1 cup bulgur (cracked wheat), uncooked
2 ½ cups boiling water
3 tablespoons olive oil
¼ cup fresh lemon juice
1 cucumber, peeled and chopped
1 cup chopped green onions
1 cup chopped fresh parsley
¼ cup chopped fresh mint leaves
1 tablespoon ground coriander
1 tablespoon minced fresh ginger root
salt and pepper to taste
10 jumbo cooked shrimp - peeled and deveined

Steps:

  • Place bulgur in a large bowl, and pour the boiling water and olive oil over it. Stir, cover, and let stand for 15 to 20 minutes.
  • When all of the water has been absorbed and the bulgur is tender, stir in the lemon juice, cucumber, green onions, parsley, and mint. Season with coriander, ginger, salt and pepper. Garnish with shrimp.

3 tablespoons plus 1 teaspoon kosher salt
1 lemon cut into quarters
4 pounds large shrimp in the shell (16 to 20 shrimp per pound)
2 cups good mayonnaise
1 teaspoon Dijon mustard
2 tablespoons white wine or white wine vinegar
1 teaspoon freshly ground black pepper
6 tablespoons minced fresh dill
1 cup minced red onion (1 onion)
3 cups minced celery (6 stalks)

Steps:

  • Bring 5 quarts of water, 3 tablespoons salt, and the lemon to a boil in a large saucepan. Add half the shrimp and reduce the heat to medium. Cook uncovered for only 3 minutes or until the shrimp are barely cooked through. Remove with a slotted spoon to a bowl of cold water. Bring the water back to a boil and repeat with the remaining shrimp. Let cool; then peel, and devein the shrimp.
  • In a separate bowl, whisk together the mayonnaise, mustard, wine or vinegar, 1 teaspoon salt, pepper, and dill. Combine with the peeled shrimp. Add the red onion and celery and check the seasonings. Serve or cover and refrigerate for a few hours.

1 cup dried brown lentils, picked through and rinsed
1 clove garlic, halved
Kosher salt
1/4 cup extra-virgin olive oil
3/4 teaspoon ground cumin
Juice of 1 lemon
Freshly ground black pepper
8 ounces medium shrimp, peeled and deveined
16 grape tomatoes
1 small yellow squash, cut into 16 rounds or half-moons just under 1/2-inch thick
1/2 teaspoon ground coriander
1/2 teaspoon smoked sweet paprika
2 tablespoons roughly chopped fresh dill or mint
2 tablespoons roughly chopped fresh parsley
2 scallions, thinly sliced
Lemon wedges, for serving

Steps:

  • Combine 5 cups cold water, the lentils, garlic and 2 teaspoons salt in a medium saucepan. Bring to a boil, and then reduce to a simmer. Simmer until the lentils are tender but still hold their shape, 20 to 25 minutes, then drain. Remove the garlic halves and mash them with the flat side of a knife. Place the mashed garlic in a large bowl. Whisk in 2 tablespoons of the oil, 1/4 teaspoon of the cumin, the lemon juice, a few grinds of pepper and 1/2 teaspoon salt. Add the drained lentils and toss to coat.
  • Heat a grill pan set over medium-high heat. Place the shrimp in a medium bowl and the tomatoes and squash in another bowl. To each bowl, add 1 tablespoon of the olive oil, 1/4 teaspoon cumin, 1/4 teaspoon coriander, 1/4 teaspoon paprika, 1/4 teaspoon salt and a pinch of pepper. Toss to coat. Thread 2 pieces of shrimp, 2 tomatoes and 2 pieces of squash onto each skewer. Rest the kebabs at room temperature for 15 minutes.
  • Grill the skewers until the shrimp are firm and opaque and the squash are firm-tender, 1 1/2 to 2 minutes per side. Sprinkle lightly with salt.
  • Fold the dill, parsley and scallions into the lentil salad, then divide among four plates. Top each salad with 2 skewers. Serve with lemon wedges on the side.

2 romaine hearts, coarsely chopped
1 cup cherry tomatoes, halved
1/4 cup shredded Parmesan cheese
1/2 cup all-purpose flour
3/4 teaspoon salt

1 pound uncooked large shrimp, peeled and deveined
Oil for frying
1/2 cup creamy Caesar salad dressing
Additional shredded Parmesan cheese and pepper, optional

Steps:

  • In a large bowl, combine romaine, tomatoes and cheese; refrigerate until serving. In a shallow bowl, mix flour, salt and pepper. Add shrimp, a few pieces at a time, and toss to coat; shake off excess., In a deep skillet, heat 1/4 in. oil to 375°. Fry shrimp, a few at a time, 1-2 minutes on each side or until golden brown. 1/2 cup fresh lime juice
1/4 cup orange marmalade
3 large garlic cloves, minced and mashed to a paste with 1 teaspoon salt
1/2 cup fresh coriander sprigs, washed well, spun dry, and chopped fine
4 tablespoons olive oil
1 tablespoon soy sauce
1/2 teaspoon dried hot red pepper flakes
1 pound large (21 to 24 per pound) shrimp, shelled, leaving tail and first shell section intact, and if desired deveined
Garnish:
Garnish: fresh coriander sprigs

Steps:

  • In a measuring cup whisk together lime juice, marmalade, garlic paste, coriander, 3 tablespoons oil, soy sauce, red pepper flakes, and salt and pepper to taste and reserve 1/3 cup mixture in a small bowl or ramekin for dipping. In a large sealable plastic bag combine shrimp with remaining mixture and marinate, chilled, tossing occasionally to coat shrimp, 45 minutes.
  • Drain shrimp and lightly pat dry between paper towels. In a large non-stick skillet pat 1 1/2 teaspoons oil over moderately high heat until hot but not smoking and sauté half of shrimp until golden brown and cooked through, about 1 1/2 minutes on each side. Sauté remaining shrimp in remaining 1 1/2 teaspoons oil in same manner.
  • Garnish shrimp with coriander sprigs and serve with reserved dipping sauce.

CORIANDER PASTA SALAD

If I could only eat one thing for the rest of my life, this would be it! It's so good, i make it whenever i go to barbeques or dinners and it's always popular (i'm usually first in line!). This recipe does make a lot (as a side), so if you're just making it for your family feel free to reduce it by a half or two-thirds, otherwise you may be eating it for the next week!

500 g spiral pasta
1/2 cup sliced sun-dried tomato
6 large mushrooms, sliced
4 spring onions, chopped
1/2-1 red capsicum, diced
1/4 cup pine nuts
1/4 cup pine nuts, extra
1/2 cup grated parmesan cheese
1 garlic cloves, peeled or 1 teaspoon crushed garlic
pepper, to taste
2 xbunches fresh coriander, washed, roots discarded, roughly chopped (≈, 2 cups)
1 -1 1/2 cup mayonnaise, approximately

Steps:

  • Bring a large pot of salted water to the boil and cook pasta according to the packet directions. Drain and allow to cool.
  • When the pasta has cooled, place into a large bowl and add the sundried tomatoes, mushrooms, spring onions, capsicum and pine nuts. Mix well to combine.
  • To make the dressing, place the extra pine nuts, parmesan, garlic and pepper to taste into the bowl of a food processor. Blend until it forms a paste.
  • Add the coriander to the food processor and blend until all the ingredients form a pesto.
  • Add the mayonnaise to the food processor and blend until combined, forming a creamy, pale green dressing (try to avoid blending the mayonnaise for too long as it may cause it to separate).
  • Add the dressing to the pasta salad (you may not need all of it as it does make a fair bit, adjust as necessary to suit your tastes) and mix thoroughly.

1 garlic clove
1 tablespoon packed brown sugar
3 tablespoons soy sauce

1 firm-ripe California avocado
2 teaspoons fresh lemon juice
2 tablespoons coarsely chopped fresh coriander leaves

Steps:

  • Shell and devein shrimp and mince garlic. In a bowl stir together garlic, brown sugar, soy sauce, chili powder, lime juice, red pepper flakes, and 2 teaspoons oil and add shrimp, tossing to coat. Marinate shrimp 15 minutes.
  • Preheat broiler.
  • Pit and peel avocado and cut into 1-inch pieces. Drain shrimp and arrange on rack of a broiler pan in one layer. Broil shrimp about 4 inches from heat 2 minutes and with tongs turn shrimp over. Broil shrimp 2 minutes more, or until just cooked through, and transfer to another bowl. Add avocado, lemon juice, coriander, remaining 2 teaspoons oil, and salt and pepper to taste and gently toss to coat.

Steps:

  • Combine together all the ingredients for the salad dressing in a bowl.
  • Whisk to mix well.
  • Keep aside.
  • Now proceed to prepare the potato salad.
  • For this, heat oil in a pan.
  • Add garlic and onion.
  • Saute until the raw smell of garlic is gone and the onion is browned.
  • Add cumin, corriander, chilli, turmeric and cinnamon powders.
  • Mix well.
  • Add potatoes, corriander leaves and salt.
  • Mix well.
  • Cook for 10 minutes or until the potatoes are coated with the spices.
  • Combine this potato mixture and luncheon meat strips in a salad bowl.
  • Add the dressing and serve.
