Steps:
- In a large resealable plastic bag, combine the first eight ingredients. Add shrimp; seal bag and turn to coat. Refrigerate 2 hours., Drain shrimp, discarding marinade. On each of 30 metal or soaked wooden appetizer skewers, thread one shrimp, one mango cube and one pineapple cube. Heat a grill pan over medium heat. In batches, cook kabobs 2-3 minutes on each side or until shrimp turn pink.

- Prepare barbecue (medium-high heat). Mix first 4 ingredients in large bowl. Add shrimp, bell peppers and mangoes; toss to coat. Alternate bell pepper, mango and 3 colossal shrimp on each of 6 skewers, or alternate bell pepper, mango and 3 jumbo shrimp on each of 12 skewers. (Can be prepared 4 hours ahead. Cover and chill.)
- Grill shrimp until cooked through, brushing with glaze during last 2 minutes, cooking colossal shrimp about 4 minutes per side and jumbo shrimp about 3 minutes per side.

Steps:
- Soak bamboo skewers in water for 15 minutes before using.
- Alternately, skewer shrimp, mango and onion pieces.
- Place in a dish large enough for skewers in one layer.
- Sprinkle garlic, cilantro, red pepper flakes and lime juice over all.
- Sprinkle with salt and pepper.
- Cover and refrigerate for 15 minutes, turning after 7 or 8 minutes.
- Prepare grill.
- Spray or lightly brush olive oil onto kebabs.
- Grill for 3 to 4 minutes per side or until shrimp is pink and opaque.
- Enjoy!

- Heat barbecue to high. In a bowl, combine the shrimp and barbecue sauce, turning to coat evenly. Build skewers, alternating shrimp, onion and mango. Finish each skewer with a slice of lime. Lightly brush each skewer with canola oil and season with pepper.
- Grill for 2-3 minutes per side, until the shrimp just turns opaque. Remove from the heat, Sprinkle with the green onion and cilantro to serve.

SHRIMP WITH MANGO SAUCE
Steps:
- Heat 2 tsp oil in a 3-quart saucepan over medium-high heat. Cook onion, garlic, ginger, 1/4 tsp salt, allspice, cumin and cinnamon about 3 minutes. Add mango, vinegar, lime juice and sugar and gently boil, stirring occasionally, until sauce is thick; refrigerate in a bowl. Toss shrimp with red pepper, garlic powder and remaining 1/2 tsp salt. Heat remaining 2 tsp oil in a large nonstick skillet over medium-high heat. Cook shrimp until no longer translucent, about 2 minutes on each side. Let cool; serve with sauce.
MANGO SHRIMP
This recipe is based on one by Ken Hom. We like it for it's refreshing taste. Also very easy to put together and quick to cook. Don't leave out the sesame oil, I think it is integral to the dish. Preparation time includes refrigerator resting time for shrimp.

- In a bowl large enough to hold the shrimp, combine the egg white, cornstarch, 1/2 tsp salt, 1 tsp sesame oil, and white pepper.
- Pat the shrimps dry, and mix them well with this marinade, making sure all are well coated.
- Leave in the refrigerator for 20 minutes.
- Heat a wok or large frying pan until very hot.
- Add 2 TBS peanut oil.
- When the oil is very hot, remove the wok from the heat and add the prawns.
- Stir vigorously to prevent them sticking, return to heat and cook until they turn white, about 2 minutes depending upon the size of your shrimp.
- Remove the shrimp, and discard the oil.
- Wipe wok with paper toweling, removing all residues.
- Return the wok to the heat, again heating until very hot.
- Add 1 1/2 TBS peanut oil, and when very hot, add the ginger and garlic.
- Stir fry for 10 seconds.
- Return the shrimp to the wok and add the rice wine or sherry, and 1/2 tsp salt.
- Stir-fry for one minute.
- Add the mango cubes and stir gently for 1 minute to warm them.
- Stir in 2 tsp sesame oil.
- Serve with rice, garnished with chopped scallions.
SHRIMP, MANGO & ONION KABOBS
It's summer time, hot and humid. Barbecue weather is here and we are set to have great out door meals. In this dish I like to use an orange and habanero bbq sauce but any kind of bbq sauce will work, use your favorite. This dish is quick and easy to make and always gets great reviews from family and friends. Served with steamed rice and a fresh berry salad or watermelon slices for a nice light meal.

Steps:
- Put bbq on high.
- In a bowl combine the shrimp and bbq sauce, coat evenly.
- Build the skewers with the shrimp, onion and mango alternating the ingredients as you go, topping the skewers with the lime wedge.
- Lightly brush the skewer with the oil and season with the red pepper flakes.
- Grill the skewers for 2 - 3 minutes per side, your preference until shrimp are opaque.
- Remove from heat and garnish with the green onions and cilantro to serve.
