Number Of Ingredients 13

1 3-inch block tamarind with seeds,* cut into 4 pieces
12 uncooked large shrimp
1/3 cup chopped shallots
4 garlic cloves, minced
1/4 cup chicken broth or water
2 1/2 tablespoons fish sauce (nam pla or nuoc nam)*
2 tablespoons Chinese rice wine or dry Sherry
1 1/2 tablespoons (packed) light brown sugar
3 tablespoons vegetable oil
1/2 small onion, cut into thin wedges
2 green onions, cut into 2-inch lengths
1 jalapeño chile, cut into thin rings
Chopped fresh cilantro

Steps:

  • Place tamarind in metal bowl; add enough boiling water to cover. Let stand 15 minutes to soften. Drain. Press pulp through sieve, reserving 3 tablespoons strained pulp.
  • Using scissors, cut shell of each shrimp all the way to tail end, exposing vein. Remove vein. Loosen shrimp shells but do not remove.
  • Mix shallots and garlic in small bowl; set aside 1 tablespoon shallot mixture. Tuck remaining shallot mixture under shrimp shells.
  • Mix 3 tablespoons tamarind, broth, fish sauce, wine, and sugar in small bowl. Heat oil in heavy large skillet over high heat. Add reserved 1 tablespoon shallot mixture and onion wedges and sauté 1 minute. Add shrimp and sauté 1 minute. Add tamarind mixture and sauté until shrimp are opaque in center and sauce coats shrimp thickly, about 3 minutes longer. Mix in green onions and chile. Transfer to platter. Sprinkle with cilantro and serve.

24 jumbo shrimp, shelled and deveined
8 wooden skewers, soaked in water 20 minutes
4 cloves garlic, finely chopped
1/4 cup tamarind paste (found in Asian markets)
1 tablespoon canola oil
1 tablespoon fish sauce
1-2 tablespoons red pepper flakes
1 tablespoon sugar

Steps:

  • Heat grill on high. Thread 3 shrimp on each skewer; season with salt and pepper. Dipping sauce: Mix remaining ingredients in a bowl. Grill shrimp until cooked through, about 3 minutes per side. Serve with dipping sauce on the side.

1 1/2 lb jumbo (8 to 12 per lb) shrimp
3 teaspoons sea salt dissolved in 11/2 cups water
For tamarind sauce
1 tablespoon tamarind from a pliable block
1/3 cup water
1 tablespoon peanut oil
1 tablespoon chopped cleaned fresh cilantro roots and/or stems, pounded to a paste
1 tablespoon minced garlic
1 tablespoon Sriracha or other Asian hot chile sauce
1 1/2 tablespoons palm sugar, or to taste
1 tablespoon Asian fish sauce (preferably Thai naam pla), or to taste
Garnish: 2 fresh serrano or jalapeño chiles, seeded, halved lengthwise, and finely julienned crosswise; and fresh cilantro sprigs

Steps:

  • Prepare grill for cooking.
  • Soak shrimp (still in shells) in salt water 5 minutes, then rinse well in a colander.
  • Make sauce:
  • Place tamarind in a bowl with water and rub with your fingers to dissolve pulp. Pour through a sieve into a bowl, pressing hard on solids, and discard solids.
  • Heat oil in a small heavy saucepan over moderate heat until hot but not smoking, then cook cilantro paste and garlic, stirring, until fragrant. Stir in hot sauce, 3 tablespoons tamarind juice, palm sugar, and fish sauce. Simmer until thickened to consistency of light syrup, about 3 minutes.
  • Grill shrimp:
  • Snip shells of shrimp with scissors down center of back, from wide end to second-to-last tail section. Butterfly shrimp in their shells, making a deep incision along length of back where shells are cut, and devein.
  • Grill shrimp on their sides on an oiled rack set 5 to 6 inches over glowing coals until shells are pink and slightly charred and shrimp are just cooked through, 3 to 4 minutes on each side. (Alternatively, grill shrimp in a hot well-seasoned ridged grill pan over moderate heat.)
  • Spoon tamarind sauce over shrimp (still in shells) in a serving dish.

1 large shallot, thinly sliced and separated into rings
1/4 cup tamarind pulp (from a pliable block)
1/2 cup boiling-hot water
2 tablespoons sugar
1 tablespoon soy sauce
1 tablespoon Asian fish sauce
3 tablespoons fresh lime juice
2 firm-ripe California avocados
1 tablespoon minced peeled fresh ginger
1 garlic clove, minced
2 (1 1/2- to 2-inch-long) fresh Thai chiles or 1 serrano, stemmed and minced (including seeds)
1/4 teaspoon salt
1 lb large shrimp in shell (21 to 25 per lb), peeled, leaving tail and first segment of shell intact, and deveined
1/3 cup roasted salted peanuts, chopped
Accompaniment: jasmine rice
Garnish: fresh cilantro sprigs

Steps:

  • Fry shallot and make tamarind sauce:
  • Heat oil in a 1-quart heavy saucepan over moderate heat until hot but not smoking, then fry shallot, stirring, until golden brown, about 2 minutes. Transfer with a slotted spoon to paper towels to drain (shallots will crisp as they cool). Reserve oil.
  • Soak tamarind pulp in boiling-hot water in a small bowl until softened, about 5 minutes. Force pulp through a sieve into a bowl, discarding solids. Add sugar, soy sauce, fish sauce, and 1 1/2 tablespoons lime juice and stir until sugar is dissolved.
  • Cut avocados and cook shrimp:
  • Halve, pit, and peel avocados. Cut into 1 1/2-inch chunks and toss with remaining 1 1/2 tablespoons lime juice in a bowl.
  • Transfer reserved oil to a 12-inch heavy skillet and heat over moderately high heat until hot but not smoking, then sauté ginger, garlic, chiles, and salt, stirring constantly, until fragrant, about 30 seconds. Add shrimp and sauté, turning over once, 2 minutes total. Stir in tamarind mixture and simmer until shrimp are just cooked through, about 2 minutes more.
  • Spoon shrimp and avocado over rice, then sprinkle with peanuts and fried shallot.

Few people I know have gone food hunting in Cambodia, so I was curious when Deb Winson, a New York-based food stylist, came back with an ecstatic report. ''Everything was so fresh and beautiful, and everything was so simple,'' she said. When I asked her to describe her favorite dish, she told me about a great preparation for shrimp cooked in lime. The ingredients were much as I expected: limes, sugar, salt, chiles and garlic, all common in Southeast Asian cooking. But the technique sounded unusual. The shrimp were not stir-fried, as you might expect, but instead were simmered in a very pungent sauce so that they took on strong flavor and still stayed juicy. This is my version.

About 1/2 cup lime juice (4 to 6 limes)
1/4 cup sugar
1 1/2 teaspoons salt, more to taste
2 tablespoons neutral oil, like canola or grape seed
1 teaspoon minced garlic
1/2 teaspoon crushed red chile flakes, or to taste
1 1/2 pounds peeled shrimp, or 3 pounds head-on shrimp, left unpeeled
Minced cilantro, for garnish

Steps:

  • In a small bowl, combine the lime juice, sugar and salt. Place oil in a 10- or 12-inch skillet, and turn the heat to high. A minute later, add the garlic and chile flakes and cook the garlic until it just begins to brown. Immediately add the lime juice mixture all at once, and cook until it reduces by half, or even more, 3 to 5 minutes. There should be only about 1/4 cup of liquid in the skillet, and it should be syrupy.
  • Add the shrimp, and cook over high heat. The shrimp will give off liquid of their own and begin to turn pink almost immediately. After about 2 minutes, stir contents of pan. Continue cooking, stirring occasionally until all the shrimp are pink, about 4 minutes total. Taste, adjust seasoning, garnish with cilantro and serve with rice.

1 onion, sliced very fine
2 red chilies, seeded and sliced very fine
20 green king prawns, peeled and deveined with tail intact, can leave head on to if you wish (shrimp)
2 tablespoons finely chopped garlic
1/4 cup tamarind juice
2 tablespoons palm sugar
2 tablespoons fish sauce
2 spring onions, sliced (green onion)
fresh coriander leaves, to garnish

Steps:

  • Heat oil in wok until smoking then add onion and chili and stir fry for 30 seconds.
  • Add prawns and garlic, stir fry until prawns are just starting to colour, around 2 minutes.
  • Add tamarind water, palm sugar and fish sauce and stir fry until the prawns are cooked and the sauce has slightly thickened, around 3 minutes Transfer to a serving plate and garnish with the spring onion and coriander leaves.
  • Serve with Jasmine rice.
