Time 4h28m

Yield 8 servings

Number Of Ingredients 14

1/3 cup heavy cream
1/4 cup light brown sugar
1/4 cup light corn syrup
2 tablespoons unsweetened cocoa powder
1/8 teaspoon table salt
2 teaspoons vanilla extract
4 ounces semisweet chocolate, finely chopped
8 ounces cream cheese, at room temperature
3/4 cup confectioners' sugar, plus 2 tablespoons, divided
3/4 cup creamy peanut butter, at room temperature
1 cup heavy whipping cream, plus whipped cream, for garnish, optional
1 teaspoon vanilla extract
2 ounces shaved milk chocolate
Chopped peanuts, optional

Steps:

  • 1 (9-inch) baked chocolate cookie pie crust
  • Sauce: Add the cream, brown sugar, corn syrup, cocoa powder, salt, and vanilla extract to a heavy-bottomed saucepan over medium heat. Reduce the heat to a simmer and add the chopped chocolate. Stir continuously until the chocolate is melted and the sauce has thickened, roughly 3 to 4 minutes. Let the sauce cool for 10 minutes before serving.
  • Pie: In a large bowl combine the cream cheese, 3/4 cups confectioners' sugar and the peanut butter until the mixture is light and fluffy, about 3 minutes.
  • In a separate bowl, whip the heavy cream until thick and light. Add the remaining 2 tablespoons confectioners' sugar and vanilla extract. Continue to whip until stiff peaks form.
  • Carefully fold the whipped cream into the peanut butter mixture. Pour the batter into the pie shell, sprinkle with the shaved milk chocolate and freeze for 4 hours.
  • If desired, serve with the hot fudge sauce, whipped cream, and chopped peanuts.

HOT PEANUT BUTTER FUDGE TOPPING

Hot Peanut Butter Fudge Topping image

Tastes like peanut butter fudge. An easy, quick sauce or topping. I just whipped this up one night on a whim and I liked how it turned out. I used evaporated milk because it's what I had on hand, but it turned out to be a good thing! Peanut butter and honey measurements are approximate and were eye-balled. Use your best judgement to get the thickness desired. As long as you don't burn it you really can't go wrong with this. It's very important to keep stirring and not let the bottom burn. Serve warm, poured over ice cream or with a fresh banana on toast.

Yield Makes 8 generous servings

Number Of Ingredients 24

For chocolate layer
Vegetable oil for greasing pan
7 oz fine-quality bittersweet chocolate (not unsweetened), chopped
1 stick (1/2 cup) cold unsalted butter, cut into pieces
1/4 cup granulated sugar
1/4 teaspoon salt
3 large eggs, lightly beaten
1 teaspoon vanilla
1 cup salted dry-roasted peanuts (4 oz)
For peanut butter layer
4 oz cream cheese, softened
1/2 cup creamy peanut butter (not "natural")
3/4 cup confectioners sugar
1/4 teaspoon salt
1/2 cup chilled heavy cream
1 teaspoon vanilla
For hot fudge sauce
1/3 cup heavy cream
3 tablespoons light corn syrup
3 tablespoons packed brown sugar
2 tablespoons Dutch-process unsweetened cocoa powder
1/4 teaspoon salt
3 1/2 oz fine-quality bittersweet chocolate (not unsweetened), chopped
1/2 teaspoon vanilla

Steps:

  • Make chocolate layer:
  • Put oven rack in middle position and preheat oven to 350°F. Line a 9-inch square baking pan with foil, allowing 2 inches of foil to hang over 2 opposite ends of pan, and lightly brush foil (except overhang) with oil.
  • Melt chocolate with butter, sugar, and salt in a double boiler or a large metal bowl set over a pan of barely simmering water, whisking occasionally, until smooth. Remove top of double boiler or bowl from heat and whisk in eggs and vanilla, then stir in peanuts.
  • Pour batter into baking pan and bake until set and edges are slightly puffed, about 15 minutes. Transfer cake in pan to a rack to cool completely.
  • Make peanut butter layer:
  • Beat cream cheese, peanut butter, confectioners sugar, and salt in a bowl with an electric mixer at medium speed until combined well, about 4 minutes.
  • Beat cream with vanilla in a bowl with cleaned beaters at medium-high speed until it just holds stiff peaks, then gently fold into peanut butter mixture until just combined.
  • Spread mixture evenly on top of chocolate layer and freeze, pan covered with foil, until firm, about 2 hours.
  • Make hot fudge sauce:
  • Bring cream, syrup, sugar, cocoa, salt, and chocolate to a boil in a 1-quart heavy saucepan over moderate heat, stirring until chocolate is melted. Reduce heat and simmer, stirring frequently, until thickened, about 3 minutes, then remove from heat. Stir in vanilla until incorporated. Cool sauce to warm.
  • To serve:
  • Carefully lift cake from pan by grasping overhang. Trim 1/4 inch from edges of cake and discard, then cut into 8 bars. Peel off foil and serve bars with sauce.

PEANUT BUTTER BANANA SANDWICHES

Peanut Butter Banana Sandwiches image

Provided by Food Network

Categories     dessert

Time 1h30m

Yield 8 sandwiches

Number Of Ingredients 24

2 1/2 cups cake flour
Nonstick vegetable spray, for coating the pan
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup (11/2 sticks) unsalted butter at room temperature
1 1/4 cups sugar
3 eggs
3 ripe bananas
1/2 cup sour cream
1 teaspoon vanilla extract
Peanut Butter Buttercream, recipe follows
4 bananas
Ice cream
Chocolate fudge sauce, recipe follows
8 tablespoons unsalted butter at room temperature
1 cup creamy peanut butter
1 1/4 cups sifted confectioners' sugar
1/2 cup very hot brewed coffee
1/2 cup sugar
3/4 cup unsweetened Dutch-processed cocoa
1/2 cup light corn syrup
4 ounces semisweet chocolate, chopped
2 tablespoons unsalted butter

Steps:

  • Set a rack in the middle of the oven and preheat to 350 degrees F. Lightly coat a 6-cup loaf pan with nonstick vegetable spray. Line the bottom with a rectangle of waxed paper. Sift the flour, baking soda, baking powder, and salt together into a bowl; repeat 2 times. In a mixing bowl, beat the butter and sugar together on high speed for 15 seconds, to combine. Add the eggs, 1 at a time, beating until each is incorporated. Continue beating until light and fluffy, about 6 more minutes.
  • In a bowl, mash the bananas until pasty. Stir in the sour cream and vanilla. With the mixer on its lowest setting, beat in 1/3 of the flour mixture. Beat in half of the banana mixture, then another 1/3 of the flour. Beat in the remaining banana mixture and the remaining flour. Spread the batter in the prepared pan and bake for 40 minutes or until the center springs back wen lightly pressed and a cake tester comes out clean. Set the pan on a rack to cool.
  • Turn the cooled cake out of the pan. With a serrated knife, trim off the end crusts and cut the loaf into 1/2-inch slices. Peel the bananas and cut them into 1/4-inch-thick rounds. Spread half the cake slices with the buttercream and layer on the banana slices. Place the remaining cake slices on top to form sandwiches. Cut the sandwiches in half and serve with ice cream and chocolate fudge sauce.
  • Peanut Butter Buttercream: On medium speed, beat the butter and peanut butter in a mixing bowl until blended. Reduce the speed to low and gradually beat in the confectioners' sugar. Increase the speed to high and beat for 3 to 5 minutes, until smooth and fluffy.
  • Chocolate Fudge Sauce: In a medium bowl, whisk together the coffee, sugar and cocoa. Whisk in the corn syrup until all the sugar crystals are dissolved and the mixture is completely smooth. Place the chocolate and butter in a large, dry bowl or in the top of a double boiler set over barely simmering water. When the chocolate has melted, whisk in the coffee-cocoa mixture until smooth and blended. The sauce is best if left to ripen for a full day before serving. Store in a sealed container. This sauce will keep for 3 weeks in the refrigerator or 3 months in the freezer.

PEANUT BUTTER FUDGE

Peanut Butter Fudge image

If you like fudge, you'll love this peanut butter fudge. It's quick and easy to make using marshmallow creme and sets up quickly too!

Provided by Meredith

Categories     Desserts/Sweets

Time 20m

Number Of Ingredients 8

2 cups sugar
⅔ cup evaporated milk
¼ cup unsalted butter
¼ teaspoon salt
7 ounces marshmallow cream
1½ cups peanut butter
1 teaspoon pure vanilla extract
⅓ cup coarsely chopped roasted peanuts

Steps:

  • Generously butter a 9-inch square pan or line with parchment paper.
  • Combine the sugar, evaporated milk, butter and salt in a wide saucepan and bring the mixture to a boil, stirring often. Cook until the temperature reaches 240°F when measured with a candy thermometer, about 5 minutes. (If you don't have a candy thermometer you can determine if the fudge has boiled for long enough and reached the "soft ball" stage by dropping a ¼ teaspoon of the mixture into a bowl of chilled water. It should form a soft ball when picked up with your fingers.)
  • Remove the saucepan from the heat and stir in the peanut butter until smooth. Then add the marshmallow crème and vanilla extract. Stir until melted and smooth.
  • Immediately pour the mixture into the prepared pan and smooth it out evenly. Sprinkle the chopped nuts on top, pressing them slightly into the fudge. When ready to enjoy, cut into squares and serve. Store in an airtight container in the fridge or freeze for up to 3 months.

PEANUT BUTTER HOT FUDGE SAUCE

Peanut Butter Hot Fudge Sauce image

Rich and creamy Peanut Butter Hot Fudge Sauce is just the thing to pour over vanilla ice cream! This recipe only has a few ingredients and comes together in just minutes making it a staple at our house!

Provided by Amy

Categories     Dessert

Time 10m

Number Of Ingredients 7

1/2 c. butter (no substitutes)
1 c. light corn syrup
1 c. evaporated milk
dash of salt
1 tsp. vanilla
1 1/2 c. chocolate chips (I used half semi sweet and half milk chocolate. Use whatever you have!)
1/2 c. creamy peanut butter

Steps:

  • Add chocolate chips and peanut butter to blender.
  • Over medium heat, bring butter, corn syrup, and evaporated milk to a gentle boil in a saucepan. Occasionally stir while bringing it to a boil.
  • Remove from heat and add vanilla and a dash of salt. Stir.
  • Pour butter mixture over chocolate chips and peanut butter in blender.
  • Blending hot liquids can be a bit tricky although I've never had a problem blending my hot fudge. You might want to hold a towel over the lid just in case!
  • Blend on low speed for about 20-30 seconds or until chocolate chips are melted and peanut butter is incorporated. It doesn't take long!
  • Pour into a jar. Serve immediately or store in the fridge for up to 2 weeks.

CHOCOLATE PEANUT BUTTER FUDGE SUNDAE

Chocolate Peanut Butter Fudge Sundae image

I've saved this to last, and for good reason: it is the ultimate ice cream sundae. Obviously, if you're not a peanut-eater, it won't be for you, but for everyone else it is the stuff of dreams. Last time I made this sauce, I nearly had to make another batch, I'd eaten so much before even getting the ice creams out of the freezer. Talking of which, obviously you should choose whichever flavors of ice cream you want. Even if you are reduced to just plain old, same old vanilla, you have a party right here. I made a jar of this for a friend to take home for her supper recently. As soon as she'd had it she sent a text saying "Bottle that sauce, make millions". Well maybe, but until then, here's the recipe:

Provided by Nigella Lawson : Food Network

Categories     dessert

Time 10m

Yield 4 servings for very lucky people

Number Of Ingredients 8

2/3 cup sweetened condensed milk
2/3 cup semi sweet chocolate chips
1/2 cup smooth peanut butter (recommended: Skippy)
4 scoops toffee or caramel ice cream
4 scoops chocolate ice cream
4 scoops vanilla ice cream
4 tablespoons or 1/4 cup salted peanuts, roughly chopped or left whole to taste
4 chocolate cigar cookies

Steps:

  • Put all the sweetened condensed milk, chocolate chips, and peanut butter into a saucepan and put it on the heat to melt, stirring occasionally. In about 2 minutes you should have your sauce ready. When everything has melted add 3 to 4 tablespoons of boiling water to thin the sauce.
  • Get out 4 sundae glasses and put a scoop of toffee or caramel ice cream in each, followed by 1 of the chocolate and then another of vanilla.
  • Pour over some chocolate peanut butter fudge sauce and sprinkle with salted peanuts.
  • Stick a chocolate cigar cookie in each sundae glass, hand them round and wait for people to weep with gratitude.

Fudge Pie With Peanut Butter Sauce for Valentine's Day image

Great anytime but for Valentine's Day present this luscious dessert with words of love handwritten across the plate. To allow plenty of room for your message, choose an oversized dinner plate. Spoon remaining 2 oz. melted chocolate into a small Zip-Lock bag or a small squeeze bottle with a narrow tip. (If using a plastic bag, snip a tiny hole in bottom corner, using scissors). Write "Happy Valentine's Day" in chocolate around the rim of a large plate. Then serve placing 1 slice on prepared plate. Top with Peanut Butter Sauce, whipped topping and additional chopped peanuts. • In a microwave-safe bowl, combine the chocolate chips, sweetened condensed milk, and peanut butter. Microwave for 1 minute. Remove from microwave and stir until hot fudge sauce is creamy and smooth. If the sauce is still a little lumpy, microwave for 15 more seconds. Remove from the microwave and stir again. The sauce will be thick. If it is too thick for your liking, you can add 2 tablespoons of hot water. Serve the hot fudge warm over ice cream, frozen yogurt, cake, pie, or brownies.
  • Note-you can make the hot fudge on the stovetop. Heat in a saucepan and stir until creamy and smooth. Again, add a little hot water if the sauce is too thick, but note it should be thick! Store hot fudge in the fridge for up to 2 weeks. Reheat in the microwave for 15 to 30 seconds and stir.
