Steps:
- Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Remove from the heat and let the eggs stand in the hot water for 15 minutes. Drain. Cool the eggs under cold running water. Peel once cold. Halve the eggs lengthwise and scoop the yolks into a bowl. Gently mash the yolks with a fork.
- Melt butter in a skillet over medium heat; cook and stir the shrimp, green onion, and garlic powder in the melted butter until, about 4 minutes. Transfer the shrimp to a cutting board and mince. Stir 3/4 cup of the minced shrimp and any remaining liquid from the skillet into the egg yolks; reserve remaining shrimp for garnish. Add the mayonnaise, mustard, pickle relish, and hot sauce; mix well. Scoop the mixture into a resealable plastic bag, seal the bag, and snip a corner off the bag with scissors to make a piping bag.
- Gently squeeze about 1 1/2 tablespoon of filling into each egg white half. Garnish each deviled egg with a few pieces of the reserved chopped shrimp and a pinch of the chopped parsley; chill for at least 30 minutes in refrigerator before serving.

SHRIMP DEVILED EGGS
"Deviling" an egg usually refers to seasoning the cooked yolk with mustard or anything else that is spicy but not necessarily hot. Then you add your favored flavorings. If I had to pick a favorite, it would be the deviled egg with shrimp. In this preparation, a fairly basic combo is jazzed up with chopped shrimp and olives; I like green, sometimes even pimiento-stuffed, for this.

- Bring a small pot of water to a boil. Add shrimp and cook until pink, about 2 minutes. Remove shrimp with a slotted spoon. Let cool a bit, then chop.
- Add eggs to pot, adding water, if necessary, to cover. Bring water just to a boil, then shut off heat. Cover pot and let eggs rest for 9 minutes, 10 minutes if eggs are large. Plunge eggs into a bowl of ice water. When cool enough to handle, peel.
- Halve eggs lengthwise and remove yolks. Mash yolks of 3 eggs in a medium bowl. Add chopped shrimp and remaining ingredients and mix well.
- Mound this mixture into egg whites. Crumble remaining yolk on top and garnish with parsley. Serve, or cover with plastic and refrigerate for up to a day; bring back to room temperature before serving.

- Heat the olive oil in a medium-sized pan over medium-high heat. Season the shrimp with chili powder and salt to taste, then add them to the pan.
- Cook, stirring occasionally, for approximately 3 minutes, or until shrimp and pink and opaque.
- Pour the lime juice over the shrimp, toss to coat.
- Season the avocado halves with salt and pepper.
- Spoon the shrimp mixture evenly into each avocado half. Sprinkle with tomatoes and cilantro and serve.

BAKED STUFFED SHRIMP
This is a recipe for shrimp with a seasoned bread stuffing. I love to serve this dish when I have guests for dinner because I can prepare the shrimp early in the day. I've always received rave reviews over this recipe and have shared it often. You may add diced lobster or scallops to the cracker mixture just before baking. Serve with drawn butter.

- In a medium bowl, mix crushed crackers, bread crumbs and garlic powder. In a small bowl, blend butter and Worcestershire sauce. Mix blended butter, pepper and Parmesan cheese into the cracker mixture. Stir in white wine, using only enough to hold together the mixture.
- Preheat oven to 400 degrees F (200 degrees C).
- Butterfly the shrimp using a sharp knife, and arrange back side up in a large baking dish. Stuff shrimp with heaping tablespoons of the cracker mixture.
- Bake 20 minutes in the preheated oven, until cracker mixture is lightly browned, shrimp are opaque, and the tails have curled.

REMOULADE DEVILED EGGS WITH PICKLED SHRIMP

- For the pickled shrimp: Combine the lemon juice, vinegar, garlic, onions, pickling spice, chiles and 1/2 cup water in a medium saucepan. Bring to a boil and cook for 1 minute. Reduce to a simmer; cook for another 4 minutes. Transfer to a large bowl and let cool to room temperature.
- Fill a bowl with ice water; set aside. Bring a medium pot of salted water to a boil. Add the shrimp and cook for 1 1/2 minutes. Drain and plunge in the ice water to stop cooking. Drain again and pat dry. Add the cooked shrimp to the pickling liquid, cover and refrigerate for at least 4 hours and up to 24 hours.
- Drain the shrimp well and put in a bowl; add the hot sauce and toss to combine.
- For the remoulade deviled eggs: Remove the yolks from the eggs and place in a medium bowl; mash to a paste with a fork. Place the egg whites, cut-side up, on a large plate or platter.
- Add the mayonnaise to the mashed yolks; mix until well combined. Fold in the mustard, cornichons, dill, chives, 1/4 teaspoon salt and 1/8 teaspoon pepper.
- Fill the egg whites with the yolk mixture. Top each deviled egg with a pickled shrimp and garnish with a parsley leaf. Sprinkle the shrimp with a pinch of smoked paprika.

The holiday season is around the corner. I am sure you all are planning what to cook for Christmas and New Year parties. Today's recipe is a variation of a deviled eggs which is a popular dish made in Europe and United States. This dish is known as shrimp deviled eggs. Deviled eggs are also known as stuffed eggs, angel eggs or Russian eggs. In this recipe, first the eggs are hard boiled. Then the egg yolks are scooped out and mixed with shrimp pieces, mayonnaise, mustard sauce, black pepper powder and other ingredients. This shrimp and egg yolk paste is then stuffed or piped inside the empty boiled egg white cups. - To begin making the Shrimp Deviled Eggs recipe, heat a skillet and add butter.
- After the butter melts, add chopped spring onion whites. Fry for 2 minutes till onion turns pinkish.
- Add shrimps and toss till the shrimps get cooked. Add garlic powder and toss.
- Let it cook for 10 minutes. After cooling, mince the shrimps or chop into very small pieces.
- Take the hard boiled eggs and scoop out the egg yolks with a spoon and add the egg yolks to a mixing bowl.
- Mash it using a fork. Add mayonnaise, mustard sauce, garlic powder and black pepper powder ansd mix well. Add a pinch of salt or as per taste.
- Add the onion and shrimp mixture and mix well. Keep a few shrimp pieces aside for garnishing.
- Take a piping bag or a plastic bag of which a corner is cut. Add the egg yolk and mayo mixture to the piping bag.
- Gently fill the egg white cups with 1 tablespoon of the filling.
- Garnish the deviled eggs with shrimp pieces and spring onion greens. These shrimp deviled eggs can be served cold as appetizers or as starters for the parties or along with Pizza Margherita for a card party.

I use the unused yolks crumbled for topping on a salad, or you can mix with mayo, celery seed, salt, and chives, etc., for a sandwich spread, like a tea sandwich. The time I posted is for using already cooked shrimp and already boiled eggs.

- Slice whole eggplant lengthwise. Cut a cross-hatch in the eggplant with a sharp utility knife and brush some olive oil over the eggplant. (See Recipe Notes)
- Place the eggplant, cut side down on a baking rack and place in a preheated 400 degree (F) oven for 30 to 40 minutes or until the eggplant meat is soft.
- Allow the eggplants to cool. Scoop out the pulp, leaving about ¼ inch of the shell-resembling a little boat.
- Chop the scooped-out eggplant and set aside.
- Peel, de-vein and rinse the shrimp, then pat dry with paper towels.
- Chop about ¾ of the shrimp into small pieces, leave the remainder whole.
- Mix with some creole seasoning and set aside.
- Heat butter in a dutch oven over medium-high heat until bubbly.
- Saute the onions, bell peppers and celery in the butter until beginning to caramelize, about 8 to 10 minutes.
- Add the garlic and green onions and saute until aromatic, about 2 minutes.
- Mix in about half of the Herb and Spice Blend and the bay leaves. Saute for about 2 minutes.
- Add in the chopped eggplant; reduce heat to medium, cover the dutch oven and slow simmer about 10 to 15 minutes.
- Add the Worcestershire sauce and the stock, uncover and simmer for about 15 to 20 minutes until the eggplant is very soft and mash-able. (See Recipe Notes)
- Add in the shrimp, mix well and saute until the shrimp start to turn pink, simmer about 5 to 10 minutes.
- Stir in the breadcrumbs, starting with about half and adding more until you have the consistency of a filling.
- Add in the rest of the Herb and Spice Blend, mix well.
- Remove the Dutch oven from the heat, cover and let sit for about 5 minutes.
- Remove the lid and allow the eggplant to cool about 15 minutes before stuffing. Remove bay leaves.
- Preheat the oven to 350 degrees.
- With a spatula or wooden spoon, stuff the eggplant mixture into the eggplant halves, pushing to fill all the voids.
- Once all the filling has been used, sprinkle some bread crumbs on top and place 2 or 3 small tabs of butter on top of each.
- Place in the 350-degree oven and Bake until browning on top,

- Allow water to come to a rolling boil. Place your eggs into boiling water and allow it to boil for 1 minute. After one minute, turn off the flame and allow your egg/s to sit in the hot water for an additional 10 minutes. Once you've reached 10 minutes remove eggs and place in cold water that you have set aside. (This is known as an ice bath) this method would stop the cooking process right away. - Garnishing with paprika a dried parsley.

EASY SHRIMP STUFFED AVOCADO
Steps:
- In a pot of boiling water cook shrimp until tender, drain and rinse under cold water. Drain well (towel dry).
- In a small bowl mix together mayonnaise and ketchup.
- With a sharp knife cut the avocado lengthwise and remove pit, then carefully cut around the edges and slice to make cuts in the avocado to form small cubes (see photo remove and place in a medium bowl).
- Add the cooled drained shrimp, mayonnaise and ketchup mixture and gently mix together to coat, salt to taste.
- Top with freshly chopped Italian parsley. Serve with fresh Italian crusty bread or a salad. Enjoy!
