270g (9.5 oz) biscuits/graham crackers
100g (7 tablespoons) melted butter
2 1/3 cups (525g) cream cheese
1½ cups (187g) powdered sugar
1 cup (250g) peanut butter
1 teaspoon vanilla extract
1/2 cup (120 ml) heavy cream
2/3 cup (160 ml) heavy cream
125g (4.4 oz) dark chocolate

Steps:

  • 1. In a food processor, process biscuits until crumbs are formed. Add melted butter and process again until combined. press into bottom of 9-inch (23 cm) springform pan. Refrigerate while making the filling. 2. In a large mixing bowl beat cream cheese and powdered sugar. Beat until smooth and creamy. Add peanut butter, vanilla extract and beat again until smooth and creamy. Add the heavy cream and beat 2-3 minutes more until smooth. 3. Pour the cheesecake mixture into the springform pan. Refrigerate for at least 6 hours or overnight. You can also freeze the cake. 4. Prepare the ganache: in a small saucepan bring to simmer heavy cream, remove from heat and add chopped chocolate. Let stand 1 minute and stir until the chocolate has melted and the ganache is smooth. 5. Let cool slightly and pour over the cheesecake. You can pour straight into the springform pan or open it and then pour the ganache. 6. Refrigerate for at least 1 hour before serving.Notes: The cake doesn't contain gelatin, so it won't be very stable. 50g butter
175g pack peanut cookies
5 gelatine leaves
500g tub ricotta
175g smooth peanut butter
175g golden syrup
150ml milk
270ml pot double cream
2 tbsp soft brown sugar
1 bar peanut brittle, crushed

Steps:

  • Oil and line a 20cm round loose- bottomed cake tin with cling film, making it as smooth as possible. Melt the butter in a pan. Crush the biscuits by bashing them in a bag with a rolling pin, then stir them into the butter until very well coated. Press the mixture firmly into the base of the tin and chill.
  • Soak the gelatine in water while you make the filling. Tip the ricotta into a bowl, then beat in the peanut butter and syrup. Ricotta has a slightly grainy texture so blitz until smooth with a stick blender for a smoother texture if you prefer.
  • Take the soaked gelatine from the water and squeeze dry. Put it into a pan with the milk and heat very gently until the gelatine dissolves. Beat into the peanut mixture, then tip onto the biscuit base. Chill until set.
  • To freeze, leave in the tin and as soon as it is solid, cover the surface with cling film, then wrap the tin with cling film and foil.
  • To defrost, thaw in the fridge overnight.
  • To serve, carefully remove from the tin. Whisk the cream with the sugar until it holds its shape, then spread on top of the cheesecake and scatter with the peanut brittle.

1 cup chopped roasted peanuts

  • Combine crushed Oreo cookies and peanuts that have been ground in a food processor with the melted butter.
  • Pat the crust mixture onto bottom and sides of a 10-inch springform pan.
  • To Make The Filling:.
  • Beat cream cheese in bowl of electric mixer until smooth.
  • Add eggs, one at a time, beating well after each addition.

2 c chocolate graham cracker crumbs
1/2 c roasted unsalted peanuts, crushed
1/2 c unsalted butter, melted
4 Tbsp brown sugar, firmly packed
FOR THE FILLING
4 pkg cream cheese, room temperature, 8 oz each
1 1/2 c brown sugar, firmly packed
1/2 c creamy peanut butter
1 tsp vanilla extract

FOR THE TOPPING
1 bag(s) semi-sweet chocolate chips, 12 oz

Steps:

  • 1. Preheat oven to 325.
  • 2. For Crust: Mix chocolate graham cracker crumbs, chopped peanuts, melted butter, brown sugar and a pinch of salt in the bowl until well combined. Press mixture evenly into bottom of a medium springform pan.
  • 3. For Filling: Using electric mixer, beat cream cheese and brown sugar in large bowl until smooth. Add peanut butter and vanilla extract and beat just until blended. Add eggs 1 at a time, beating just until blended after each addition. Add whipping cream and beat until smooth.
  • 4. Stir in peanut butter cup pieces.
  • 5. Pour filling into crust.
  • 6. Bake until sides of cake are set, but center still moves slightly, about 55 minutes. Cool cake in pan.
  • 7. For Topping: Place all ingredients in microwavable bowl and heat at 50% power for 30 seconds.
  • 8. Stir. Continue to heat at 10 second intervals until chocolate is barely melted. Do not overheat.

4 large eggs

Steps:

  • Preheat oven to 350 degrees. Combine cream cheese and peanut butter in a large bowl. Beat the mixture in an electric mixer (using a wire whip) until smooth. Gradually add sugar and flour. Beat on medium speed until sugar and flour are incorporated well into cheese and peanut butter mixture. Scrape ingredients from side of bowl before adding eggs. Add eggs gradually and continue to beat on medium speed for two or three minutes until mixture is smooth. Mix in the vanilla extract. Be careful not to over-mix. Remove bowl from mixer. 30 regular Oreos
1/2 cup (1 stick; 115g) unsalted butter, melted
3 8-ounce bricks (24 oz. or 750g) full-fat block-style PHILADELPHIA Cream Cheese, softened to room temperature
1 cup (200g) granulated sugar
1/4 cup (60g) sour cream or plain yogurt, at room temperature
1 cup (250g) creamy peanut butter (not natural style)
1 teaspoon pure vanilla extract
1/8 teaspoon salt
3 large eggs, at room temperature
1/2 cup (1 stick; 115g) unsalted butter
1 heaping cup (around 200g) semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F (177°C). Line the bottom and sides of a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides to lift the finished bars out (makes cutting easier!). Set aside.
  • In a food processor or blender, pulse the Oreos (cookie AND cream filling) into a fine crumb. You should have about 3 cups (330g) of crumbs. Stir the cookie crumbs and melted butter together in a large bowl. Press tightly into the bottom of the lined baking pan. Pre-bake for 10 minutes. Remove from the oven and set aside. Leave oven on.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese and granulated sugar together on medium-high speed in a large bowl until the mixture is smooth and creamy, about 2 minutes. Add the sour cream and beat until fully combined. Then add the peanut butter, vanilla extract, and salt and beat until fully combined. On medium speed, add the eggs one at a time, beating after each addition until just blended. After the 3rd egg is incorporated into the batter, stop mixing. A few small lumps can remain. Whisk the filling a few times by hand to rid any large lumps at the bottom of the bowl.
  • Pour the cheesecake filling onto the crust. It's ok if the crust is still warm. Spread evenly on top with a rubber spatula or back of a spoon. (It will seem like a thick layer of cheesecake filling; that's ok.)
  • Bake for 35-38 minutes or until the cheesecake appears set on top and the edges are browned. The edges may slightly crack. (Mine do!) The bars will be puffy, but will sink slightly down as they cool. Place pan on a wire rack. Cool for 1 hour at room temperature, then chill in the refrigerator for at least 3-4 hours (and up to 1 day) before topping with chocolate. If you're in a rush, place in the freezer for 2 hours (or until chilled throughout.) If you plan to chill the bars for longer than a few hours, loosely cover with aluminum foil after 3-4 hours of chilling.
  • Cut the butter into Tablespoon-size pieces. Place into a heat-proof bowl. Pour chocolate chips on top. Place in the microwave and melt in 30-second increments until smooth, stopping and stirring after each. You can also melt together on the stove, stirring constantly until smooth. Let the mixture cool for 2-3 minutes, then pour and spread evenly over chilled cheesecake bars. The cheesecake bars usually have a lip around the border since the center slightly sinks down, so it's easy to spread the chocolate topping, stopping around the border/lip. If yours don't have a raised lip around the edges, don't worry and just spread the filling evenly all over the top.
  • Chill in the refrigerator for 45-60 minutes or in the freezer for 30 minutes until the chocolate topping has set. If chilling for longer than 1 hour, loosely cover with aluminum foil after 1 hour of chilling. Chocolate topping must be completely set and solid on top of the cheesecake bars before slicing.
  • To slice, lift the bars out of the pan as a whole using the parchment overhang on the sides. Cut into squares with a sharp knife. For extra neat squares, wipe the knife clean between each cut.
  • Cover and store leftover cheesecake bars in the refrigerator for up to 1 week.

2 cups Oreo cookie crumbs ((about 25 Oreos - filling included) )
6 TBS butter
24 oz cream cheese ((3 blocks, room temperature) )
1 cup white sugar
1 cup creamy peanut butter ((not natural))
1/2 cup sour cream
1 tsp vanilla extract
3 large eggs
1/2 cup heavy cream
8 oz chopped chocolate or chocolate chips ((about 1.5 cups))
chopped peanut butter cups

Steps:

  • Preheat the oven to 350 degrees.
  • Combine your Oreo crumbs and butter in a medium sized bowl till a nice wet crumb is formed.
  • Press the cookie crumbs into the bottom and slightly up the sides of a greased 9in springform pan.
  • Wrap foil around the bottom of the pan and up the sides (which will be used later to keep water out) -- I also learned that a slow cooker liner works great as an extra protection!
  • Bake the crust for 8 to 10 minutes until it is fragrant. Allow to cool for about 15 minutes while you make the filling.
  • Beat the cream cheese in a stand mixer until smooth.
  • Add in the sugar and beat for 2 to 3 minutes until super creamy.
  • Add in the peanut butter, sour cream, and vanilla extract until combined.
  • Fold in the eggs, one at a time, using a rubber spatula, mixing until just blended.
  • Pour the filling into the cooled pie crust.
  • Place the springform pan into a large roasted pan or any large deep pan. Fill the pan with 1 inch of hot water.
  • Place in the hot oven and bake for 65-75 minutes until the middle of the cheesecake is almost set, except about 1-2inches in the middle.
  • Turn the oven off and allow the cheesecake to cool in the oven for 1 hour.
  • Open the oven door part way and leave the cheesecake in there to cool for another hour.
  • Remove the cheesecake from the oven and allow to cool completely to room temperature.
  • Cover and place the cheesecake in the fridge to set for 4 hours, up to overnight.
  • Heat heavy cream in the microwave for about 1 minute.
  • Pour heavy cream over chocolate and let it sit for 2 to 3 minutes.
  • Whisk the hot cream and chocolate together until totally smooth.
  • Allow to cool for 10 to 15 minutes.
  • Pour chocolate ganache over the top of the cheesecake. Smooth to the edges (and slightly over if desired)
  • Spread chopped peanut butter cups over the top if desired.
  • Place in the fridge and allow chocolate to set completely, for about 2 hours.
  • Slice and serve.

1 ½ cups light brown sugar, lightly packed
1 cup creamy peanut butter
1 cup heavy cream, divided
1 teaspoon vanilla extract
¼ teaspoon kosher salt
24 chocolate peanut butter cups, divided
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325°F (160°C).
  • Add the sandwich cookies in a food processor and process into fine crumbs. Pour in the melted butter and pulse several times, until the crumbs are moistened.
  • Grease a 10-inch springform pan with nonstick spray. Add the cookie crumbs, pressing evenly into the bottom and halfway up the sides of the pan.

¼ cup (57.5 g) sour cream
1¼ cups (297.5 g) heavy cream, (cold)

Steps:

  • Preheat oven to 350°F.
  • In a mixing bowl, stir together the peanut butter, sugar, and egg until combined.
  • Press the cookie batter into the bottom and halfway up the sides of a 9-inch springform pan.
  • Bake for 16-18 minutes or until slightly crisp and no longer shiny. Allow the crust to cool completely before continuing with the recipe.
  • Use an electric mixer or stand mixer fitted with the whisk attachment to mix cream cheese and sugar until smooth. Scrape down the sides of the bowl.

1/2 c. cocktail peanuts
30 chocolate wafer cookies
2 tbsp. light brown sugar
4 tbsp. unsalted butter, melted
4 8 oz. blocks cream cheese, at room temperature
1/2 c. sour cream, at room temperature
1 c. creamy peanut butter
1 c. granulated sugar
1/4 tsp. salt
4 large eggs, at room temperature
2/3 c. heavy whipping cream
1/2 c. semi-sweet chocolate chips
1/3 c. heavy whipping cream
Cocktail peanuts, chopped peanut butter cups and flaked salt, to garnish (optional)

Steps:

  • For the crust: Preheat the oven to 350°F. Tightly wrap the bottom and up the sides of a 9-inch springform pan with foil.
  • Place the peanuts in the bowl of a food processor. Pulse until roughly chopped. Add the wafer cookies and light brown sugar. Pulse until very finely ground. Add the butter and pulse until the mixture resembles wet sand.
  • Transfer the mixture to the springform pan. Using the bottom of a glass, press the crust into the bottom and about 1-inch up the side of the pan. Place the springform pan inside of a roasting pan. Bake for 10 minutes. Remove and let cool while making the filling. Reduce the oven temperature to 325°F.
  • For the filling: In the bowl of a stand mixer fitted with a paddle attachment, beat the cream cheese and sour cream on medium-low speed until totally smooth, about 3 minutes. Add the peanut butter, sugar, and salt. Beat on medium-low speed until completely combined. With the mixer running, add the eggs, one at a time until each is fully incorporated. Scrape down the sides of the bowl in between eggs. Mix in the whipping cream until combined. Pour the batter into the crust. (The batter will almost fill the pan.) Gently tap or jiggle the pan to level the batter.
  • Boil 8 cups of water. Place the roasting pan with the cheese cake in the oven. Very carefully pour the water into the roasting pan until about 1 inch deep.
  • Bake for 75 to 80 minutes or until the filling is puffed and the center slightly wobbles when the pan is gently shaken. Add more hot water to the pan during baking if needed. Turn off the oven, crack the door a few inches, and let cool in the oven for 1 hour. Remove and finish cooling to room temperature. Remove the cheesecake from the water bath and remove the foil from the pan.
  • Chill the cooled cheesecake for at least 6 hours or overnight. When ready to serve, run a thin knife or offset spatula around the sides of the cheesecake to release it from the pan. Release and remove the side of the springform pan and transfer to a serving plate.
  • For the topping: Place the chocolate chips in a small heat-proof bowl. Microwave the cream until very hot and just starting to bubble, about 1 minute. Pour cream over the chocolate and let stand for 10 minutes. Stir until the chocolate is fully melted.
  • Pour the ganache over the top of the chilled cheesecake and spread to the edges to let it drip down. Garnish with peanuts, salt, and peanut butter cups, if desired. Refrigerate until ready to serve.

½ cup unsalted butter, melted
4 (8 ounce) packages cream cheese, softened
5 large eggs, at room temperature
1 ½ cups dark brown sugar
1 cup smooth peanut butter
½ cup heavy whipping cream
1 teaspoon vanilla extract
1 (8 ounce) package miniature chocolate-covered peanut butter cups (such as Reese's®), unwrapped
1 (8 ounce) package semisweet chocolate chips
½ cup heavy whipping cream

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C). Line the bottom of a 10-inch springform pan with parchment paper. Wrap the outside bottom of the pan with aluminum foil; this will prevent water from seeping in during baking.
  • Prepare crust: Grind cookie thins in a food processor into a fine texture. Pour melted butter in slowly and pulse until combined. Press crumb mixture into the bottom and halfway up the sides of the prepared pan.
  • Prepare filling: Beat cream cheese in a large bowl until smooth. Add eggs, one at a time, beating well and scraping the sides of the bowl after each addition. Beat in brown sugar, peanut butter, whipping cream, and vanilla extract until smooth, scraping the sides as needed.
  • Pour 1/2 of the filling into the prepared pan and smooth it out with a spatula. Add mini peanut butter cups in an even layer on top, then pour remaining filling over, smoothing with a spatula. Place pan in a large baking pan and fill with 1 inch hot water.
  • Set baking pan in the middle of the preheated oven and bake until edges are puffed and surface of cheesecake is firm except for a small spot in the center that will jiggle when the pan is gently shaken, about 1 1/2 hours. Run the tip of a table knife around the edges of the pan, set the pan on a wire rack, and allow the cheesecake to cool at room temperature, about 1 hour.
  • While the cheesecake is cooling, prepare ganache: Place chocolate chips in a bowl. Heat whipping cream in a small saucepan until simmering, then pour over chocolate chips. Mix until chocolate has melted and mixture is smooth. Spread ganache on top of the cheesecake.
  • Place in the refrigerator to chill for at least 2 hours before serving.
