CHIPOTLE SHRIMP APPETIZER RECIPE

Chipotle Shrimp Appetizer Recipe image

Enjoy the unique combo of spice and smoky flavor with this chipotle shrimp appetizer. Marinate, cook a few minutes then assemble on tortilla chips!

Provided by Cheryl Najafi

Categories     appetizers

Time 40m

Number Of Ingredients 14

1 Tbsp extra virgin olive oil
1 tsp chipotle chili powder
1 tsp kosher salt
1/2 tsp garlic powder
1 Tbsp brown sugar
1/2 lb shrimp (raw, peeled and deveined (size 51-60))
2 Tbsp oil
juice of 1/2 of a lime (reserve other half for avocadoes)
2 Tbsp cilantro (chopped)
2 avocados (pitted and cubed)
juice of 1/2 of a lime
10 - 12 cherry tomatoes (or grape tomatoes, halved)
salt and pepper (to taste)
1 bag tortilla chip 'scoops'

Steps:

  • Mix olive oil, chili powder, salt, garlic powder and brown sugar in a medium-sized bowl until completely combined. Add the peeled and deveined shrimp then stir to coat. Cover bowl with plastic wrap and refrigerate for at least 1−4 hours.
  • After shrimp has marinated for at least 1 hour, remove from the fridge and drain any excess liquid from the bowl.
  • Place a large skillet over medium-high heat and add 2 Tbsp oil to the pan. When oil is hot, carefully add the shrimp and cook just until it is cooked through-this'll take about 1−2 minutes per side, depending on the size of the shrimp.
  • When the shrimp is cooked through, transfer it to a medium-sized mixing bowl and squeeze the juice of ½ a lime over the top. Sprinkle with 2 Tbsp chopped cilantro, stir to combine then set aside to cool slightly.
  • In a separate bowl, stir together avocado, lime juice and tomatoes then season with salt and pepper to taste.
  • Place approximately 2 tsp of the avocado mixture into each tortilla chip 'scoop' and top with a chipotle lime shrimp. Serve immediately and enjoy!

SHRIMP AND SCALLOPS IN GARLIC CREAM SAUCE

Shrimp and Scallops in Garlic Cream Sauce image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 45m

Yield 8 servings

Number Of Ingredients 12

1/4 cup olive oil, plus 2 tablespoons
5 cloves garlic, finely chopped
4 cloves shallots, chopped
2 cups white wine
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves, plus sprigs for garnish
1 teaspoon chopped thyme leaves
2 cups heavy cream
1 1/2 pounds (20/30 count) sea scallops
1 1/2 pounds (16/20 count) shrimp peeled and deveined with tails left on
1 1/2 to 2 pounds cooked pasta or rice, for an accompaniment
1/2 cup grated Pecorino Romano

Steps:

  • In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley, basil and thyme and let the liquid reduce by half. Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, let the sauce reduce to medium thickness. To the now empty saute pan, add 2 tablespoons olive oil, saute scallops, cook until opaque and remove to a utility platter in a warm place. Then use the same pan to saute shrimp just until pink, and remove to the utility platter. Add cream sauce to saute pan to toss the drained pasta or rice with the cream sauce and seafood, reserving a few scallops and shrimp for the top. Transfer to a serving dish, and sprinkle with cheese, as garnish. Arrange shrimp and scallops on top and garnish with basil sprigs.

SHRIMP NACHOS

Shrimp Nachos image

This is my most requested recipe to bring to get-togethers and there's always someone who hasn't had them who asks for the recipe. You can make it days ahead of time and have it out of the oven in just a few minutes when you need it. Add more chipotle peppers if you like it spicier. This recipe makes a lot, but it actually freezes well. I usually freeze half of it and have it another time. If you're making it for a party, though, bring it all because it will be gone!

SHRIMP SCOOPS

Shrimp Scoops image

This came from an insert out of one of the many magazines I get each month. Would be better if not too many of these are prepared ahead of time, as the chips get soggy if left too long. Maybe just do a couple for show, and then have the bowl of shrimp mixture and chips separately. Tostitos scoops work best, to work as a miniature bowl to hold the salsa mixture better.

Provided by knitaholic

Categories     < 15 Mins

Time 5m

Yield 4-6 serving(s)

Number Of Ingredients 6

16 ounces salsa
1 1/2 cups fully cooked baby shrimp, peeled and chilled

1 tablespoon fresh cilantro, roughly chopped
10 ounces tortilla chips (see note)

  • Evenly combine all ingredients except tortilla chips.
  • Fill each Tostito scoop with shrimp and salsa mixture.

CLASSIC SHRIMP SCAMPI

Classic Shrimp Scampi image

America can't seem to get enough of shrimp scampi: It's one of the 10 most-searched recipes on FoodNetwork.com during the summer (more popular than burgers!) and #shrimpscampi has more than 134,000 posts on Instagram. What's the excitement all about? Do we love shrimp scampi because it's simple but seemingly fancy? Or because it's done in 30 minutes? Or because we just can't resist a buttery wine sauce? All of the above!

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 10

Kosher salt
12 ounces linguine
1 1/4 pounds large shrimp, peeled and deveined
1/3 cup extra-virgin olive oil
5 cloves garlic, minced
1/4 to 1/2 teaspoon red pepper flakes
1/3 cup dry white wine
Juice of 1/2 lemon, plus wedges for serving
4 tablespoons unsalted butter, cut into pieces
1/4 cup finely chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
  • Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.

  • 1. First make a roux. In a large cast iron dutch oven, heat the oil over medium-low heat. Sprinkle flour over the oil and stir till it is completely blended. Continue cooking, stirring occasionally, over medium low heat, until the flour-oil mixture browns and is dark caramel-colored. (Be careful not to let it burn.)
  • 2. Stir in the onions, celery, and garlic. Sprinkle in 1/4 teaspoon of salt and a few turns of freshly-ground pepper. Stir well. Cover dutch oven and let vegetables cook in roux until softened. 3. While vegetables are cooking, put shrimp shells into a saucepan and cover with 2 cups of water and good pinch of salt. (Shrimp shells should be barely covered; add more water if they are not.) Bring water to a boil and then reduce heat so that it simmers. Continue to simmer until shells are bright pink. 5. To the vegetables in the dutch oven, add the tomatoes, thyme, oregano, paprika, lemon, and Worcestershire sauce. Strain the shrimp stock into the soup, stir, and let simmer uncovered for about 20 minutes. 6. Stir in the shrimp and let simmer in the soup till just firm and cooked through, about 3-5 minutes, depending on size. Taste and adjust seasoning to taste.
