PANANG CHICKEN CURRY
Steps:
- In a heavy bottomed pot, heat the 3 tablespoons of the thick coconut cream to high for about 1 minute. When the cream starts to sizzle, stir in the curry paste into the cream like building a roux. Add the onion and half of the makrut lime leaf chiffonade. Stir-fry the paste until the paste starts to thicken, dry out, and become fragrant, about 1 minute. If the curry starts to sputter, add a small amount of coconut milk to keep the paste moving. Cook the paste until it has the consistency of peanut butter.
- Stir in the remaining coconut milk into the curry paste. Increase the heat to high until you reach a full rolling boil. Allow the curry to boil until it reduces by about 25% or coats the back of a wooden spoon, 10 to 15 minutes.
- Reduce the heat to a simmer. Add the chicken, tamarind paste, fish sauce and sugar. When the chicken is about halfway cooked, about 5 minutes, add the bell pepper and zucchini. Let simmer until the chicken is cooked through, about 5 minutes. Add the bamboo shoots and Thai basil leaves. Taste and adjust seasoning. Serve immediately over jasmine rice and garnish with a few ribbons of the remaining makrut lime leaf.
SHRIMP PANANG
Hollywood stars are notorious for keeping strict diets, so you'd think that cooking for celebrities would be a giant headache. But that's how chef Gary Arabia has built his whole career: He's been catering in Los Angeles for more than 30 years-awards shows, movie sets, you name it. The main request by Modern Family's Sofia Vergara and fiance Joe Manganiello for a recent party was just to keep the food "lean, mean and fresh," Gary says. This shrimp dish turned out to be Manganiello's favorite of the night; the chef used curry paste to amp up the flavor without adding extra fat. We asked him to share the recipe so you can make it for your own big night.

- Preheat a grill to medium high. Toss the shrimp with the olive oil and Thai seasoning in a bowl. Thread onto skewers and grill until marked and just cooked through, 1 to 2 minutes per side. Set aside.
- Heat the vegetable oil in a medium skillet over medium-high heat. Add the garlic, red onion and curry paste and cook, stirring, until the onion is just softened, about 1 minute. Add the coconut milk, fish sauce and chili powder; cook until reduced by half, about 3 minutes. Add the heavy cream and bring to a simmer. Cook, stirring constantly, until thickened, about 3 minutes.
- Divide the sauce among 4 plates. Arrange the shrimp on top and garnish with snow peas.
SHRIMP PANANG CURRY
Shrimp Panang Curry is one of my favorite spicy, creamy curry styles. If you can't find panang curry paste, this recipe includes a quick homemade version mixed with peanuts and lemongrass.

Steps:
- To make quick panang curry paste, in a mortar and pestle or mini food processor, combine red curry paste with peanuts and lemongrass. Combine until mixture is in a uniform paste. Use in panang curry recipes.
- To start curry, add olive oil to a large skillet or wok over medium-high heat. Add ginger, shallots, and garlic and cook for a few minutes until aromatics soften, but not brown.
- Stir in panag curry paste and cook for a minute or two.
- Pour in coconut milk, chicken stock, and fish sauce. Bring to a simmer and turn heat down to low.
- Add shrimp and simmer for about 5 minutes. Add snap peas with a minute left and poach them gently.
- Serve curry over rice garnished with chopped peanuts and cilantro.

THAI GREEN CURRY SHRIMP
Steps:
- In a wok or large saute pan, heat the oil over medium-high heat. Add the eggplant, onions and bell pepper and cook until softened, 3 to 5 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the curry paste, lime leaves, and fish sauce, and cook, stirring, for 15 seconds. Add the coconut milk and shrimp stock and bring to a boil. Lower the heat and simmer until thickened, 3 minutes. Add the shrimp and cook until pink, about 2 minutes. Stir in 1/4 cup of Thai basil and remove from heat.
- Season to taste with salt. Garnish with remaining 1/4 cup Thai basil. Serve with rice and lime wedges.

- For the Curry: makes 12 ounces-3 ounces per dish.
- In a small saucepan add all ingredients and bring to a boil. Slow to a simmer for 1 minute. Take off fire and let steep for 5 minutes, strain through a chinois or fine mesh strainer. Reserve warm.
- For the Batter:
- makes 1 3/4 cups batter.
- Place flour, corn starch, curry paste, fine chopped Kaffir lime leaves, salt and palm sugar in a food processor. Pulse until smooth and curry is incorporated. Transfer to a cold stainless steel bowl and add ginger ale one half at a time whisking vigorously to avoid lumps. Keep chilled.
- For the Shrimp and Eggplant:6 each shrimp and 7 to 8 pieces eggplant per serving.

- Butterfly shrimp and cut eggplant sticks, lightly dust in cornstarch, transfer to chilled batter. In a shallow fry pot, heat peanut oil to 350 degrees. Place shrimp and eggplant in oil and fry until crisp, approximately 2 minutes or until golden, transfer to paper towels to drain any excess oil.
- For the Assembly:.
- Heat sauce and mirror rectangular plate, shingle eggplant on top of sauce and top with shrimp. Garnish each plate with 2 pieces of cilantro sprigs and fine chiffonade of lime leaf.

PENANG PRAWN & PINEAPPLE CURRY

- Finely grate the coconut, then toast slowly in a wok, stirring until evenly dark brown (it will start to smell very strong, but it will work a treat). While it's still warm, pound to a paste with the sunflower oil using a pestle and mortar. Set aside.
- Finely grate or pound the ginger and garlic together using a pestle and mortar. Make a loose curry paste by adding 75ml water to the curry powder. Heat the oil in the wok until it's just starting to smoke, then throw in the curry leaves, cinnamon stick, star anise, cardamom pods and cloves and cook for 1 min until fragrant.
- Add the shallots and ginger and garlic paste, cook for around 7 mins until softened and starting to brown, then add the curry powder paste. This is the most important part of making the curry. Ideally, cook over a very low heat and wait until the oil separates and bubbles over the paste, around 10-12 mins. Scrape the bottom of the pan occasionally to remove the crust.
- When the oil has come to the top, add the tamarind paste, pineapple and sugar. Pour in the coconut milk. When the mixture starts boiling, add the prawns and return to the boil, then stir through the toasted coconut. Season the curry with salt, scatter over the coriander and serve with rice.
