Creamy Vegetable Cheese Soup image

This recipe has been in my family for years. Quick and easy. Everyone will love it. For some variation, try other vegetables.

2 quarts water
2 cups diced potatoes
½ cup chopped onion
2 cups chopped celery
1 (16 ounce) package frozen mixed vegetables
2 (10.75 ounce) cans condensed cream of chicken soup
1 pound processed cheese food (eg. Velveeta)

Steps:

  • In a large saucepan, combine the water, potatoes, onions and celery. Bring to a boil and then reduce heat to low. Simmer for 20 minutes. Add frozen vegetables and simmer 10 more minutes. Add the cans of soup and the cheese and cook slowly, until the cheese melts.

BASIC CREAM OF VEGETABLE SOUP



Basic Cream of Vegetable Soup image

3 tablespoons unsalted butter
1 cup chopped onion
1 potato, peeled and diced
2 cups water or chicken stock
1 1/2 cups steamed vegetables, i.e. carrots, broccoli, spinach, or peas
Salt and pepper
1/2 cup heavy cream
Serving suggestions: French bread and a salad

Steps:

  • In a large saucepan, melt butter over medium heat. Add the chopped onion and cook until tender without browning. Stir in diced potato and liquid. Bring to a boil and simmer until potato is tender. Stir in your steamed vegetable of choice and return to a simmer. Puree the soup in batches in a blender and return to saucepan. Leave 1 cup of vegetables not pureed if a chunkier soup is preferred. Season soup with salt and pepper and finish with heavy cream. Serve warm with French bread and a salad.

1 small onion, chopped
2 medium carrots, diced
1/2 cup green bell pepper, diced
1 cup white Cheez Whiz (cheese spread)
1/4 cup butter or 1/4 cup margarine
2 garlic cloves, finely chopped
1 celery, chopped
3 cups milk
chicken bouillon powder

Steps:

  • Sautee onion and garlic in butter or margarine.
  • Add carrot, celery and bell pepper and cook , stirring until they soften.
  • Add milk and cream cheese and mix, stirring, until cream cheese melts.
  • Add the white spreadable processed cheese.
  • Season with powdered chicken bouillon, to taste.

1 onion, chopped
4 cups fat-free reduced-sodium chicken broth
3 stalks celery, chopped
2 carrots, chopped
1/2 lb. Yukon gold potatoes (about 2), peeled, chopped
4 sprigs fresh thyme
1 bay leaf
1/2 cup PHILADELPHIA Garlic & Herb Cream Cheese Spread

Steps:

  • Heat dressing in large saucepan on medium heat. Add onions; cook and stir 5 min. or until crisp-tender.
  • Add all remaining ingredients except cream cheese spread; stir. Bring to boil; cover. Simmer on medium-low heat 25 min. or until vegetables are tender. Cool slightly. Use slotted spoon to remove thyme sprigs and bay leaf from pan; discard.
  • Blend soup, in small batches, in blender until smooth. Return to pan. Gradually add cream cheese spread, cooking and stirring with whisk after each addition on medium-low heat 3 min. or until cream cheese is completely melted and mixture is well blended.

300g potatoes, cubed
1 tbsp oil
700ml stock
crème fraîche and fresh herbs, to serve

Steps:

  • Fry the vegetables and potatoes in a pan with the oil for a few minutes until beginning to soften.
  • Cover with the stock and simmer for 10-15 mins until the veg is tender. Blend until smooth, then season. Serve with a dollop of crème fraîche and some fresh herbs. Will freeze for up to one month.

1 medium onion, chopped
3/4 cup butter
1/2 cup all-purpose flour
3 cans (10-1/2 ounces each) condensed chicken broth, undiluted, or 4 cups chicken broth
2 cups milk
2 cups half-and-half cream
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
5 cups chopped leftover cooked mixed vegetables (such as broccoli, carrots and cauliflower)

Steps:

  • In a Dutch oven, saute onion in butter until tender. Add flour; stir until blended. Gradually add broth. Bring to a boil. Cook and stir for 2 minutes or until thickened. , Stir in the milk, cream, basil, salt, pepper and garlic powder. Add the vegetables; cook gently until heated through.

One of the nurses I work with gave me this recipe it is wonderful. The frozen hashbrowns are used more as a thickening agent. My family loves this. During cooking make sure you stir well or it may stick to bottom of pan. This freezes well.

1 (30 ounce) bag frozen hash browns, shredded

Steps:

  • Add the water, bouillon cubes, hash browns and Vegetables into soup pot.
  • Boil until the vegetables are soft, stirring often.
  • Add 2 cans mushroom soup, velveeta cheese, and the milk.
  • Return to a boil, then simmer 30 minutes.
  • Serve.
  • This freezes well for OAMC.

There are lots of ways to alter this recipe by using alternate soups, vegetables, etc. (update 12/08) after reading the reviews that some chefs thought this dish was too soupy, I made it again using 2 packages of frozen veggies, it wasn't soupy at all, so I've edited the recipe from 1 pkg. to 2 packages of veggies. I think this will correct the problem.

8 stalks celery, cut into 3-inch pieces washed and dried well (very important)
2 (8 ounce) packages cream cheese, room temperature
1 -2 tablespoon milk
1 (1 1/4 ounce) packet dry vegetable soup mix, I used Knorr's

Steps:

  • Wash, and cut the celery. Dry celery stalks with a paper towel (IMPORTANT).
  • Cut into 3" pieces, and set aside.
  • Put cream cheeses into a glass bowl. Put in microwave for 45 secs., until soft.
  • Add milk and cream together. Start with 1 T. and add more, if needed to make a creamy texture.
  • Add Vegetable Soup dip mix, and mix well.
  • Stuff celery with cream cheese mixture.
  • Put in a plastic container or on a serving plate, wrap, and put in refrigerator for at least 1 hours.
  • Serve.
