Steps:
- Preheat oven to 500 degrees F and place the pizza stone on the bottom rack.
- Crumble the yeast in a small bowl then add 1/4 cup of warm water and the syrup. Stir together and leave for 5 minutes to dissolve.
- Put the flour and salt in a mixer fitted with a dough hook and give it a quick spin to mix. Pour in the yeast mixture, the remaining warm water and the olive oil at the same time, see Cook's note*.
- Spin on low until the flour and water come together and the dough pulls away from the sides of the bowl. Put the ball of dough in a large bowl and drizzle a few drops of olive oil on top to keep it from forming a skin as it proofs. Cover with a towel and leave in warm place for 30 minutes to let the dough proof. When the dough has proofed it will double in size and look spongy.
- For the topping: Caramelize the onions in a frying pan over low heat with a little olive oil and one of rosemary sprigs. When the onions are golden season with sea salt and black pepper and a few drops of lemon juice to bring out the flavor.
- When the dough has proofed, roll it out onto to a floured surface and punch the air out with your hands, then start shaping it into a circle When it's stretched out, dust a pizza paddle with flour and place the dough on it.
- Cover with a generous splash of olive oil and scatter with pieces of Robiola. Shingle the pancetta slices around and add the caramelized onions, and the stripped needles of the remaining rosemary sprig. Drizzle with olive oil. Add salt and black pepper.
- Slide the pizza onto the stone in the oven (be careful the stone is 500 degrees F) and bake for 15 minutes. Shave white truffles over it. Eat immediately.

- Over medium heat, heat oil in a saucepan until hot. Add all ingredients, cover and bring to a boil. Uncover, lower heat and allow to simmer for 30 minutes.

MARGHERITA PIZZA

- Preheat the oven to 450 degrees F. Put a jelly roll pan or a half sheet pan in the oven.
- Begin by making the tomato sauce. In a large saute pan over medium heat, add 2 tablespoons olive oil, the minced garlic, thyme and oregano. Cook until just fragrant then add the crushed tomatoes and season with salt and pepper, to taste. Lower the heat and simmer for 7 to 8 minutes to reduce and concentrate the flavor. Shut off the heat and set aside.
- Take the preheated jelly roll pan out of the oven and drizzle some olive oil over the entire surface. Cut the dough into 2 pieces and reserve 1 piece for another use. Stretch the pizza dough out so it is just bigger than the pan, then lay it inside the pan, so the dough comes up the sides to form a crust on the rim. Smear with tomato sauce then tear up the mozzarella and scatter it evenly over the top of the pie. Tear the basil leaves, spread them over the top and drizzle with a little more olive oil. Give it a final season with salt and pepper, to taste, then bake in the hot oven until golden and bubbly, about 15 to 18 minutes
- In a small bowl, combine the yeast, sugar and water and stir gently to dissolve. Let the mixture stand until the yeast comes alive and starts to foam, 5 to 10 minutes.
- If you're using a stand mixer, combine the salt and flour to the bowl and pulse a few times to mix. Add the yeast mixture, at the lowest speed, until the flour incorporates. When the dough starts to come together, increase the speed to medium and mix until the dough gathers into a ball. This should take about 2 minutes. Add the olive oil and pulse a few more times. Stop the machine periodically to scrape the dough off the hook. Get a feel for the dough as you're making it by squeezing a small amount together between your thumb and fingers. If it's crumbly, add more water, if it's sticky, add more flour, 1 tablespoon at a time. Turn the dough out onto a lightly floured surface and fold it over itself a few times, kneading until it's smooth and elastic.
- If you're making the dough by hand, add the yeast mixture to a large bowl and stir in the salt and the 2 tablespoons of olive oil. Then begin stirring in the flour. When the mixture becomes too stiff to stir with a spoon, knead in the rest of the flour by hand, adding just enough so that the dough is soft but not too sticky. As you work, squeeze a small amount of dough together between your thumb and fingers. If it's crumbly, add more water; if it's sticky, add more flour, 1 tablespoon at a time. Knead until smooth and elastic, about 10 minutes.
- Form the dough into a round and put it into a lightly oiled bowl, turning it over to coat the dough entirely with the oil. Cover with plastic wrap or a damp towel and let it rise in a warm spot (i.e., over a gas pilot light) until it doubles in size, about 1 hour.
- Remove from the oven, cut into slices and serve. .
QUICK MIX QUICK RISE PIZZA DOUGH
This recipe has been in my little wooden recipe box for years. It's my "go to" when it's pizza time. It will give you two - 12 inch thin crust pizzas or one lovely thick crust. You can easily double it and still use the KitchenAid to mix and knead it. For a change of taste, change the flour to 1 1/2 cups all-purpose and 1 cup whole wheat.

- In a large bowl, combine 1 1/2 cups of flour with yeast and salt.
- Pour hot water and oil into flour mixture and mix well.
- Mix in remaining flour to make a slightly sticky dough.
- Form dough into a ball.
- On a lightly floured surface - or using the dough hook on KitchenAid mixer - knead dough for about five minutes or until smooth and elastic.
- Cut dough in half; cover and let rest for 10 minutes. To make later, refrigerate the rounds of dough at this point. Bring to room temperature before rolling or stretching.
- Meanwhile, lightly oil pizza pans or sheets and sprinkle lightly with cornmeal.
- Roll dough to desired thickness and transfer to pans, or place dough directly on pan and pat and stretch to desired shape and thickness.
- Let rise for 15 minutes, a little longer if you are making a thick crust.
- Add toppings.
- Bake in 450 degree oven for 16 to 18 minutes.

EASY NO YEAST PIZZA DOUGH
I've made this several times and it always turns out good. Make sure you knead the dough for the required 5-7 minutes. I have added dried herbs and onion flakes right into the dough as well.

- Preheat your oven to 400'F.
- Place the flour, baking powder and the salt into a bowl. Make a well in the center and add the water and oil.
- Combine by gradually incorporating the flour into the olive oil and water. You may want to add a little more water if necessary.
- Transfer the dough to a floured board and knead it at least for 5-7 minutes.
- Let the dough rest in an air tight plastic bag while you prepare the toppings for your pizza.
- Once the toppings are made, set them aside and take the dough out of the plastic bag.
- Put a tiny bit of oil in the center of your pizza pan and with your hands and finger tips spread the dough to cover the pan. I use a 12 inch pizza pan. You could probably stretch it to 15 inches, but it would be a thinner crust.
- Place your pizza sauce on the dough and then cover with your favorite toppings.
- Pop it into the preheated oven. Check it after about 20 minutes to see how the crust is browning. Some ovens are hotter then others, so this is a good habit to get into.

SUPER QUICK PIZZA DOUGH
Only a 15-minute rise time! Add a pinch of salt or garlic salt if you wish, but I never do. Easy and quick dinner!

- In the bowl of a standing electric mixer fitted with a dough hook, combine the yeast, sugar, and warm water; stir gently to dissolve. Let the mixture stand until the yeast comes alive and starts to foam, about 5 to 10 minutes.
- Turn the mixer on low and add the salt and 2 tablespoons of olive oil. Add the flour, a little at a time, mixing at the lowest speed until all the flour has been incorporated. When the dough starts to come together, increase the speed to medium; stop the machine periodically to scrape the dough off the hook. Get a feel for the dough by squeezing a small amount together: if it's crumbly, add more water; if it's sticky, add more flour - 1 tablespoon at a time. Mix until the dough gathers into a ball, this should take about 5 minutes.
- Turn the dough out onto a lightly floured surface and fold it over itself a few times; kneading until it's smooth and elastic. Form the dough into a round and place in a lightly oiled bowl, turn it over to coat. MUSHROOM AND THREE CHEESE PIZZA
Steps:
- Make the pizza dough as directed in the master recipe. Stick a pizza stone in the oven and preheat them to 500 degrees F.
- Coat a saute pan with the olive oil and place over medium heat. When the oil gets hazy, add the prosciutto strips, stir to render out the ham's fat and flavor. Toss in the garlic and rosemary, saute for a minute until fragrant. Add the mushrooms, cook and stir until they've released their moisture and are nicely browned, about 5 minutes; season with salt and pepper. Remove from the heat.
- Crumble goat cheese evenly on the crust, scatter sauteed mushrooms all around, and top with shredded fontina. Slide the pizza onto the hot stone in the oven and bake for 12 to 15 minutes, until the crust is golden and crisp, and the cheese is bubbly.
- Before cutting the pizza into slices, grate pecorino over the whole damn thing!

TYLER FLORENCE'S PITA BREAD (BREAD MACHINE, DOUGH CYCLE)
I don't know if Tyler Florence would approve of the use of a bread machine to knead his pita bread recipe. I think it works wonderfully. Fresh pita bread is like a loaf of homemade bread. The flavor, texture and fragrance can't be compared with the store bought variety. I think this goes well with Paula Wolfert's Hummus which I also submitted to RecipeZaar. This recipe uses a Pizza Stone but I think you might possibly use a hot cookie sheet with good results. Prep time is bread machine time.

- Combine ingredients in a bread machine. Set for a 2 pound dough cycle.
- Toward the end of the dough cycle place the pizza stone on the lowest oven rack and pre-heat it to 500 degrees.
- When the dough is ready punch it down and divide it into 8 balls, keeping it all lightly floured and covered.
- Rest the covered balls for 15 minutes.
- Roll each ball into an eight inch circle, one quarter inch thick, making sure circles are totally smooth, with no creases or seams. Do not stack the disks but keep them covered.
- Put 2 pitas on the hot stone and bake them 4-5 minutes, until they're puffed and a pale golden color. WATCH CLOSELY. They cook really quickly.
- Cool on rack 5 minutes. They will naturally deflate, leaving a pocket.
- Wrap them in a kitchen towel to keep them soft.

- In bread maker (My model is Black and Decker) measure first six ingredients in the order listed above into the baking pan.
- Insert baking pan and close lid.
- Select *dough* setting and push start button. There will be a 25 minute preheat delay before mixing begins.
- The complete signal will sound when dough is done.
- Using pot holders or oven mitts remove baking pan to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle.
- Divide dough into thirds.
- Roll out one piece of dough and place on pan, top with desired pizza toppings OR make into one large pizza.
- Bake in oven preheated at 425°F or 218°C for 15-25 minutes (15 for a fluffier pizza).
- *Note Dough take two hours in the bread machine.
