I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

- In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
- Add beef and toss.
- In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
- Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.

- In a medium bowl, toss the chicken with the scallion whites, sugar, sesame oil, sherry, soy sauce, about half the garlic, half the ginger, 1 teaspoon of the cornstarch and 1 teaspoon salt. Marinate at room temperature for 15 minutes. Mix the remaining 1 tablespoon cornstarch with 1/3 cup water in a small bowl and reserve.
- Heat a large nonstick skillet over high heat. Add 1 tablespoon of the vegetable oil and heat. Add the broccoli stems and stir-fry for 30 seconds. Add the florets and the remaining garlic and ginger, 2 tablespoons water, 1/4 teaspoon salt and some black pepper. Stir-fry until the broccoli is bright green but still crisp, about 2 minutes. Transfer to a plate.
- Get the skillet good and hot again, and then heat the remaining 2 tablespoons vegetable oil. Add the chicken and red pepper flakes if using. Stir-fry until the chicken loses its raw color and gets a little brown, about 3 minutes. Add the hoisin sauce, return the broccoli to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a boil to thicken. Add more water if need to thin the sauce, if necessary. Taste and season with salt and pepper, if you like.
- Mound the stir-fry on a serving platter or divide among 4 plates and garnish with sesame seeds; serve with rice.

- In a mixing bowl, mix together soy sauce, pepper, Sambal Oelek, sesame oil and corn starch.
- Add sliced beef, coat well and let marinate for 15 minutes.

- Bring water to a boil. Place rice noodles in a large mxing bowl, pour boiling water over them and let them soften, about 15 minutes. When soft, drain and cut the noodles with kitchen scissors into 2-inch lengths and set aside.
- In a bowl combine ketchup, oyster sauce, lime juice, red pepper flakes, sugar and chicken broth.

- Heat 1 tablespoon oil in a large skillet (I use my 12") over medium-high heat. Once oil is hot, add chicken pieces. Season with salt, ginger, onion powder, and pepper. Sauté, flipping occasionally, for 4 to 5 minutes or until chicken has some browning. Remove chicken from pan and set aside when done. Leave any oil remaining in the skillet.
- Add 1 additional tablespoon of oil along with broccoli and carrots. Season with salt. Sauté, stirring frequently, on medium-high heat for 3 to 4 minutes until veggies are a bit tender with some browning. Add minced garlic to skillet and sauté until golden, about 1 minute.
- Add coconut aminos and sesame oil. Stir. Return chicken to the skillet. Reduce heat to medium and simmer for 3 to 4 or until everything is warmed. Broccoli and carrots should still have a little crunch. (If you prefer very soft veggies you can cover the skillet.)

- Bring a large pot of water to boil, add the rice, and boil for 40-45 minutes, or until the rice is tender. Drain, return the rice to the pot, cover, and allow the rice to steam for a few minutes while you prepare the broccoli stems.

- Add the rice to the pan, along with the vinegar and tamari. Heat the rice through. Add a dash of red pepper flakes. Taste the stir fry and add extra vinegar, tamari, and pepper to taste. Serve.
