BANANA AND CAROB RUFFLES DOG TREAT
When Three Dog Bakery opened in Lee's Summit, MO, last year, it became the 47th location - a dream that seemed impossible 31 years ago, when the original Kansas City shop was the only canine bakery in the country. Far ahead of the trend, founders Mark Beckloff and Dan Dye started making dog food to help their rescue mutt, Gracie, who had stomach sensitivities. These doggie truffles are a longtime favorite.

- Make the cake base: Preheat the oven to 350˚. Coat a nonstick 8-inch round cake pan with cooking spray. Combine the water, diced and mashed bananas, 1/8 teaspoon vanilla, the egg and honey in a large bowl and whisk well. Whisk the whole-wheat flour with the baking powder in a separate bowl. Add to the banana mixture and mix well. Spread in the prepared pan.
- Bake until a toothpick inserted in the center of the cake comes out dry, 1 hour to 1 hour 15 minutes. Invert the cake onto a rack; let cool completely.
- Roughly break up the cooled cake and transfer to a food processor. Process into coarse crumbs.
- Make the frosting: Combine the cream cheese, carob powder and remaining 1 tablespoon vanilla in a large bowl. Beat with a mixer on medium-high speed until smooth, 1 to 2 minutes.
- Add the carob frosting to the crumb mixture and mix with a rubber spatula. Scoop into balls with a small dough scoop. Roll in carob powder, chopped peanuts or coconut. Refrigerate until ready to serve, or up to 5 days.

- Preheat oven to 350 degrees. Mix wet ingredients thoroughly. Combine dry ingredients in separate bowl, mix thoroughly. Add wet ingredients to dry and mix well. Pour into 8-inch non-stick cake pan sprayed with non-stick cooking spray. Bake for 1 hour to 1 hour and 15 minutes or until toothpick inserted in center comes out dry.

- You can pipe different designs on top by using the carob frosting forcolor contrast. To make carob frosting, replace cinnamon with the same amount of carob powder.

15 LAYER RUSSIAN HONEY CAKE
I recently tried a Russian Honey Cake, which was one of the yummiest cakes I have ever tasted. It was so nice I decided to find the recipe and learn to make it myself. It took me about 6 months searching the net (on websites mostly in Russian, which I definitely don't read or speak) translating from Russian using an online translator, and trying different recipes before I found this recipe, which has produced a result at least as nice as the one I tried. I baked 2 pieces at a time on baking paper on an oven tray. Each batch took just long enough to cook, that I had two more ready to swap when the first ones were done. The cream filling (and coating) is made from sour cream and sugar. The sour cream is simply whipped with the sugar until the sugar dissolves. The original recipe said to add sugar "by intuition"; I think you're supposed to keep adding more until it thickens, but the time I tried that it was too sickly sweet! I have also made the filling/coating using fresh cream - 750ml, soured with 1/2 cup lemon juice and beaten until just starting to thicken (you still use the sugar & honey). This was for a vegetarian who pointed out that the cultured sour cream I used had gelatin in it. A slightly different taste, but a very nice variation. I personally don't like walnuts all that much, so I leave them out whenever I cook this.

- Preheat oven to 180°C.
- Beat eggs well with sugar; add baking soda and liquid honey (warm).
- Melt the margarine/butter in a casserole or pot; add the mixture (margarine should not be too hot).
- Put the casserole on a low heat, add the flour while mixing and mix until the mass is without lumps (the mixture will be very thick and very hard to stir). Remove from heat and cool.
- Dip the dough in flour, divide, roll each layer very thin (1-2mm), cut circles as round as possible (approx 18cm diameter), and bake at 180°C for 2-4 minutes or until golden brown in colour; repeat with remaining dough and allow to cool before assembling.
- Beat sour cream, sugar and honey until the sugar dissolves-the mixture will still be fairly liquid.
- Coat each layer with a generous layer of cream; assemble the cake, coat the sides with cream and sprinkle top and sides with crumbs and ground walnuts. Allow to set at least 6 hours before eating.

PERFECT HONEY CAKE
I've tried many many honey cake recipes, and this is my favorite, both for depth of flavor and ease of production. It's basically a one-bowl cake, freezes very very well, and can be made in a variety of sizes. I got this from Amit Women's cookbook (Efrat chapter, Chicago), and can barely read the page because of all the spills on it. Even my mom, an extraordinary baker, has begun to use this recipe instead of her own. A perfect Rosh Hashana/Sukkot treat!

- In a large bowl, mix together the first 3 ingredients.
- In a separate bowl, combine the flour, baking powder, spices and baking soda.

CHIFFON HONEY CAKE
This is very easy and very good! I was real happy how this turned out. It looked perfectly cooked and I followed the directions almost exactly. The only thing I did differently was cooked 10 minutes longer on 350 than what it called for, by accident. I turned the timer off and forgot to turn the heat down right away. Oh well, it turned out perfect to me and dh was proud to take 1/2 of it to work. I was worried about not prepping the pan, but it worked out great!

- Beat the eggs well, add sugar and beat at high speed until light & creamy.
- Add oil and honey, beating at medium speed until well blended.
- Combine dry ingredients and add to mixture alternately with coffee.
- Pour into an ungreased 10" tube pan.
- Bake at 350º for 15 minutes, then reduce heat to 325 degrees and bake for one hour longer.
- When cake is done, invert and cool completely before removing from pan.
- If it sticks before removing pan, run a knife around the edges to loosen.
