This recipe is an old family favorite. A crisp and sweet flatbread that's fried on the griddle. Everyone in my family loves it!

- In a large bowl, stir together flour, salt and water until a soft dough is formed. Turn dough out onto a lightly floured surface and knead briefly. Divide dough into golf ball size pieces and cover with a damp cloth or plastic wrap.
- Select a ball of dough and roll out until very thin but not torn. Sprinkle lightly and evenly with sugar. Fold up dough into a small square and roll out again until thin.
- Heat a lightly oiled griddle over medium heat. Place the rolled dough onto the pan and cook for 1/2 to 1 minute on each side until golden. Serve immediately. Repeat until all dough balls have been rolled and cooked.

CINNAMON FLAT BREAD
Sometimes I have a craving for cinnamon bread. This easy and fast to make cinnamon flat bread can be served for breakfast or with glass of milk, a cup of coffee or tea. It is tasty on its own, but you can serve it with your favorite jam, peanut butter, or some fresh cheese. It is not overly sweet. The whole spelt flour adds a delicate nutty note, but you can also use whole wheat flour.

- Mix all dry ingredients for the dough in a bowl and add the milk. Mix with slightly floured hands until dough is formed. Knead dough for 5 minutes with slightly floured hands. Let rest dough for about 10 minutes.
- Preheat oven (480°F, 250°C). Put the baking tray into the oven. So it will be heated up, too.
- On a slightly floured working plat form roll out the dough with a rolling pin. It should be thin (as thinner you roll it as crispier it will get during baking). Place the dough on baking paper (size of the baking tray).
- Mix egg yolk and milk. Brush the dough with this mixture.
- Mix brown sugar, grounded cinnamon and grounded cayenne pepper. Sprinkle the dough with this mixture.
- Put dough (on baking paper) on the baking tray in the oven and bake for about 5 - 10 minutes. The bread should be done within 5 minutes and will be soft. If you like it more crispier let it bake for up to 10 minutes. During baking the bread will develop several "bubbles".
- Take the cinnamon flat bread out of the oven and let cool on a cooling rack. Cut into pieces and serve.
- NOTE (28 April 2006): you can omit the cayenne pepper, if you don't like it. But I would recommend it, because that spicy taste goes well together with cinnamon. If you are hesitant, just try it with a pinch of cayenne pepper first (I added this note after BestTeenChef has reviewed the recipe. Thanks for the comment).

- Fill a small bowl with water; sprinkle over yeast. Let stand 5 minutes. In a large bowl, whisk together flour and 2 teaspoons cinnamon. Stir yeast mixture and add to the bowl of an electric mixer fitted with the dough hook attachment along with, salt, 1/4 cup sugar, 1/4 cup olive oil, and flour-cinnamon mixture. Mix until a dough comes together and pulls away from the sides of the bowl, 3 to 5 minutes. Transfer dough to a large bowl and cover with a damp kitchen towel. Keep in a warm place and let rise until doubled in size, 1 1/2 to 2 hours.
- Punch down dough. Cover with a damp kitchen towel and then with plastic wrap and transfer to refrigerator for at least 8 hours and up to 2 days.
- Preheat oven to 250 degrees. With racks in center of oven. Remove dough from refrigerator and let come to room temperature. Cut dough in half. Roll out dough to 1/8-inch thick on a lightly floured work surface. Using the tines of a fork, poke holes in dough. Using a knife or a pizza cutter, cut dough into 2-by-7-inch rectangles; transfer rectangles to baking sheets.
- Mix together remaining 1 cup sugar and 1/4 cup cinnamon in a small bowl. Brush the top of each rectangle with remaining 1/2 cup olive oil and sprinkle with cinnamon-sugar mixture. Transfer baking sheets to oven and bake until browned, 25 to 30 minutes.

- In bread machine pan, place the first nine ingredients in order suggested by manufacturer. SWEET FLATBREAD WITH LEMON YOGURT WHIPPED CREAM

- For the lemon yogurt whip: In a stand mixer fitted with a whisk attachment, beat the heavy cream and yogurt to soft peaks. Add the powdered sugar, vanilla and lemon zest and continue beating until stiff peaks. Refrigerate until ready to use.
- For the flatbread: In a large bowl, whisk together the flour, baking powder, sugar, yeast and salt. In a medium bowl, whisk together the water, yogurt, vanilla and almond extracts and stir very well to get rid of any lumps. Pour the wet ingredients into the dry and stir until combined. Cover with plastic wrap or a towel and let it sit at room temperature until doubled in size and bubbly, 1 to 2 hours or refrigerated overnight.
- Preheat the oven to 200 degrees F. Line a baking sheet with a clean kitchen towel or a layer of paper towels and stick it in the oven to hold cooked flatbread.
- Heat a large skillet over medium heat and melt enough butter for a thin coating on the bottom of the pan. Pour in about 1/2 cup of batter and cook until the bottom is browned and starting to crisp and the bubbles on the top have released and batter has set. Don't flip it! Transfer to the baking sheet in the oven with a metal spatula. Repeat with remaining batter, adding more butter to the pan in between batches.
- Warm some honey over medium heat or in the microwave. To serve, top a flatbread with the yogurt whip, a drizzle of warm honey, a sprinkle of pistachios, and fruit, if using. Enjoy!
NAAN BREAD
This easy naan bread is an Indian flatbread that is soft and puffy. It can be served savory or sweet and is very versatile. My favorite is the cinnamon sugar naan dippers!

Steps:
- Gather all of your ingredients to make your flatbread.
- Mix the flour, salt, sugar, eggs, milk, yogurt, olive oil and active dry yeast together in a mixing bowl. You can use a flat paddle or a dough hook.
- Add the water and mix about 2 minutes, to make a smooth dough.
- Grease a large bowl. Place the dough into the bowl and cover with plastic wrap or a towel.
- Let the dough ferment/rise for 2 hours in a warm place. The dough should be about double in size.
- Using a scale, divide the dough into 4 oz portions.
- Pre-shape the dough into round tennis sized balls. Place balls onto a lightly floured surface, brush a little oil on the top of each. Cover with a cloth for at least 30 minutes.
- Starting with the first dough ball, flatten like a pancake by tossing, slapping and gently stretching with both hands. You want them to be about 6-7 inches round.
- Continue shaping the rest of the dough balls until you have done them all.
- How to Cook NaanThere are several ways to cook your naan recipe.
- Use a deck oven and place dough rounds directly onto the oven floor. Cook until done and golden brown. Remove with a wooden peel paddle.
- Using a convention oven, place the dough, in a single layer, on a sheet pan and bake until the bread is browned. Bake approximately 10 to 12 minutes. To prevent a soggy crust, you can open the oven door during the last 2 minutes to help remove excess steam that may build up in the oven.
- I cooked my homemade naan in a large non-stick sauté pan on medium low heat with a little bit of grease. Brown both sides until done. This took about 1 ½ to 2 minutes on each side. Continue cooking until all of the dough rounds are done.
- Cooking Naan on the GriddleIf you have an outdoor griddle, this is my preferred method of cooking the easy naan recipe. A large cooking surface, the Blackstone griddle is perfect for cooking up several of the dough rounds. After heating my Blackstone 36-inch griddle on medium heat until hot, I place a layer of olive oil onto the flat-top. Line as many of the pre-shaped dough rounds onto the Blackstone griddle as you can. Once the naan bread is golden brown on one side then flip over and brown the other side. Remove from heat once both sides are golden brown.

- Steam or boil the sweet potatoes (with the skin on) until they are very soft. Check with a fork to see if they are cooked and then, take them out of the pan.
