
sour cream or mustard

Steps:

  • Place potatoes in the bottom of the crockpot, followed by onion.
  • Place whole (not cut up!) bratwurst over top of the onion and potatoes.
  • Spoon sauerkraut over bratwurst, and then pour water over the sauerkraut.
  • Sprinkle with black pepper and parsley.
  • Cover with crock pot lid and cook on low for 8-10 hours.
  • Serve with sour cream and/or mustard.

A nice variation from grilled brats, particularly during very cold weather when you don't want to get the grill out, or when you're too busy watching a Green Bay Packer game! This recipe is definitely a Midwest U.S. region favorite.

6 fresh bratwursts (preferably Johnsonville brand)
1 tablespoon butter
1 red bell pepper, sliced in strips
1 yellow bell pepper, sliced in strips
1 green bell pepper, sliced in strips
1 sweet onion, sliced and quartered
1 apple, halved and sliced (Granny Smith works well)
36 ounces beer
hoagie roll

Steps:

  • Lightly brown bratwursts in butter.
  • Layer one half of the bell peppers, onion and apple in the bottom of the crock pot.
  • Place 3 bratwursts on top.
  • Repeat with remaining veggies and bratwurst.
  • Pour beer over all.
  • Cook on high for 1- 2 hours.
  • Turn to low and cook at least 4 more hours.
  • Serve brat and pepper mixture on rolls with mustard or favorite condiment.
  • Excellent with sauerkraut and German potato salad.

I didn't have any beer so I tried pouring apple juice over it all and it turned out just as tasty. You could use beer if you like. No need to fire up the grill. It cooks all day while you're at work and is ready when you get home!
