TUNA FISH PIZZA WITH FENNEL AND OLIVES



Tuna Fish Pizza with Fennel and Olives image

This tuna fish pizza will transport you to the Mediterranean with fennel, olives, lemon, tomato sauce, and Parmesan cheese.

1 (14- to 16-ounce) ball pizza dough
⅔ cup New York Style Pizza Sauce ((or your favorite store-bought pizza sauce))
½ medium fennel bulb, (very thinly sliced)
1 (5-ounce) can tuna fish packed in oil, (drained)
¼ cup halved pitted Kalamata olives
1 teaspoon freshly grated lemon zest
½ to ⅔ cup finely grated Parmigiano-Reggiano cheese
1 tablespoon chopped fennel fronds
Kosher salt
Freshly ground black pepper
Extra-virgin olive oil, (for finishing)

Steps:

  • Preheat the oven to 500°F (if using a baking sheet) or as high as it will go (if using a baking stone/steel; place the stone/steel in the bottom third of the oven before you start preheating). Let the oven preheat for at least 30 minutes. Then, if you're using a baking stone or steel, switch the oven to Broil on high.
  • Stretch or roll out your dough to a 12- to 14-inch circle, then transfer it to an oiled or parchment-lined baking sheet or a lightly floured pizza peel (if using a baking stone/steel).
  • Spread the sauce evenly on the dough, leaving a 1-inch border all around. Scatter on the fennel, then the tuna, olives, lemon zest, and Parmesan.
  • Transfer the pizza to the oven and bake until the crust is golden and the cheese has browned in spots-8 to 10 minutes on the baking sheet, 6 to 8 minutes on the baking stone/steel.
  • Remove the pizza from the oven. Sprinkle with the fennel fronds, drizzle with extra-virgin olive oil, and season with salt and pepper. Slice and serve.

1 garlic clove
3 tablespoons canned tomatoes
1 tablespoon tomato paste
1 teaspoon extra virgin olive oil
1 frozen pizza crust
6 basil leaves
1/2 green capsicum
180 g tuna in vegetable oil
75 g mozzarella cheese, grated

Steps:

  • Mix together the tomatoes, tomato paste and garlic and season well with salt and pepper. Spread thinly over the pizza base.
  • Place the tuna, basil and capsicum on top.
  • Sprinkle the cheese over the pizza.
  • Bake in a hot oven (230°C) for 10 minutes until the cheese has melted.

For tuna:
2 tablespoons olive oil
2 tablespoons fresh lemon juice
3 anchovy fillets, finely chopped
1 garlic clove, finely chopped
2 teaspoons finely chopped oregano
4 (6-ounces) tuna steaks, preferably albacore (1 inch thick; see cooks' note, below)
For sauce:
2 tablespoons extra-virgin olive oil
2 celery ribs, cut into 1/4-inch dice, plus 3 tablespoons celery leaves, coarsely chopped
2 ripe tomatoes, cut into 1/4-inch dice
1/4 cup Kalamata or other brine-cured black olives, pitted and coarsely chopped
2 tablespoons small capers, drained and chopped
3 tablespoons finely chopped basil
1 tablespoons fresh lemon juice
Equipment: a 2-burner grill pan

Steps:

  • Marinate tuna:
  • Combine oil, lemon juice, anchovies, garlic, oregano, and tuna in a large sealable bag and seal bag, pressing out excess air. Let stand at room temperature, turning occasionally, 30 minutes.
  • Grill tuna:
  • Remove tuna from marinade and shake off any excess. Lightly oil grill pan and heat over medium-high heat until smoking. Grill tuna, turning once, until pale pink in center, 5 to 7 minutes. Transfer to a platter and cover with foil to keep warm.
  • Meanwhile, make sauce:
  • Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers. Add diced celery and cook, stirring, until tender, about 5 minutes. Stir in tomatoes, olives, and capers and cook until sauce is slightly thickened, about 5 minutes.
  • Stir in basil, lemon juice, and 1/4 teaspoon each of salt and pepper and remove from heat. Spoon sauce over tuna and sprinkle with celery leaves.

4 cups all-purpose flour, plus more for dusting
2 teaspoons sugar
2 teaspoons kosher salt
1 teaspoon instant yeast
1 3/4 cups warm water (100 degrees F to 110 degrees F)
6 tablespoons extra-virgin olive oil, plus more for the bowl
1 28-ounce can whole peeled tomatoes (preferably San Marzano)
1 1/2 teaspoons kosher salt, plus more for sprinkling
12 ounces whole milk mozzarella, thinly sliced

Steps:

  • Make the dough: Whisk the flour, sugar, salt and the yeast in a medium bowl. Pour the warm water into a large bowl, then add the flour mixture and stir until combined. Stir in 2 tablespoons olive oil to make a very sticky dough. Turn out onto a lightly floured surface and knead, dusting with more flour as needed, until the dough comes together and no longer sticks to your fingers, about 2 minutes. Transfer to a lightly oiled large bowl and turn to coat. Tightly cover with plastic wrap and refrigerate overnight.
  • Coat an 11-by-17-inch rimmed baking sheet with 3 tablespoons olive oil. Add the dough and stretch it to fit the baking sheet. Brush with the remaining 1 tablespoon olive oil. Loosely cover with plastic wrap and let rise at room temperature until puffy, about 2 hours.
  • Meanwhile, position a rack in the upper third of the oven and preheat to 450 degrees F. Make the sauce: Combine the tomatoes and their juices and the salt in a medium bowl and crush well with your hands or a potato masher. Uncover the dough and sprinkle with salt. Gently place the baking sheet in the oven (the dough might deflate if it is knocked). Bake until golden, about 20 minutes. Remove the crust from the oven, top with the sliced mozzarella and cover with 2 cups of the crushed tomatoes. Bake until the cheese is bubbling through the sauce and starts browning, 15 to 20 more minutes.
  • Let the pizza stand 10 minutes, then remove from the pan using a spatula and transfer to a cutting board. Let cool 1 to 2 minutes before slicing.

1 tbsp tomato purée
1 garlic clove
handful pitted black olives
large handful cherry tomatoes , halved
1 tbsp olive oil , for drizzling
1 tbsp capers , drained
200g can tuna in brine, drained and flaked
handful of basil leaves

Steps:

  • Heat oven to 230C/fan 210C/gas 8. Spread the pizza base with tomato purée. Scatter over the garlic, olives, tomatoes and half the oil. Bake for 10 mins until the tomatoes start to colour and the base is crisp.
  • Remove from the oven, sprinkle over the capers, tuna and basil, drizzle with oil, then serve.
