This is a flavorful and quick side dish to serve with your Asian meal. The recipe is adapted from The Steamy Kitchen Cookbook by Jaden Hair.

1 tablespoon peanut oil
2 garlic cloves, finely minced
1 teaspoon grated fresh ginger
3/4 lb baby bok choy, leves separated
1/2 lb snow peas
1/2 cup chicken stock (or vegetable stock if you wish to keep it vegetarian)
2 tablespoons oyster sauce
1/2 teaspoon sesame oil

Steps:

  • Add the oil, garlic and ginger into a wok or large saute pan. Turn the heat to medium-high. As the oil heats, the garlic and ginger will infuse the oil with flavor. Take care that they do not burn. When the oil is hot, add the bok choy and the snow peas and toss to coat them in the oil.
  • Stir-fry the mixture for about a minute. Add the stock and oyster sauce and bring to a boil. Cover and cook for 2 minute until the bok choy stems are crisp-tender. Drizzle the sesame oil over the mixture and serve.

12 large dried shiitakes, rinsed, rehydrated in hot water, stems removed
2 cups chicken stock

Steps:

  • In a hot skillet, heat oil and saute garlic until lightly colored. Add bok choy, shiitakes, season and cook for 3 minutes. Add stock, soy and simmer for 20 to 30 minutes. Check for flavor.

1 tablespoon hoisin sauce

1 1/2 cups sliced red bell peppers

Steps:

  • In a small dish, whisk together the sauce ingredients and set aside.
  • In a large wok or skillet heat add a small amount of vegetable oil and heat over medium high heat. When a drop of water sizzles in the pan add the onions and cook until lightly browned.
  • Stir in the peppers and peas. Cut the baby bok choy in fourths lengthwise and then in 1 inch lengths. Add to wok and stir-fry until the bok choy begins to turn dark green, about 3 minutes. Add drained mushrooms, sliced pork if using and sauce. Cook just until warmed through.

Marinated beef strips stir-fried with mandarin juice and mandarin segments, bok choy and snow peas. Looks and tastes great. And being low in fat and cholesterol, it's very healthy! The preparation time does not include the time for marinading the meat: several hours or preferably overnight.

400 g rump steak, thinly sliced
2 garlic cloves, crushed
salt & freshly ground black pepper
fresh ginger, grated, to taste
2 tablespoons soy sauce, low sodium
1 tablespoon medium-dry sherry
2 tablespoons peanut oil
2 medium yellow onions, sliced into quarters and then each quarter halved
2 mandarin oranges, juice of
1/2 cup chicken stock
3 cups baby bok choy, halved and sliced
2 mandarin oranges, peeled and broken into segments
20 snow peas

Steps:

  • Slice the steak into thin strips and place in a bowl. Add the crushed garlic and season to taste with salt, freshly ground black pepper and grated fresh ginger. Cover the meat with soy sauce. Add the dry cooking sherry. Stir together, cover and place in the fridge, for several hours or preferably overnight. The longer the meat marinates the better.
  • Heat a little of the oil in a non-stick wok or large non-stick sauté pan.
  • Fry the onion, until it begins to soften, remove and set aside.
  • Add the rest of the oil to the wok, and on a very high heat, keeping the beef strips moving constantly, fry the meat, so that it is browned on all sides and the juices are sealed inches.
  • Slightly lower the heat and return the onion to the pan.
  • Add the mandarin juice.
  • Cook down for a few minutes until the liquid begins to reduces.
  • Stirring constantly, slowly add the chicken stock, a little at a time, and continue to cook down to reduce the liquid.
  • Once the liquid has reduced to almost nothing (no more than say a tablespoon), add the bok choy and the mandarin segments.
  • Turn the heat down and, still stirring and tossing gently, cook until the vegetables are cooked as you like them. Remember: less is best!
  • Still tossing gently, add the snow peas to the wok for the last 30 seconds.
  • Remove from the heat.
  • Serve in four serving bowls over steamed rice.

2 teaspoons ground cumin
1 teaspoon dried crushed red pepper
2 cups canned unsweetened coconut milk**
2 8-ounce bottles clam juice
2 tablespoons vegetable oil
2 pounds large uncooked shrimp, peeled, deveined
1 head bok choy (about 1 1/2 pounds), white part cut crosswise into 1/4-inch-thick slices, dark green part cut crosswise into 1-inch-wide slices
1 pound snow peas, stringed
2 3.5-ounce packages enoki mushrooms, trimmed
fresh basil
Cooked rice
*Chopped lemon grass is available at Southeast Asian markets and in the produce section of some markets.

Steps:

  • Puree first 9 ingredients in processor until paste forms, occasionally scraping sides of bowl. Transfer curry paste to bowl. (Can be made 4 days ahead. Cover; chill.)
  • Boil coconut milk and clam juice in heavy large saucepan until reduced to 2 cups, about 20 minutes. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Heat oil in heavy large skillet over high heat. Add 6 tablespoons curry paste; stir 1 minute. Add shrimp and sautéuntil beginning to turn pink, about 2 minutes. Using slotted spoon, transfer shrimp to plate. Add reduced coconut milk mixture to same skillet; boil until mixture coats spoon thickly, stirring occasionally, about 7 minutes. Add white part of bok choy; boil until beginning to soften, about 2 minutes. Add snow peas; stir until crisp-tender, about 1 minute. Return shrimp to sauce. Add green part of bok choy and mushrooms; toss until heated through, about 5 minutes. Sprinkle with basil. Serve over rice.

I usually make this with bok choy you will see from the photo that I used Gai Lan as my local Asian grocery store was out of bok choy, so I subbed it with the gai lan. It was still very good and worked just as well it is just we really love bok choy in my family, again as with most stir fries vegetable ingredients can be played around with, either to suit personal tastes or to use up vegetables in the fridge.

1/4 cup oyster sauce
3 tablespoons light soy sauce

3 garlic cloves, crushed
1 star anise, crushed
1/2 teaspoon five-spice powder

400 g baby bok choy (See note above)
1 red pepper, sliced thinly
100 g snow peas, trimmed
200 g bean sprouts
2 red chilies, sliced thinly
4 green onions, sliced thinly
300 g fresh noodles

Steps:

  • Heat peanut oil in a wok, add pork in batches, brown and cook as desired, remove set to one side.
  • Heat sesame oil in wok, add garlic, pepper and chilies stir-fry about 1 minute.
  • Return pork to wok, add all the sauces, sherry, sugar, star anise, vinegar and 5 spice powder, stir to combine.
  • Add remaining vegetables and stir-fry until veg are just tender, add noodles and stir-fry to heat through.

SPICY WOK-CHARRED SNOW PEAS

High-heat stir-fries are ideal for peas - either snow peas or the sugar snap variety. Assertive seasoning and the slight charring from the wok complement the peas' sweetness wonderfully. The method works well for other spring vegetables, too, like asparagus or baby bok choy clusters. Use a wide cast -iron pan if you don't have a wok. Take care to avoid overcooking; the peas should be a vibrant green color and firm to the bite.
