Stir-Fried Green Beans With Pork and Chiles image

In this fast, piquant weeknight meal, ground pork and green beans are stir-fried with plenty of ginger, garlic and chiles, and seasoned with soy sauce and coriander seeds. A big splash of rice-wine vinegar right at the end adds a hit of acidity, which balances the pork's richness. Serve this over rice or rice noodles to help absorb all the salty, spicy sauce. Slices of fresh tomato add a sweet juiciness that works well here. But if you don't have a ripe tomato, feel free to leave it out.

2 tablespoons neutral oil, such as peanut, sunflower or grapeseed, plus more if needed
1 pound ground pork
1 teaspoon kosher salt
8 ounces green beans, cut into 1/2-inch lengths
2 red chiles, seeded or not, thinly sliced
1 tablespoon freshly grated ginger
5 garlic cloves, minced
1 teaspoon coriander seeds, lightly cracked with a mortar and pestle or with the side of a knife
1/4 cup cilantro leaves and tender stems, chopped, plus more for serving
3 tablespoons rice-wine vinegar, plus more for serving
4 teaspoons soy sauce, plus more to taste
1/2 teaspoon sugar
Cooked white rice or rice noodles, for serving
Sliced tomato, for serving (optional)

Steps:

  • Heat a 12-inch skillet or wok over medium-high heat for 1 minute, then add the oil and let heat for another 30 seconds - it should be hot but not smoking. Stir in pork and 3/4 teaspoon salt, and cook, breaking up meat with a spoon, until browned and crisp, 6 to 9 minutes. Transfer to a plate.
  • Return pan to heat and add more oil if it looks dry. Stir in green beans, cook until they are crisp, tender and bright green, 1 to 3 minutes. Stir in chiles, ginger, garlic, coriander seeds and remaining 1/4 teaspoon salt. Cook, stirring frequently, until fragrant, about 1 minute longer.
  • Return pork to skillet, along with chopped cilantro, vinegar, soy sauce and sugar. Stir briefly to combine, then scrape into a serving platter.
  • Sprinkle more vinegar and soy sauce on top to taste, then top with more chopped cilantro. Serve with rice, and sliced tomato, if you like.

1 tbsp lime juice
1 tbsp chilli bean paste or chilli sauce
75ml oyster sauce
1 tsp soy sauce
2 tbsp vegetable oil
400g pork fillet , cut into thin slices
2 garlic cloves , chopped
1 red onion , cut into chunky pieces
140g green bean , halved
steamed rice or noodle , to serve

Steps:

  • In a small bowl, mix together the lime juice, chilli bean paste, oyster sauce and half the soy sauce. Set aside. Heat a large wok with 1 tbsp of the oil. Season the pork and toss with the remaining soy sauce. Sear the meat quickly, then remove from the pan.
  • Add the remaining oil and stir-fry the garlic, onion and beans for 2 mins. Return the meat to the pan with the sauce and stir-fry for another 3 mins, until the sauce has thickened. Serve with steamed rice or noodles.

10 oz / 300 g green beans ((Note 1a))
7 oz / 220 g pork mince ((Note 1b))
1/2 small onion, finely chopped (about 1/2 cup)
2 tsp finely chopped garlic (2 cloves) ((Note 2))
2 tsp ginger, finely chopped ((Note 2))
2 1/2 tbsp peanut oil (or vegetable or canola)
1 tbsp dark soy sauce (Note 3)
1 tbsp Chinese cooking wine (Note 4 for subs)
1 tsp sugar
1 1/2 tsp + Chilli Garlic Sauce (Note 5)

Steps:

  • Mix Sauce ingredients in a bowl.
  • Trim the tough end of the beans, then chop into 2 - 2.5cm / 4/5 - 1" pieces.
  • Charred Beans: Heat 1 1/2 tbsp oil in a heavy based skillet over high heat (I use cast iron) until smoking. Add beans, spread out to cover base. Leave for 1 minute. Quick stir, spread out, cook for 30 seconds. Stir, then leave for 30 seconds, then repeat once more (so 2 1/2 minutes in total cook time) until beans are charred but tender crisp (not withered and floppy). Remove into bowl.
  • Turn heat down to medium high, add 1 tbsp oil. Add onion, then garlic and ginger. Cook for 1 minute until edges of onion are golden.
  • Turn heat back up to high. Add pork and cook, breaking it up as you go. Cook for 2 minutes until the pork is cooked through, then add Sauce. Cook for 30 seconds, then add beans and stir for another 30 seconds.
  • Serve over rice. Garnish with slices of large red chilli (it's mild), entirely optional. To eat, mix the pork into the rice then eat it with a spoon - forget chopsticks for this one! (For a low carb, low cal option, try Cauliflower Rice)

½ pound boneless skinless chicken breasts, cut into cubes
2 cloves garlic, chopped
2 tablespoons oyster sauce

100g basmati rice
200g green bean , topped and tailed, then halved
1 ½ tbsp sunflower oil
140g pork mince
4 tsp dark soy sauce
2 tsp rice wine
1 tsp caster sugar
¼ tsp Sichuan pepper , lightly crushed using a pestle and mortar
1 red chilli , halved and sliced
4 fat garlic cloves , finely chopped
1 small knob of ginger , finely chopped
3 spring onions , 2 finely chopped, 1 sliced for garnish
2 tsp sesame oil

Steps:

  • Cook the rice following pack instructions. Boil the beans for 4 mins, then drain under cold water, pat dry and set aside.
  • In a large non-stick wok or frying pan, heat 1 tbsp of the oil. Add the pork mince and fry for a few mins, breaking up into small pieces with the back of a spoon. Stir in half the soy, the rice wine and sugar and cook for 30 secs more. When the meat is cooked through, tip onto a plate.
  • Heat the remaining oil in the pan. Add the pepper, chilli, garlic, ginger and chopped onions, and stir-fry for 2 mins until ginger and garlic are softened. Tip in the beans, heat through, then add the mince - stir-fry for 2 mins until hot. Stir in the rest of the soy and sesame oil. Scatter with spring onions and serve with rice.

1 lb lean ground pork
8 oz sliced mushrooms (I used baby bellas)
1 small onion (sliced)
1 tbsp minced garlic
1 tbsp grated fresh ginger
12 oz bag (washed & trimmed fresh whole green beans)
2 tbsp oil
1/4 cup water
2 tbsp reduced sodium soy sauce (reg can be used too)
2 tbsp mirin or white wine
1 tbsp rice vinegar
2 tsp brown sugar
1 tsp sriracha
1 tsp dark sesame oil

Steps:

  • Whisk together all the sauce ingredients in a small bowl; set aside.
  • Heat 1 tbs oil in a large skillet or wok over high heat. Add the sliced mushrooms and cook until they release all their liquid and begin to brown. Remove from pan and set aside.
  • Add the ground pork to the same skillet and cook over high heat until pork is cooked and begins to brown. Remove from pan and set aside.
  • Add the remaining 1 tbs of oil to the wok/skillet and add the garlic, ginger, onion and green beans. Stir fry until very aromatic--about 1-2 minutes. Add the water and cook until green beans are crisp-tender; about 2 minutes.
  • Add the mushrooms and ground pork back to the pan. Whisk the sauce again to make sure all the sugar is dissolved and pour over the pork mixture.

This Chinese green bean stir-fry may seem simple, but it's truly delicious! We wok sear the green beans for flavor and stir-fry with crispy ground pork.

8 ounces ground pork ((225g, can substitute ground chicken or beef))
1 tablespoon Shaoxing wine
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
2 tablespoons water
2 tablespoons ginger ((minced))
1/2 teaspoon sugar
1 teaspoon cornstarch
3 tablespoons oil ((divided))
1 pound green beans ((450g, chopped to ½-inch pieces))
2 tablespoons garlic ((minced))
1/2 red bell pepper ((diced finely))
4 red chilies ((chopped, optional))
1/4 teaspoon sugar
1 teaspoon sesame oil
1 tablespoon light soy sauce
1/4 teaspoon ground white pepper
1/8 teaspoon salt ((a pinch, or to taste))
2 tablespoons water

Steps:

  • Combine the ground meat with all the marinade ingredients. Stir until any standing liquid has been absorbed by the meat. Marinate for 15-20 minutes.
  • Heat 2 tablespoons of oil in a wok over medium heat. Add the chopped green beans. Stir and spread the beans into a single layer. Cook for 30 seconds. Then stir and repeat the spreading step several times until the green beans are slightly charred, wilted, and cooked through. Turn the heat lower if needed to avoid burning. It takes about 5-8 minutes to cook the green beans this way. (To speed up the cooking, add a few drops of water each you stir, to create some steam.) Transfer the cooked green beans to a dish and set aside.
  • Now add 1 tablespoon oil to the wok, with the heat turned up to high. Add the ground meat and brown it. Don't stir too much; give the meat a chance to brown and crisp. Once the meat has browned, reduce the heat to medium.
  • Next, add the garlic, bell pepper and chilies. Stir-fry for 1 minute. Add in the cooked green beans, ¼ teaspoon sugar, 1 teaspoon sesame oil, 1 tablespoon light soy sauce, ¼ teaspoon ground white pepper, a pinch of salt (to taste), and 2 tablespoons water. With the heat all the way up on high, stir-fry for a final 10-15 seconds and serve.

150 g around 4.5 ounces pork butt or tenderloin, sliced
1/4 tsp. salt
1/2 tbsp. cooking wine
1 tbsp. light soy sauce
3 tbsp. water or chicken stock
1/4 tsp. white pepper
1 tsp. cornstarch
1 tsp. sesame oil
cooking oil as needed
1 garlic cloves ( ,minced)
1 tsp. minced ginger
4 scallions ( ,cut into small sections)
1 black bean sauce or 1 tbsp. chopped black beans
1 tsp. dark soy sauce
3 fresh red chili peppers ( ,cut into small sections)
2 fresh green chili peppers ( ,cut into small sections)
a very small pinch of salt if needed

Steps:

  • Thinly slice the pork. Add salt, cooking wine, light soy sauce, water (or chicken stock) and white pepper. Message the pork slice for 2-3 minutes until all the juice is well absorbed. Set aside for 10 minutes.
  • Add cornstarch and message again. Make sure all the slices are well coated with starch. At last, add 1 teaspoon of sesame oil, mix well too.
  • Heat your wok or pan firstly. Add cooking oil to form a 2-3 cm high layer (do not be scared by the oil amount, we do not eat them all). Spread the pork sliced in. Let them stay for 5 to 10 seconds and then quickly fry them until turns pale. Transfer out immediately.
  • Remove the extra oil and save them for vegetable stir fries. Keep around 1 tablespoon of oil and fry garlic, ginger and scallion until aromatic. Place fresh pepper sections in to fry for 1 minute or until slightly softened. Return pork sliced in, add dark soy sauce and black beans sauce. Mix well and see if any extra salt is needed. Move out immediately after mixed. Be quick in this process and it is better to finish this within 30 seconds.

  • In a saucepan, cook green beans JUST until crisp-tender (about 3 minutes) then add in carrots sticks and cook 1 minute; drain the water (this can be done hours in advance).
  • Heat peanut oil in a wok or large nonstick skillet over high heat until hot.
  • Add in the pork mixture; stir-fry for about 1 minute, remove pork to a dish.
  • Add in more peanut oil, then add in the red bell pepper and stir-fry 1 minute.
  • Add in green beans, carrots, ginger and remaining garlic; stir-fry 1 minute.
  • Return the pork to the wok or skillet along with the soy/cornstarch mixture; stir until thoroughly heated through and thickened (about 1 minute).
  • Add in peanuts; toss to combine.
  • Season with salt and pepper if desired.
  • Transfer to a bowl and sprinkle with chopped green onions.
  • Sprinkle with more peanuts if desired and serve with rice.
  • Delicious!

3 garlic cloves
2 teaspoons minced peeled fresh gingerroot
2/3 cup water
1/4 cup soy sauce
1/4 cup mango chutney such as Major Grey's
1 teaspoon Chinese five-spice powder
1/2 teaspoon sambal oelek (Indonesian chili paste)
1 medium red onion
1/2 pound fresh green beans
a 3/4-pound piece green cabbage (about 1/2 medium head)
1/4 cup packed coriander leaves
4 1/2 tablespoons peanut oil
1/2 pound fresh bean sprouts (about 2 cups)
1 cup snow-pea shoots or daikon (Asian radish) sprouts
2 teaspoons Asian sesame oil
Accompaniment:Cooked Rice

Steps:

  • Freeze pork, wrapped in plastic wrap, until firm, 30 minutes, to facilitate slicing. Cut pork crosswise into 3/4-inch-thick slices and season with salt and pepper.
  • Make sauce:
  • Mince garlic and in a small bowl stir together with remaining sauce ingredients until combined.
  • Halve onion lengthwise and cut into thin slices. Diagonally cut beans into 1 1/2-inch pieces. Core cabbage and cut into 1-inch pieces. Chop coriander.
  • Heat a wok or large heavy skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Add 1 1/2 tablespoons peanut oil, swirling wok or skillet to coat evenly, and heat until hot but not smoking. Add onion and stir-fry until slightly softened. Add beans and stir-fry until crisp-tender, about 4 minutes. Transfer mixture to a large bowl. Add 1 tablespoon peanut oil to wok or skillet and stir-fry cabbage until crisp-tender, about 2 minutes. Add bean sprouts and stir-fry until sprouts are slightly wilted, about 30 seconds. Transfer cabbage mixture to bowl.
  • Add 1 tablespoon peanut oil to wok or skillet and heat until just smoking. Stir-fry half of pork, separating slices, until browned and transfer to bowl. Add remaining tablespoon peanut oil and stir-fry remaining pork, transferring to bowl.
  • Add sauce to wok or skillet and bring to a boil, stirring. Return pork-vegetable mixture to wok or skillet and stir-fry until heated through. Stir in coriander, snow-pea shoots or daikon sprouts, sesame oil, and salt and pepper to taste.
  • Serve stir-fry over rice.

1 12-ounce bag trimmed green beans, cut into 1-inch pieces
3 scallions, thinly sliced, dark green parts separated
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 Thai chile or jalapeño pepper, seeded and minced
1 pound ground pork
1/4 cup packed dark brown sugar
2 tablespoons fish sauce, plus more for serving
1 cup chopped fresh herbs (such as cilantro, mint and Thai basil)
Lime wedges, for serving

Steps:

  • Cook the rice as the label directs. Set aside off the heat, 5 minutes, then fluff with a fork. Cover and set aside.
  • Meanwhile, heat 2 teaspoons vegetable oil in a large wok or skillet over high heat. Add the green beans and cook, stirring occasionally, until crisp-tender and slightly charred, about 5 minutes. Remove to a bowl or large plate.
  • Add the remaining 2 teaspoons vegetable oil to the wok or skillet and reduce the heat to medium high. Add the white and light green parts of the scallions, the ginger, garlic and chile and cook, stirring, 30 seconds. Add the pork and cook, breaking it up with a wooden spoon, until browned, 6 to 8 minutes. Stir in the brown sugar and fish sauce and cook until the liquid nearly evaporates and the sugar has caramelized. Stir in the green beans and warm through.
  • Divide the rice among bowls and top with the stir-fry, dark green scallion parts and the chopped herbs. Serve with the lime wedges and more fish sauce.

1 1/2 pounds pork sirloin chops or pork blade steaks, bones removed
1 1/2 cups jasmine rice, rinsed
Zest of 1 lemon, removed in wide strips with a vegetable peeler
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
1 pound haricots verts, trimmed and halved
2 cloves garlic, finely chopped
1/2 red jalapeno pepper, seeded and finely diced
1 tablespoon grated peeled fresh ginger
1/3 cup packed dark brown sugar
1 tablespoon fish sauce
Chopped fresh cilantro and/or mint, for topping

Steps:

  • Put the pork in the freezer while you prepare the rice. Put the rice in a medium saucepan and add 2 cups water, the lemon zest and 1/2 teaspoon salt; bring to a boil. Stir, then cover and reduce the heat to low. Cook until the water is absorbed, about 10 minutes. Turn off the heat and let stand 10 minutes. Fluff the rice with a fork.
  • Meanwhile, cut the pork into 1 1/2-by-1/2-inch strips. Season with salt and pepper. Heat 2 tablespoons vegetable oil in a large nonstick skillet over high heat until very hot. Add half the pork and cook until browned, about 2 minutes per side. Remove to a large bowl; repeat with the remaining pork.
  • Add another 1 tablespoon vegetable oil to the skillet over medium heat. Add the haricots verts, 1/4 teaspoon salt and 1/3 cup water; cook, stirring, until the water evaporates and the haricots verts start browning, about 6 minutes. Add to the pork.
  • Add the remaining 1 tablespoon vegetable oil, the garlic, jalapeno and ginger to the skillet and cook, stirring, until golden, 1 minute. Add the brown sugar, fish sauce and 1/4 cup water; cook until the sauce is thick and bubbling, 1 to 2 minutes. Add the pork and haricots verts to the sauce and toss until glazed, about 1 minute; season with salt. Serve the stir-fry with the rice; top with cilantro and/or mint.

1/4 cup chicken stock
1 tbsp balsamic vinegar
2 tbsp coconut aminos ((or tamari/soy sauce))
2 medjool dates or 2 tbsp honey
1 1/2 tbsp sesame oil
3/4 lbs green beans
1/2 lbs ground pork ((or chicken or turkey))
3 cloves minced garlic
2 tbsp finely diced ginger
1/2 tsp ground szechuan peppercorns
1 tbsp white sesame seeds
1 tbsp dried red chilies ((optional depending on desired spice))

Steps:

  • In a high speed blender or NutriBullet combine the chicken stock, balsamic vinegar, coconut aminos and medjool dates and blend until smooth.
  • Heat sesame oil on high heat in a large skillet or wok. Once hot add in the green beans and cook for 4-5 minutes until the beans have begun to soften and slightly char. Remove the green beans from the wok and set aside.
  • Lower the heat to medium high and add the ground pork to the wok. Use a wooden spoon to break the meat up into a fine crumbly texture.
  • After 5 minutes the meat should be cooked through and slightly browned. Add in the garlic, ginger and ground Szechuan peppercorns and leave to cook for 1 minute.
  • After 1 minute add in the sauce and green beans and leave to cook for another 3 minutes.
  • Stir in the white sesame seeds and optional dried chili peppers and serve.
