GRILLED SHRIMP SALSA

1 pound jumbo shrimp (21/25 count), peeled and deveined
1 ear corn, husked
1 small jalapeno pepper
2 scallions
1/2 red onion, cut into 4 wedges, root intact
Canola oil
Kosher salt
1 Persian cucumber, finely chopped
1 teaspoon lime zest (1 lime)
1/4 cup lime juice (4 to 5 limes), plus more to taste
1/4 teaspoon smoked paprika
1/4 teaspoon ground coriander
1/8 teaspoon ground cumin
1/4 cup fresh cilantro leaves, roughly chopped
1 small avocado, cut into 1/4-inch pieces
Tortilla chips, for serving

Steps:

  • Preheat a grill pan over medium-high heat.
  • Lightly brush the shrimp, corn, jalapeno, scallions and onion wedges with canola oil, sprinkle with salt and place on the grill. Cook the scallions and shrimp until charred and the shrimp are cooked through, about 2 minutes per side. Cook the jalapeno and red onion until charred and softened, 3 to 4 minutes. Cook the corn, rotating every 2 minutes, until charred and the kernels have turned bright yellow, 6 to 8 minutes. Remove the vegetables and shrimp to a baking sheet and let cool.
  • Cut the grilled shrimp into 1/4-inch pieces and place in a medium bowl. Seed and finely chop the jalapeno; add to the bowl. Finely shop the scallions and red onion and cut the kernels from the corn; add all three to the bowl. Stir in the cucumber, lime zest and juice, paprika, coriander and cumin. Refrigerate for 30 minutes to allow the flavors to meld.
  • Before serving, fold in the cilantro and avocado. Serve with tortilla chips.

3/4 cup chopped seeded tomatoes
1/2 cup black beans, rinsed and drained
1/4 cup minced fresh cilantro
3 garlic cloves, minced
1/4 teaspoon pepper
1/2 cup guacamole
3 tablespoons reduced-fat ranch salad dressing
16 uncooked large shrimp, peeled and deveined
3 teaspoons chili powder
1/2 teaspoon Cajun seasoning
8 taco shells, warmed

Steps:

  • In a small bowl, combine the first six ingredients. In another small bowl, combine guacamole and salad dressing., In a large bowl, toss shrimp with chili powder and Cajun seasoning. In a large nonstick skillet coated with cooking spray, saute shrimp until pink, about 5 minutes., Place two shrimp in each taco shell. Top with 1/3 cup corn salsa; drizzle with 1 tablespoon guacamole mixture.

2 ears fresh corn, husked
1 tomato, cored, seeded, chopped
1 cup drained canned black beans
1/2 small red onion chopped
1/2 bunch fresh cilantro, leaves chopped
1/2 fresh lime, juiced
2 jalapeno chilies, seeded and minced
1/2 teaspoon ground toasted cumin seeds
1/4 cup dry white wine
2 tablespoons olive oil
1 1/2 pounds large uncooked shrimp, peeled, deveined

Steps:

  • Soak bamboo skewers in water for 30 minutes. Prepare barbecue (medium high heat). Grill corn until just tender and brown in spots, turning frequently, about 10 minutes. Cut corn from cob. Transfer corn kernels to medium bowl. Add tomato, black beans, onion, cilantro, lime juice, 1 jalapeno and 1/4 teaspoon ground cumin and stir to blend. Combine wine, olive oil, remaining jalapeno and 1/4 teaspoon ground cumin in a large bowl. Add shrimp and toss to coat. Cover and refrigerate 1 to 2 hours, stirring occasionally.
  • Remove shrimp from marinade; discard marinade. Thread shrimp on bamboo skewers. Sprinkle with salt and pepper. Grill until just cooked through, about 2 minutes per side. Spoon salsa on platter. Top with shrimp skewers.

  • Shrimp Corn Cakes:Take half of the corn and process in food processor until smooth.
  • In a medium bowl combine smooth corn, buttermilk, eggs, melted butter and whole corn kernels.
  • In another medium bowl combine flour, corn meal, baking soda, salt and sugar.
  • Stir in corn mixture.
  • Add chopped parsley, green onions and chopped shrimp.
  • Set aside batter until ready to cook.
  • In a medium skillet heat vegetable oil over medium heat.
  • Drop spoonfuls of the corn/shrimp mixture into hot oil.
  • Fry on each side for about 4 minutes or until golden brown.
  • Remove and cool on wire rack.
  • Citrus Chile Salsa:Combine all citrus chile salsa ingredients in medium bowl.
  • Puree half the mixture and return to bowl. Mix.

1 lb large shrimp, peeled and deveined
8 taco shells, crunchy
1 head lettuce, finely shredded
2 tablespoons extra virgin olive oil
1 tablespoon lime juice
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup plain nonfat yogurt
1 1/2 tablespoons lime zest
1 tablespoon extra virgin olive oil
2 tablespoons cilantro, chopped
1 teaspoon pepper
1 cup corn
1 cup tomatoes, diced
1/2 cup avocado, diced
2 scallions, chopped
2 tablespoons cilantro, chopped
1 jalapeno, seeded and diced
1/2 tablespoon extra virgin olive oil
1 tablespoon lime juice
1/4 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Combine all the ingredients for the yogurt in a bowl, cover and chill.
  • Combine all marinade ingredients in a zip lock bag, add shrimp and let set for 15-20 minutes at room temperature.
  • Combine all ingredients for salsa in a bowl and set aside.
  • Remove shrimp from marinade; discard marinade.
  • Cook shrimp in a large skillet over med heat 2 minutes per side.
  • Remove from heat and cool.
  • When shrimp are room temp slice in halve lengthwise and set aside.
  • Divide shrimp evely among taco shells.
  • Top each with a handful of lettuce, 2 tbls corn salsa and 1 tbls. cilantro yogurt.
  • Serve right away.

1/4 cup fresh lime juice
2 teaspoons olive oil
1/2 teaspoon garlic powder
6 -8 corn tortillas
1 large red onion, chopped
1 cup frozen corn kernels, thawed
1/2 cucumber, peeled,seeded,chopped
1/2 bunch cilantro, finely chopped
1/2 cup red bell pepper, chopped
2 jalapeno chiles, finely chopped

Steps:

This recipe evolved from my basic corn and tomato salsa recipe. I added shrimp and Louisiana seafood seasoning to it, and...WOW! Is it ever GOOD! I guarantee it will disappear in no time!

1 Tbsp oil (canola, veg etc...)
1 1/2 c fresh corn kernels (about 5 - 6 ears)
1 c chopped sweet onion
1/2 c chopped red, yellow or orange bell pepper
1 jalapeno pepper, finely minced
3/4 tsp garlic, finely minced
1/4 c lime juice
1 c peeled chopped tomato (about 2 medium large)
1 tsp louisiana brand seafood seasoning (or your fave seafood seasoning blend)
1/2 tsp ground cumin
1/2 tsp freshly ground black pepper
1/2 tsp salt
1 c tiny cooked & peeled salad shrimp, thawed & drained
1/2 to 1 Tbsp fresh minced parsley, cilantro or basil (or a combo)

Steps:

  • 1. Gather and prep ingredients.
  • 2. Pour 1 tablespoon oil into a large skillet; place over medium/medium-high heat.
  • 3. Add corn, onions, bell pepper and jalapeno; stir and cook for about 5 minutes, until veggies have softened.
  • 4. Add garlic; stir and cook for 30 seconds, then add lime juice, tomatoes, cumin, black pepper and salt; stir and cook until heated through.
  • 5. Remove from heat; add shrimp: stir until evenly distributed throughout.
  • 6. Stir in, or sprinkle on, parsley, basil or cilantro.
  • 7. Serve while warm, or chill if desired. Cover and store in refrigerator for up to 1 week.

CHILE-RUBBED SHRIMP WITH AVOCADO CORN COCKTAIL



Chile-Rubbed Shrimp with Avocado Corn Cocktail image

16 jumbo shrimp (about 1 1/2 pounds), peeled and deveined
1 tablespoon ancho chile powder
1 1/2 teaspoons garlic salt
1 teaspoon ground coriander
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
Avocado and Corn Salsa

Steps:

  • 1. Rinse the shrimp under cold running water, then blot them dry with paper towels.
  • 2. Place the chile powder, garlic salt, coriander, oregano, cumin, and pepper in a mixing bowl and whisk to mix. Add the shrimp and toss to coat. Stir in the olive oil. Let the shrimp marinate in the refrigerator, covered, for 30 minutes to 1 hour.
  • 3. Cook the shrimp, following the instructions below for any of the grills, until just cooked through. When done the shrimp will turn pinkish white and will feel firm to the touch.
  • 4. Spoon the Avocado and Corn Salsa into 4 large martini glasses or serving bowls. Drape 4 of the hot shrimp over the edge of each glass or bowl and serve at once. Or for a cold shrimp cocktail, let the cooked shrimp cool to room temperature. Refrigerate the shrimp, covered, until they are chilled before serving them with the salsa. The cooked shrimp can be refrigerated for up to 2 days.
  • CONTACT GRILL:
  • Preheat the grill; if your contact grill has a temperature control, preheat the grill to high. Place the drip pan under the front of the grill. When ready to cook, lightly oil the grill surface. Place the marinated shrimp on the hot grill, then close the lid. The shrimp will be done after cooking 1 to 3 minutes.
  • GRILL PAN:
  • Place the grill pan on the stove and preheat it to high over medium heat. When the grill pan is hot a drop of water will skitter in the pan. When ready to cook, lightly oil the ridges of the grill pan. Place the marinated shrimp in the hot grill pan. They will be done after cooking 1 to 3 minutes per side.
  • BUILT-IN GRILL:
  • Preheat the grill to high, then, if it does not have a nonstick surface, brush and oil the grill grate. Place the marinated shrimp on the hot grate. They will be done after cooking 1 to 3 minutes per side.
  • FREESTANDING GRILL:
  • Preheat the grill to high; there's no need to oil the grate. Place the marinated shrimp on the hot grill. They will be done after cooking 2 to 4 minutes per side.
  • FIREPLACE GRILL:
  • Rake red hot embers under the gridiron and preheat it for 3 to 5 minutes; you want a hot, 2 to 3 Mississippi fire. When ready to cook, brush and oil the gridiron. Place the marinated shrimp on the hot grate. They will be done after cooking 1 to 3 minutes per side.

I found this recipe in the January 2010 Redbook magazine. I have made this recipe before and my family loves it. It has just the right amount of kick and it is very light too. Even my 1 year old daughter enjoys eating these. Hope you enjoy!

1 cup fresh corn kernels (or frozen)
1 (14 1/2 ounce) can diced tomatoes with chipotle peppers (fire roasted)
1/3 cup finely diced red onion
1/4 cup chopped fresh cilantro
1 1/2 tablespoons fresh lime juice
8 corn tortillas
1 tablespoon olive oil
1/2 teaspoon minced garlic clove
1/2 teaspoon ground cumin
1 lb medium shrimp, peeled, deveined
salt and pepper
1 tablespoon fresh lime juice
1 small Hass avocado, peeled, pitted and finely diced

Steps:

  • Salsa: Heat corn in a dry large nonstick skillet over high heat and cook, tossing corn frequently, 4 minutes or until lightly charred in spots. Add tomatoes and onions; cook 2 minutes. Transfer to medium bowl. Stir in cilantro and lime juice. Keep salsa warm.
  • Tacos: Stack tortillas and warp in damp paper towels. Place in microwave.
  • Heat oil, garlic, and cumin in a large nonstick skillet over medium heat. Add shrimp, salt, pepper and cook 3 to 4 minutes, tossing several times until shrimp are firm and cooked through; remove from heat and toss with lime juice.
  • While shrimp cook, steam tortillas in microwave on high 1 to 2 minutes or until softened. Fill each tortilla with 6 or 7 shrimp and top with warm corn salsa and diced avocados.
  • Note: If you have difficulty finding the can of fire roasted tomatoes, I have substituted that for a can of regular tomatoes and added seeded, diced jalapeños and a small can of chipotle peppers.

  • In a large bowl, toss corn with onion, jalapeño, and bell pepper with 1 tablespoon olive oil. Season with ½ teaspoon salt and ½ teaspoon pepper, then pour into a skillet on medium-high heat, spreading evenly around pan. Roast for 5 minutes, or until corn begins to brown slightly, then stir and continue cooking for 3-5 minutes, or until corn is golden roasted. Remove from heat and add ¼ cup chopped cilantro, juice from ½ lime, and salt and pepper (to taste).
  • While corn roasts, preheat oven to 400°F and line a baking sheet with aluminum foil. Mix ½ teaspoon salt, ½ teaspoon pepper, chili powder, cumin, and garlic powder together in a small bowl.
  • Pour 1 tablespoon olive oil over shrimp and toss. Cover shrimp with seasoning mixture and toss to thoroughly combine. Spread shrimp evenly around baking sheet.
  • Roast for 5-7 minutes, slightly longer if for larger shrimp. Remove from oven and toss with corn salsa, juice from ½ lime and reserved cilantro.
