MARYLAND CRAB SALAD

Maryland Crab Salad image

This is a personal recipe -- tried and true -- made time and time again. I use this in the good ol summa' time, but can be used during the rest of the year as well. Normally, I buy "cold steamed blue crabs" from our local fish market, that are bursting with flavor after resting in the unique Maryland seasoning. I pick the meat, and make this cooling, refreshing salad. It is also great served on a saltine or toast points. Usually though, I just place atop a garden fresh lettuce leaf, and grab a cracker or two with it. If you get the time, marinate the crab meat in 1 tablespoon of Italian dressing for about 1 hour prior to gently folding together. If you don't get the time, that's okay too! Just *enjoy* You can substitute lobster, shrimp, or even conch meat.

Provided by Andi Longmeadow Farm

Categories     Crab

Time 20m

Yield 4 serving(s)

Number Of Ingredients 11

1 lb crabmeat, fresh (can use other suggested seafood)
1 tablespoon Italian dressing (to marinate the crab)
1 teaspoon Old Bay Seasoning (to taste, if prefer spicy go up to 1 tablespoon)
1/2 cup mayonnaise (important to use Dukes or Hellman's)
1/4 cup red pepper, diced
1/4 cup celery, diced
1 small spring onion, minced
1/4 teaspoon celery seed
1/8 teaspoon dry mustard (Dijon can be subbed)
1/8 teaspoon garlic powder
1 dash Tabasco sauce (add more for additional spicy taste)

Steps:

  • Carefully comb through crab meat for any extra shells.
  • Making sure not to break up crab, marinate crab pieces with Italian dressing for about 1 hour. But if you don't get a chance, ten minutes works well too.
  • Mix all other ingredients in a medium bowl thoroughly.
  • Add crab meat mixture to mayonnaise mixture and mix with spatula, again not to break up pieces.
  • You can either cool in fridge for an hour or two, or you can eat directly.

SHRIMP TOAST

Shrimp Toast image

Provided by Emeril Lagasse

Categories     main-dish

Time 45m

Yield 32 hors d'oeuvres

Number Of Ingredients 13

1/4 cup heavy cream
8 slices brioche or home-style white bread
1/2 cup vegetable oil or clarified butter, for frying
Duck sauce or pepper jelly, for garnishing, optional
8 ounces peeled and deveined raw shrimp (about 9 ounces unpeeled)
1 large egg
1 large egg white
2 tablespoons minced green onions, green parts only
2 tablespoons minced fresh parsley
1 teaspoon minced garlic
1/2 teaspoon salt
1/8 teaspoon freshly ground white pepper
3 ounces cream cheese, cut into pieces

Steps:

  • Combine the shrimp, egg, egg white, green onions, parsley, garlic, salt, and white pepper in a food processor and process until blended but still slightly chunky. Add the cream cheese and pulse until smooth and thick. Add the cream and pulse just until blended, being careful not to over process.
  • Spread 1/4 cup of the shrimp mixture onto each slice of bread, spreading to the edges and smoothing the top.
  • Heat the vegetable oil to 360 degrees F in large deep skillet. Add the shrimp toast in batches, coated sides down, and fry until golden on the first side, 2 to 2 1/2 minutes. Turn and cook until golden on the second side, about 1 1/2 minutes. Drain on paper towels.
  • To serve, cut each toast diagonally into quarters. Serve hot, with a drizzle of duck sauce or a dab of pepper jelly, as desired.

SHRIMP BUTTER TOASTS

Shrimp Butter Toasts image

Categories     Food Processor     Citrus     Fish     Onion     Freeze/Chill     Sauté     Cocktail Party     Easter     Shrimp     Chill     Gourmet

Yield Makes 10 (hors d'oeuvre) servings

Number Of Ingredients 12

For shrimp butter
1 1/2 sticks (3/4 cup) unsalted butter, softened
1 lb medium shrimp in shell (31 to 35 per lb), peeled and deveined
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup minced onion
2 1/2 teaspoons fresh lemon juice
1/8 teaspoon cayenne
For toast points
10 slices firm white sandwich bread, crusts discarded and each slice cut to form 4 triangles
3 tablespoons unsalted butter, melted
Garnish: whole cooked shrimp

Steps:

  • Make shrimp butter:
  • Heat 2 tablespoons butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté shrimp with salt and black pepper, stirring, until just cooked through, 1 1/2 to 2 minutes. Transfer shrimp with a slotted spoon to a food processor, reserving skillet (do not clean).
  • Cook onion in 1 tablespoon butter in skillet over moderately low heat, stirring occasionally, until softened, 2 to 3 minutes. Scrape onions into processor and cool mixture to room temperature, about 15 minutes. Add lemon juice, cayenne, and remaining 9 tablespoons butter and pulse until shrimp are finely chopped. Pack shrimp butter into a 2-cup ramekin or serving bowl and chill, its surface covered with plastic wrap, at least 6 hours (to allow flavors to develop). Bring to room temperature 45 minutes before serving.
  • Make toast points:
  • Put oven rack in upper third of oven and preheat oven to 400°F.
  • Brush 1 side of bread triangles lightly with melted butter and toast, buttered sides up, in a large shallow baking pan until golden around edges, 6 to 8 minutes. Transfer to a rack to cool. Serve toast points with shrimp butter.

SHRIMP SALAD TOAST POINTS

Shrimp Salad Toast Points image

Shrimp salad is fantastic, but can sometimes be TOO filling before a meal...If I order a shrimp salad, I am not able to eat the main course. A simple shrimp salad on a little toast point is the perfect answer. The take on this is nothing short of my Mom's original egg salad sandwich that my dad demanded every day he was alive. ...

Categories     Seafood Appetizers

Time 5m

Number Of Ingredients 9

1 1/2 c baby shrimp (salad shrimp)
1/3 c diced celery
1/4 c mayonnaise
2 hard boiled eggs diced
1/8 tsp pepper
paprika (enough to give some color and no more)
1/8 tsp salt....or to taste
pinch dill weed (reserve a little for plating too)
1/2 tsp lemon juice

Steps:

  • 1. Drain the shrimp from the juice and set aside in a bowl to mix with other ingredients.
  • 2. Add all ingredients, toss together well and set aside.
  • 3. Grab some good bread....I am using my own sourdough bread. Slice....toast the bread just slightly either in the oven or in the toaster. Cut into bite-sized pieces and top with shrimp salad. Garnish with a little dill weed for color and more flavor and serve.
