320g / 11oz spaghetti ((or other long pasta))
2 chicken breasts (, each halved horizontally to form 2 thin steaks)
2 tbsp olive oil
Salt and pepper
3 garlic cloves (, minced)
1/2 cup (125 ml) white wine ((Note 1))
800g / 28oz can crushed tomato
1/2 cup (125 ml) water ((about 1/3 empty tomato can))
1 cup (100g) sliced black olives ((Note 2))
170g / 6 oz artichokes ((marinated in can or jar), drained (Note 2))
1/2 - 1 tsp red pepper flakes ((spiciness - adjust to taste!))
1/2 tsp salt and pepper (, each)
1 cup basil leaves (, optional (or sub baby spinach))
Parmesan cheese (, freshly grated)

Steps:

  • Cook pasta in a large pot of salted boiling water per packet directions, MINUS 1 minute. Drain. (Do this while sauce is simmering)
  • Cook chicken: Sprinkle both sides of chicken with salt and pepper. Heat 1 tbsp oil in a large skillet over high heat. Sear chicken 1 1/2 minutes on each side until golden, then remove from skillet. Shred while sauce is simmering.

12 ounces whole-wheat penne
1/2 head cauliflower
2 tablespoons extra-virgin olive oil
3 tablespoons golden raisins
1 clove garlic, finely chopped
Pinch of red pepper flakes
1 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1 tablespoon fresh lemon juice
2 tablespoons grated pecorino romano or parmesan cheese, plus more for topping (optional)

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, trim the thick stems off the cauliflower and coarsely grate the florets on the large holes of a box grater (it's fine if some small florets remain whole). Heat the olive oil in a large skillet over medium-high heat. Add the cauliflower, raisins, garlic, red pepper flakes and 1/4 teaspoon salt and cook, stirring occasionally, until the cauliflower is crisp-tender and slightly browned, about 4 minutes. Remove the skillet from the heat and stir in the pasta, parsley, dill, lemon juice, cheese and 1/2 cup of the reserved cooking water. Add more cooking water to loosen, if needed. Season with salt. Serve with more grated cheese.

4 (8-ounce) boneless chicken breasts
Olive oil, for sauteeing
1 cup chopped medium onion
4 cherry peppers, seeded and sliced
16 mushrooms, chopped
3 cups black oil cured olives and capers
Dash paprika
3 - 4 ounces butter

Steps:

  • Cut the chicken into pieces. Place a saute pan over medium-high heat. Add enough oil to lightly coat the bottom of the pan and heat. Add the chicken and brown on both sides. Add the onion and the cherry peppers. Discard any excess oil. Add the mushrooms, olives, and capers. Add a dash of paprika and 3 to 4 ounces lightly salted butter. Cook on a high flame until the butter is completely melted, mixing to keep the butter from separating.

1.5 pounds of bone in and skin on (chicken thighs)
1 medium yellow onion (diced)
4 celery stalks (diced)
3 medium carrots (peeled and diced)
1 red bell pepper (cored, and diced)
1 green bell pepper (cored and diced)
2 russet potatoes (peeled and diced)
1/2 TBSP of minced garlic
1 14.5 oz canned diced tomatoes
2 dry bay leaves
2 tsp of salt
1 32 oz chicken stock
4 cups of water
3/4 dry cup ditalini pasta
1/2 cup fresh Italian parsley
salt and pepper to taste (half way through)

Steps:

  • Wash and prep your vegetables. Combine all ingredients except the pasta and parsley to a large pot. If you are using salted stock or if you have salt in your canned tomatoes, start by using 2 tsp of salt for seasoning. Half way through your cook time, taste and adjust as needed.
  • Cover and bring your pot to a boil. Once it has reached a rapid boil, reduce the heat and simmer partially covered for 30 minutes, till your chicken is cooked.
  • Once your chicken is cooked, remove the chicken and set it to the side for a moment. Then add your pasta and cover to cook for 13-15 minutes more.
  • Shred the chicken and discard the skin and bones. Return it to the pot and stir. Top with fresh parsley.

4-5 tbsp olive oil
1 medium red onion , finely sliced
2 garlic cloves , finely sliced
1 small dried red chilli , chopped
handful oregano or marjoram, roughly chopped
2 medium aubergines , diced into 2.5cm/1in cubes
50g raisins
4 large tomatoes , chopped
2 tsp tomato purée
2 tbsp baby capers , rinsed, drained and roughly chopped
2-3 tbsp good quality red wine vinegar
400g fusilli
small handful mint , roughly chopped
50g pine nuts , toasted
aged ricotta or vegetarian Parmesan-style cheese (try Bookhams 'Not just a pasta cheese'), to serve

Steps:

  • In a heavy based pan, heat ½ tbsp of oil and gently cook the onion, garlic and chilli until soft with half the oregano.
  • Meanwhile, heat 3-4 tbsp of oil in another frying pan and start browning the aubergines. Once cooked, add to the onion mixture. Fry the raisins in another ½ tbsp oil and, when they have puffed up, add to the aubergine mix. Add the tomatoes, purée and rest of the oregano. Cook on a medium heat for 15-20 mins so all the flavours come together.
  • Finally add the capers and the vinegar and leave on a low heat while you cook the pasta in plenty of boiling, salted water. If the mixture becomes very thick add 100ml of water. Toss the pasta through the aubergine sauce and sprinkle with fresh mint and the pine nuts. Let everyone grate over their own cheese.

8 chicken thighs, bone and skin left on
1 (15 ounce) can Italian-style diced tomatoes
1 (6 ounce) can tomato paste
1 onion, chopped
1 green pepper, chopped
2 garlic cloves, minced
2 teaspoons oregano
1 teaspoon basil
1/2 teaspoon celery powder
1 teaspoon salt
1/2 cup white wine
3 tablespoons olive oil
1 teaspoon crushed red pepper flakes
1 cup mushroom, sliced
2 teaspoons italian seasoning
1 teaspoon fresh ground pepper

Steps:

  • Put chicken thighs in crock pot.
  • Combine remaining ingredients; stir well.
  • Pour sauce over chicken and cook on low 6-8 hours or until done.
  • Serve with penne pasta, tossed salad and garlic bread.

  • Add to casserole dish and top with mushroom mixture.

1 teaspoon fresh rosemary (minced)
1/4 teaspoon fresh thyme (minced)

1 tablespoon fresh basil (minced, plus a handful of small leaves for garnishing)

1/8 teaspoon black pepper (freshly ground)
1/2 cup zucchini (diced)
1/2 cup green beans (chopped 1-inch pieces)
1/4 cup sun dried tomatoes (chopped)
1 12-ounce jar marinated artichoke hearts (drained and chopped)

Steps:

  • Cook pasta according to package directions. Drain, rinse, and toss in 1 teaspoon of olive oil. Set aside.
  • Heat a large skillet to medium-high heat, and add the remaining olive oil. Mix in the garlic, onion, and bell pepper. Saute for 3 to 4 minutes, or until the vegetables are tender.
  • In a small bowl, combine the tomato paste and water. Mix well. Add the tomato puree, wine, fresh herbs, and seasonings to the skillet. Continue to simmer for 5 to 7 minutes.
  • Add the zucchini and green beans, and cook for a few minutes until softened. Remove from heat.

  • Heat a large pot over medium heat and add in the olive oil, celery, carrots, onion, bell pepper. Sauté for about 10 minutes until the vegetables just start to soften.
  • Add in the: chicken breast (I like to cut mine in half to make shredding easier), garlic, potatoes, can of tomatoes, parsley, oregano, red pepper flakes, salt, and pepper, water, and chicken broth. Bring this to a full boil for about a minute then lower to a low simmer for 45 minutes - covered.
  • After the 45 minutes, pull out the cooked chicken and shred. You can just pull it apart using 2 forks. Add the chicken back to the pot along with your pasta and bring to a full boil again. Cook for the amount of time needed for your pasta. (Ditalini is typically about 10 minutes)
  • We like to serve our soup with a little extra parsley on top and a few pieces of bread for dipping.
  • We love to make this super easy focaccia bread to go with this soup!
