SALT & PEPPER SQUID WITH ROAST CHILLI DRESSING
This sophisticated recipe puts a new spin on party food, great for a family celebration

- Cut the squid into large pieces, then score a criss-cross diamond pattern into the flesh, without cutting all the way through. To make the chilli dressing, pound the roasted dried chilli in a mortar and pestle (or food processor), then add the palm sugar. Pound again, adding the lime juice and the fish sauce. Mix well and place to one side. Heat oven to 180C/fan 160C/gas 4 and slide a baking sheet in.
- Pound the peppercorns and sea salt together, then stir into the flour in a large bowl and set to one side. Heat a few cms oil in a wok or deep frying pan.
- Place the wok over a high heat; when the oil starts to shimmer, it is ready. Toss the squid in the seasoned flour so that it is coated well.
- Drop a quarter of the squid into the oil and fry for about 1 min. The squid should curl and go crisp. Lift out of the oil with a slotted spoon and keep warm in the oven on the baking sheet while you cook the rest. Serve straight away, with the dressing on the side.

SALT & PEPPER SQUID
Crispy but tender squid with a hum of pepper heat, complemented by fragrant herbs, crispy garlic and a hit of vinegar - this is my evolution of the classic dish that I know you all love. Traditionally, it comes from Cantonese cuisine, where heat was achieved using finely ground peppercorns, but I couldn't resist adding a few chillies here for double pleasure.

- Pick the mint leaves into a small bowl of cold water to ensure they stay super-fresh.
- Trim the spring onions and halve across the middle, then finely slice lengthways and add to the water bowl.
- Pat the squid dry with kitchen paper, then use a regular eating knife to lightly score the inside of the squid at ½cm intervals at an angle. Turn the squid through 90° and do the same again to create a criss-cross pattern.
- When you're ready to cook, just under half fill a large sturdy pan with oil - the oil should be 8cm deep, but never fill your pan more than half full - and place on a medium-high heat. Use a thermometer to tell when it's ready (170°C), or add a piece of potato and wait until it turns golden - that's the sign that it's ready to go.
- While it heats, tip 1 heaped tablespoon of white pepper and the flour into a large bowl with a pinch of sea salt. Add the squid, toss and mix together to coat, then leave in the flour for a few minutes while you prick the chillies - if some are bigger, halve and deseed them first - then peel and finely slice the garlic 1mm thick, ideally on a mandolin (use the guard!).
- When you're ready to fry, add half the squid and chillies - it's important to cook in two batches so you don't overcrowd the pan. When it's all looking golden and lovely (after about 1½ minutes), add half the garlic for a final minute.
- Use a slotted spoon to scoop everything into a bowl or pan lined with kitchen paper to drain while you cook the second batch.
- Whip out the paper, then cut the squid into bite-sized pieces and return to the bowl. Drizzle with the vinegar, add a good pinch of seasoning, the drained mint leaves and spring onion curls, toss it all together and serve right away.

CHILLI, SALT AND PEPPER SQUID
This classic Cantonese starter is simple to make, but for real success, there are a couple of rules you need to follow. Most important: always use clean oil for your deep-frying. The resulting batter will be crisp, crunchy and light, as opposed to heavy, greasy and 'dirty' in flavour. And be sure to serve it immediately: this dish is best eaten piping hot.

- Rinse and dry the squid thoroughly.
- Slice each squid tube horizontally into 1/2in rings. Set aside.
- In a large bowl, combine both types of flour with the chili powder, sea salt and Szechuan pepper. Add the squid and toss to coat, shaking off any excess flour.
- Fill a wok with oil to about a third full (about 2 cups) and heat until the surface seems to shimmer slightly.
- Add half the squid and deep-fry it for between 45 seconds and 1 minute, or until it's just tender and beginning to colour. Remove with a slotted spoon and drain well on kitchen paper. Repeat the process with the remaining squid.
- Arrange the lettuce leaves on a platter and top with the squid. Serve with the lemon wedges.

CHILLI SALT AND PEPPER SQUID WITH FRESH LIME RECIPE
This dish is obviously best cooked "a la minute" so make sure you have all of your ingredients prepared, your serving plate with lettuce cups and fresh herbs ready to go, and your guests seated before you begin frying the squid. It only takes a few minutes to cook and is so delicious eaten piping hot.

- 1. First, clean and score the squid (see step-by-step guide below). 2. In a large bowl, combine flours, salt, chilli powder and Sichuan pepper. Add squid and toss to coat, shaking off any excess flour. 3. Heat oil in a hot wok until surface seems to shimmer slightly. Add half the squid and deep-fry for about 1½ minutes or until just tender and beginning to colour. Remove with a slotted spoon and drain well on kitchen paper. Repeat process with remaining squid. 4. Gently pull the head and tentacles away from the body and discard the entrails. 2. Cut the tentacles from the head just below the eyes. Reserve the tentacles and discard the head. 3. Remove and discard the fine, purplish-black membrane from the body. 4. Trim the side "wings" from the body and set aside. 5. Pull out the clear "backbone" (quill) from inside the body, then rinse body, tentacles and wings thoroughly and pat dry with kitchen paper. 6. Cut squid down the centre so that it will open out flat. 7. Using a sharp knife, score shallow diagonal cuts in a crisscross pattern on the inside surface, taking care not to cut right through the squid. Scoring squid makes it curl on contact with hot oil, while also allowing flavours to penetrate into the squid. 8. Cut the scored squid in half and then into four-centimetre strips. 9. This dish could also be used with calamari. I have been looking for a squid/calamari dish that does not have Szechuan pepper as I am unable to find it. This recipe comes from The Australian Womans Weekly Simply Seafood book.

- Cut squid hoods along one side and open out. Using a small sharp knife, score inside of hoods in a diagonal pattern, without cutting all the way through. This will allow the squid to curl during cooking. Cut each squid hood into eight pieces.
- Sprinkle squid with combined pepper, salt and lemon pepper seasoning.
- Heat oil in wok or large frying pan, stir-fry squid in batches until curled and just cooked through. Serve squid with cucumber salad.
- Cucumber Salad: Combine cucumber, onion, tomato, nuts and mint in medium bowl. Add combined vinegar and oil, toss to combine.

- Slit one side of squid hood lengthwise; open flat, with inside facing up. Using the tip of a sharp knife, score surface, not quite through, in a diamond pattern. Cut squid into 4cm pieces; blot dry with paper towels.
- Combine flour, pepper, salt and chilli in a shallow dish. Toss squid lightly in flour mixture, shaking off excess. Pour oil into a large heavy-based saucepan to 8cm deep. Heat over moderately high heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry squid, in 2 batches for 2 minutes or until curled and light golden. Using a slotted spoon transfer to paper towels to drain.
- Place salad mix, avocado, cucumber and capsicum in a large bowl; drizzle with dressing. Toss to combine. Place salad on plates; top with squid, then serve at once with lemon wedges.
