MEDITERRANEAN TOMATO SALAD



Mediterranean Tomato Salad image

Simple Mediterranean tomato salad with feta, red onions, and fresh herbs, and finished with a bright citrus dressing of citrus and extra virgin olive oil.

6 to 7 medium ripe tomatoes, (sliced into wedges (on-the-vine tomatoes or heirloom tomatoes preferred) )
1 medium red onion, (halved, then thinly sliced)
3 garlic cloves, (minced)
1 cup packed chopped fresh parsley leaves, (chopped )
1 cup packed chopped fresh dill, (chopped)
2 1/2 tsp ground sumac
Kosher salt, (to your liking)
Black pepper, (to your liking)
1 lemon, (juice of)
2 tsp white wine vinegar
1/3 cup extra virgin olive oil
Feta cheese, (to your liking, optional )

Steps:

  • In a large salad or mixing bowl, add the tomatoes, onions, fresh herbs and garlic.
  • Add sumac, kosher salt and a generous sprinkle of freshly ground pepper. Add lemon juice, white wine vinegar and extra virgin olive oil. Toss to combine. Taste and adjust seasoning to your liking.
  • Transfer to a serving platter or bowl. Top with large pieces of quality feta cheese (optional). Enjoy!

This salad from Dona Hoffman, of Addison, IL is amazingly simple and surprisingly sweet with a little brown sugar in the dressing. And as an addition, she suggests topping it with either fresh mozzarella or feta cheese.

4 cups torn leaf lettuce
1/2 cup cherry tomatoes
1/3 cup sliced red onion
1 can (2-1/4 ounces) sliced ripe olives, drained
DRESSING:
2 tablespoons canola oil
1 tablespoon red wine vinegar
1 tablespoon brown sugar

Steps:

  • In a large bowl, combine the lettuce, tomatoes, onion and olives. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss to coat.

3 to 4 cups mixed olives, drained
1 pint grape tomatoes, sliced in half lengthwise
1/4 cup pine nuts
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon freshly cracked black pepper
5 lemon slices, halved
2 cloves garlic, crushed
1 bunch scallions, thinly sliced
1/2 red onion, thinly sliced
Shaved Parmesan, for serving
Serving suggestions: antipasti platter and crostini.

Steps:

  • Combine the olives, tomatoes, olive oil, pine nuts, lemon juice, pepper, lemon slices, garlic, scallions and onions in an airtight container with a lid. Marinate for 8 hours or up to 7 days to allow the flavors to develop. Add shaved Parmesan just before serving.
  • Serve alongside antipasti platter and crostini.

Several fresh flat-leaf parsley leaves

2 tablespoons red wine vinegar
Salt and pepper

  • Combine lettuce, olives, tomatoes, and parsley leaves in a bowl. Sprinkle salad with a little dried Italian seasoning blend. Drizzle salad with oil and add 2 splashes red wine vinegar. Toss your salad and season with salt and pepper, to taste.

2 pounds small Yukon Gold or red-skinned potatoes
Kosher salt
1/2 cup extra-virgin olive oil
1/4 cup white wine vinegar
Freshly ground pepper
1/3 cup pitted nicoise olives
2 stalks celery, diced, plus 1/4 cup roughly chopped celery leaves
2 pounds beefsteak tomatoes, chopped
1/4 cup fresh basil, torn
1/4 cup chopped fresh chives

Steps:

  • Place the potatoes in a large pot; cover with water by 2 inches. Season generously with salt and bring to a boil. Reduce to a simmer and cook until the potatoes are tender, about 20 minutes. Drain the potatoes; let cool 15 to 20 minutes.
  • Whisk the olive oil, vinegar, 1 teaspoon salt and a few grinds of pepper in a medium bowl; stir in the olives and diced celery. Halve the potatoes and transfer to a shallow bowl. Scatter the tomatoes over the potatoes, then drizzle with the vinaigrette. Scatter the celery leaves, basil and chives over the salad and season with salt and pepper.

5 tablespoons extra-virgin olive oil, plus more for brushing
1 tablespoon plus 1 teaspoon red wine vinegar
1 tablespoon honey
1/4 teaspoon red pepper flakes
Kosher salt
4 6-ounce salmon fillets (about 1 1/4 inches thick)
1 clove garlic, coarsely chopped
1/2 cup coarsely chopped pitted kalamata olives
2 medium beefsteak tomatoes, cut into 1-inch chunks
1 cup sliced celery (inner stalks with leaves)
1/4 cup roughly chopped fresh mint

Steps:

  • Preheat the broiler. Line a broiler pan with foil and lightly brush with olive oil. Whisk 2 tablespoons olive oil, 1 teaspoon vinegar, the honey, red pepper flakes and 1 teaspoon salt in a small bowl. Put the salmon, skin-side down, on the prepared pan and brush the tops and sides with the honey glaze. Broil until golden brown and just cooked through, 4 to 6 minutes.
  • Meanwhile, put the garlic on a cutting board and sprinkle with a generous pinch of salt, then mash into a paste with the flat side of a large knife. Heat the remaining 3 tablespoons olive oil and 1 tablespoon vinegar, the olives and garlic paste in a small saucepan over medium-high heat until bubbling, about 3 minutes. Transfer the mixture to a bowl and add the tomatoes, celery and mint. Season with salt and toss to combine. Serve with the salmon. 1 cup pitted and sliced green olives
1 (6 ounce) can black olives, drained and sliced
2 green onions, minced
3 ounces pine nuts
1/2 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon white sugar
1 teaspoon dried oregano
salt and pepper

Steps:

  • Take a big bowl and mix together cherry tomatoes, green olives, black olives, and spring onion.
  • In a dry skillet, toast pine nuts over medium heat until golden brown, turning frequently.
  • Stir into tomato mixture.
  • Separately, mix together olive oil, red wine vinegar, sugar, and oregano.
  • Season to taste with salt and pepper.
  • Pour over salad, and gently stir to coat.
  • Chill for 1 hour.

1/4 cup grated parmesan cheese

1/2 head red leaf lettuce, torn into bite-size pieces
2 cups cherry tomatoes (red and yellow together are pretty) or 2 cups red pear tomatoes, halved (red and yellow together are pretty)
1/2 cup kalamata olive, pitted and halved

Steps:

  • Put olive oil, vinegar, grated cheese, parsley and mustard in a glass jar and shake well to combine. Season with salt and pepper to taste and set aside.
