Steps:
- Heat a large soup pot with extra-virgin olive oil over medium-high heat. Add the kielbasa and brown for 2 minutes; add the potatoes, onions, celery, bay, thyme, and pepper and let the veggies soften up 10 minutes, stirring occasionally. Next add the garlic and the corn and stir to combine.
- Add the tomatoes and stock to the pot. Cover and bring to a boil. Cook for 8 minutes.
- Pat shrimp dry and toss with a rounded tablespoon of seafood seasoning. Add the shrimp and clams and replace the cover.
- Cook until shrimp are pink and firm and the clams have opened up, 7 minutes. (During the cooking time I tend to leave the temperature on medium high so that the soup continues at a rapid boil.).

- In a microwave-safe mixing bowl, put the entire brick of cream cheese and microwave for 30 seconds at a time until the cream cheese is soft and spreadable.
- Combine all of the other ingredients into the bowl. For the clams, you want the entire can, juice and all. I never really measure the Lemon Juice I sprinkle it in, probably no more than a TBS.
- With a rubber spatula stir the dip making sure to scrape the sides so everything gets mixed in well.

- Finely grate the garlic, keeping the two amounts separate. In a large pot, heat the tablespoon of olive oil over medium heat. Add the garlic and sweat until fragrant, about 2 minutes. Sprinkle in the thyme, and sauté for another minute or so, again until fragrant. Pour in the beer and bring to a simmer, then season with a pinch of salt and gently dump the clams in. Cover and steam until they open, about 5 minutes, then remove the pot from the heat.
- Allow the clams to cool in their cooking liquid, then remove all meat from the shells. Save the cooking liquid to use in other recipes.
- Preheat a high broiler. Finely chop the clams. In a large skillet, heat the teaspoon of olive oil and butter together. When the butter has melted, add in the rest of the microplaned garlic. Let it sweat over medium low heat for a couple of minutes, then add in the chopped clams, ground mustard and paprika and stir to combine.
- After about 2 minutes, when you can smell the spices, pour in the lemon juice and worcestershire, and bring the heat up to medium. Stir in the cream cheese and mayo, allowing everything to melt together. Continue to stir occasionally for a few minutes, until the dip is thoroughly combined and bubbling slightly. Stir in the chives.
