A deceiving raspberry pepper jelly made from green tomatoes! We serve this with cream cheese for an appetizer, but it is also good over grilled fish or chicken.

5 cups finely chopped green tomatoes
4 cups white sugar
2 cups frozen raspberries
2 jalapeno peppers, finely chopped
1 (6 ounce) package raspberry-flavored gelatin mix (such as Jell-O®)

Steps:

  • Combine green tomatoes, sugar, raspberries, and jalapeno peppers together in a saucepan; cook and stir until sugar is dissolved and raspberries and tomatoes are broken down, about 15 minutes. Remove saucepan from heat and stir in gelatin mix until well blended.
  • Pour tomato-raspberry mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack tomato-raspberry mixture into hot, sterilized jars, filling to within 1/4-inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Number Of Ingredients 7

2 red peppers, seeded, finely chopped (about 1-1/2 cups)
2 green peppers, seeded, finely chopped (about 1-1/2 cups)
10 large jalapeño peppers, seeded, finely chopped (about 1 cup)
1 cup HEINZ Apple Cider Vinegar
1 pkg. SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
5 cups sugar, measured into separate bowl (See tip.)

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Place peppers in 6- or 8-qt. saucepot. Add vinegar. Stir in pectin. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place u

1 cup chopped red bell pepper
½ cup chopped jalapeno pepper
5 cups white sugar
1 ½ cups apple cider vinegar
1 (6 fluid ounce) container liquid pectin

Steps:

  • Remove stems, veins and most of the seeds of the bell and jalapeno peppers. Mince peppers in a food processor.
  • In a 5-quart pot over high heat, combine bell peppers, jalapenos, sugar and vinegar. Bring to a rolling boil; boil for 3 minutes. Remove from heat and cool for 5 minutes.
  • Stirring constantly, add the pectin and let mixture continue to cool for 2 minutes more. Now stir for 1 minute.
  • Pour into hot, sterilized jars and top with sterilized lids. Secure lids with bands and allow jars to cool slowly, creating a vacuum seal.

2 jalapeno peppers, seeded and chopped
3 medium green peppers, cut into 1-inch pieces, divided
1-1/2 cups white vinegar, divided
6-1/2 cups sugar
1/2 to 1 teaspoon cayenne pepper
2 pouches (3 ounces each) liquid fruit pectin
About 6 drops green food coloring, optional
Cream cheese and crackers, optional

Steps:

  • In a blender or food processor, place the jalapenos, half of the green peppers and 1/2 cup vinegar; cover and process until pureed. Transfer to a large Dutch oven. , Repeat with remaining green peppers and another 1/2 cup vinegar. Add the sugar, cayenne and remaining vinegar to pan. 1-1/2 cups fresh cilantro leaves
2 tablespoons olive oil
2 tablespoons grated Parmesan cheese
1/2 small onion, halved
1 jalapeno pepper, seeded and halved
1 tablespoon pine nuts, toasted
1 tablespoon lime juice
1 garlic clove, peeled
TOMATOES:
1 cup all-purpose flour
2 large eggs
1-3/4 cups panko bread crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
4 medium green tomatoes, cut into 1/4-inch slices
6 tablespoons olive oil
3/4 cup crumbled goat cheese

Steps:

  • For the pesto, place the first 8 ingredients in a food processor; cover and process until finely chopped. Set aside., Place flour and eggs in separate shallow bowls. In another shallow bowl, combine the bread crumbs, salt and pepper. Dip tomato slices in flour, eggs, then bread crumb mixture., In a large skillet, fry tomatoes in oil in batches for 2-3 minutes on each side or until golden brown. Drain on paper towels. Layer 12 tomato slices with 1 tablespoon pesto and 1 tablespoon goat cheese; top with remaining tomato slices. Serve warm.

This is one of those recipes that I've had for so long, I don't know where it came from. But I love this relish as a sidekick for fried catfish.

Number Of Ingredients 6

1 gallon green tomato
5 medium fresh jalapenos, sliced thin
1 lb yellow onion
2 cups white vinegar
1 1/2 cups granulated sugar
1/4 cup pickling salt

Steps:

  • Prepare pint pickling jars per manufacturers directions.
  • Coarsely chop tomatoes and onions in batches in a food processor and reserve them.
  • Combine vinegar, sugar and salt in a stock pot, and bring to a boil over high heat. Add all vegetables and boil the mixture vigorously for 2 to 3 minutes.
  • Spoon the relish into prepared, hot jars, leaving 1/2 inch of headspace.
  • (Make sure to get some jalapeno slices in each jar).
  • Process the jars in a water bath canner for 10 minutes.
  • Makes about 6 pints.

1 3/4 cups (425 mL) finely chopped fresh mint, divided
1 1/2 cups (375 mL) water
3 1/2 cups (875 mL) granulated sugar
3/4 cup (175 mL) cider vinegar
2 tbsp (25 mL) strained fresh lemon juice
2 jalapeño peppers, finely chopped
1 pouch liquid fruit pectin

Steps:

  • 1. Bring 1 1/2 cups (375 mL) mint and water to a boil in a small saucepan. Remove from heat, cover, and let stand for 30 minutes to steep. Strain through a lined sieve pressing with the back of a spoon to extract as much liquid as possible; discard mint.
  • 2. Combine mint liquid, sugar, vinegar, lemon juice, and peppers in a large stainless steel or enamel saucepan. Bring to a full boil over high heat and boil hard for 2 minutes, stirring constantly. Remove from heat; stir in pectin and remaining mint.
  • 3. Ladle into sterilized jars and process as directed for Shorter Time Processing Procedure .
  • Variation: Lemon Balm Jelly
  • Use lemon balm leaves in place of the mint and omit the jalapeño peppers.
