2 tablespoons coriander seed
2 tablespoons mustard seed
1 tablespoon red pepper flakes
1 tablespoon dill weed
1 tablespoon allspice
1 tablespoon salt
3 dried bay leaves
3 qt water
8 small red skin potatoes
3 ears corn, cut into thirds
4 smoked sausages, such as kielbasa, cut into rounds
2 lb shell-on shrimp
Juice of 1 lemon
fresh parsley, chopped
1 cup cocktail sauce, to serve
butter, melted, to serve

Steps:

  • In a small bowl, combine the coriander seeds, mustard seeds, red pepper flakes, dill weed, allspice, salt, and bay leaves.
  • Add the spice mix to a large pot with 3 quarts of water, then add the potatoes. Bring to a boil and cook for 15 minutes.
  • Add the corn and boil for 10 minutes. Add the sausage and cook for another 5 minutes.
  • Remove a potato from the pot and check to see if it's fully cooked. If not, continue to cook them until the potatoes are done.
  • Stir in the shrimp and lemon juice. Place the lid on the pot and cook for 3 minutes, or until the shrimp are pink and cooked through.
  • Drain the ingredients from the pot. Serve the shrimp boil on a newspaper-lined table, sprinkled all over with parsley, with cocktail sauce and garlic butter on the side.

2 medium russet potatoes, scrubbed
2 teaspoons olive oil, divided
½ teaspoon kosher salt, plus more to taste
¼ cup sour cream
2 tablespoons Tasty™ Jazzy Seasoning Mix
8 shrimps, peeled and deveined
2 tablespoons unsalted butter
2 tablespoons red onion, diced
½ celery stalk, diced
¼ cup frozen corn
½ cup grated cheddar cheese, plus more to taste for the topping

Steps:

  • In a medium bowl, toss the shrimp with the Tasty™ Jazzy Seasoning Mix and 1 teaspoon of olive oil until well coated. Set in the refrigerator to marinate while the potatoes cook.
  • Prick the potatoes all over with a fork, this allows the steam to escape as they cook. Drizzle with 1 teaspoon of olive oil and a pinch of salt and rub to coat all over. Place the potatoes in a microwave-safe bowl with 2 tablespoons of water. Microwave at full power for 5 minutes. Check for doneness, if still tough, flip over and cook for an additional 5 minutes at full power. Continue to cook in 1-minute intervals until all the potatoes are fork tender.
  • Using a paring knife, cut off a third of each potato lengthwise and scoop the flesh into a large bowl, leaving a ¼-inch thick shell. Discard the skin from the smaller potato trimmings.
  • Add the sour cream to the potato flesh and mash until no clumps remain.
  • Preheat the oven to 350°F (175°C).
  • Melt the butter in a medium saucepan over medium-high heat. Add the red onion, celery, corn and sauté for 5-7 minutes, until tender. Push the vegetables to one side of the pan, then add the shrimp to the other side. Cook the shrimp for 1-2 minutes on each side, until just cooked through.
  • Add the shrimp and vegetables to the bowl with the mashed potatoes, along with half of the cheddar cheese. Gently mix to combine.
  • Spoon the filling into the potato skins and top with the remaining cheddar cheese.
  • Bake for 5-7 minutes, until the cheese is melted and lightly browned.
  • Transfer the potatoes to a serving plate and serve.

1 lemon, cut into wedges

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a large pot of boiling salted water, cook potatoes until just tender and parboiled, about 10-13 minutes. Stir in corn during the last 5 minutes of cooking time and drain well.
  • In a small bowl, combine butter, garlic, and Old Bay Seasoning.
  • Place potatoes, corn, shrimp and sausage in a single layer onto a greased baking sheet. Gently toss with the butter mixture.

4 Yukon Gold or red-skinned potatoes (about 1 1/4 pounds)
6 tablespoons unsalted butter
2 ears fresh corn or 4 small pieces thawed frozen corn on the cob, cut into 1-inch-thick pieces
2 cloves garlic, thinly sliced
1 tablespoon Old Bay Seasoning
Kosher salt and freshly ground pepper
1 pound peeled and deveined large shrimp (no need to thaw if using frozen)
1 lemon, zest grated, cut into wedges
1/2 cup dry white wine
2 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill to medium. Microwave the potatoes until softened but not fully cooked, about 5 minutes. Let cool a few minutes, then dice.
  • Put 4 tablespoons butter in a large microwave-safe bowl and microwave until melted. Add the potatoes, corn, garlic and Old Bay and toss well; season lightly with salt and pepper.
  • Tear off four 18-inch-long sheets of foil. Divide the vegetables among the foil sheets, piling them in the middle. Add the shrimp to the same bowl. Sprinkle with the lemon zest and a pinch of salt and pepper; toss well. Add the shrimp to the vegetable piles.
  • Drizzle 2 tablespoons wine over each pile of vegetables and shrimp. Cut the remaining 2 tablespoons butter into 4 pieces and add a piece to each pile. Bring the short ends of the foil together and fold twice; fold in the sides to form a packet.
  • Grill the foil packets until the potatoes are tender and the shrimp is cooked through, 15 to 20 minutes. Remove from the grill and let stand 5 minutes. Carefully open the packets and sprinkle with the parsley; serve with the lemon wedges.

1/4 cup Cajun spice
1 pound small red potatoes
2 ears yellow corn, cut in half
1 cup thin sliced red onion (1/6-inch half rounds)
1 pound andouille sausage, cut on bias 1/4-inch thick
1 pound shell-on shrimp (21 to 26 count)
1 pound butter, melted

Steps:

  • Over high heat, bring 2 gallons water, 1/4 cup seafood seasoning and 1/8 Cajun spice to a boil. Add the potatoes and corn and cook until potatoes are soft to the touch, 15 to 18 minutes. Next, add the onions and continue to cook for 2 minutes. Next, add the sausage and shrimp and cook until the shrimp are bright pink, a final 3 to 5 minutes. Remove from the water with a strainer.
  • Next, in a large bowl, blend the remaining 1/4 cup seafood seasoning, 1/8 cup Cajun spice with the butter. Whisk together and toss with the cooked boil, tossing to well coat. Serve.

1 teaspoon coriander seeds
1 rib celery, cut into 1-inch pieces
1 sprig fresh tarragon
2 sprigs fresh thyme
3 sprigs fresh parsley
1 tablespoon Essence, recipe follows
2 tablespoons salt
1/2 teaspoon cayenne pepper
1/2 lemon, squeezed (juice reserved) and the shell, plus 4 wedges for garnish
1/2 lemon, squeezed (juice reserved) and the shell, plus 4 wedges for garnish
1/4 cup white wine
4 cups water
2 bay leaves
1 pound medium (about 30) shrimp, peeled and deveined, tail segment left intact
Cocktail sauce, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano

Steps:

  • In a large saucepan, combine the peppercorns, coriander seeds, celery, tarragon, thyme, parsley, Essence, salt, cayenne pepper, lemon juice, white wine, water and bay leaves and bring to a boil over high heat and cook for 5 minutes. Add the shrimp to the boiling water, stir, cover and remove from the heat. Let stand for 8 to 10 minutes, or until shrimp are just cooked through.
  • Strain in a colander and transfer the shrimp to a large bowl. Discard the cooking liquid and seasonings. Refrigerate the shrimp until well chilled, about 1 hour. While the shrimp are chilling, make the Cocktail Sauce.
  • When ready to serve, divide the shrimp among 4 small bowls, and hang them on the rim of each bowl. Divide the cocktail sauce into 4 equal portions and place in the bottom of each bowl. Garnish each bowl with a lemon wedge. Alternatively, you can arrange a layer of crushed ice in the bottom of 4 bowls, put a small ramekin of the cocktail sauce in the ice and arrange the shrimp on the ice around the sauce.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

3 bay leaves
1 teaspoon hot sauce

1 pound (16/20 count) shell-on shrimp, deveined
3 green onions, sliced for garnish
Garlic bread, recipe follows
2 sticks butter, softened
2 cloves garlic, minced
1 scallion, minced
1 tablespoon Parmesan
1 tablespoon finely chopped parsley leaves
Hot sauce, to taste
Salt and freshly cracked black pepper
1 French baguette

Steps:

  • In a small stock pot, heat oil over medium heat. Saute sausage, onions and artichokes until lightly colored, about 5 minutes. Add jalapeno, water, potatoes, shrimp boil spice, salt, bay leaves, hot sauce and black pepper. Cover pot and bring to a boil. Reduce heat add corn and cover. Cook until corn is tender, about 10 minutes. Add shrimp and cook until pink and firm, about 5 minutes. Strain the boil through a colander. Plate immediately on a large serving dish. Garnish with sliced green onions or your favorite fresh herb. Serve with Garlic Bread.
  • In a small bowl, mix butter together with garlic, scallion, Parmesan, parsley, hot sauce and salt and pepper, to taste. Preheat broiler with rack 4 inches from heat. Slice baguette horizontally. Spread butter on both halves. Place on a sheet pan and toast under the broiler, about 2 minutes.

4 ears corn, husked and snapped in half
1 1/4 pounds large shrimp, unpeeled
2 tablespoons unsalted butter
Hot sauce, for serving (optional)

Steps:

  • Fill a large pot with 4 quarts of water. Squeeze the lemon juice into the water and add the squeezed lemon halves. Add the Old Bay, garlic and onion. Tie the thyme sprigs together with kitchen twine and add to the pot. Cover and bring to a boil, then reduce to a simmer and cook about 5 minutes.
  • Add the potatoes to the pot and cook until just tender, about 10 minutes. Add the corn and cook 5 more minutes.
  • Meanwhile, slice along the back of each shrimp through the shells; remove the veins and rinse the shrimp. Add to the pot, cover and cook until the shrimp curl and are just opaque, 2 to 3 minutes. Transfer the shrimp and vegetables with a slotted spoon or skimmer to a large bowl. Add the butter and about 1 cup broth to the bowl and toss until the butter is melted. Transfer the shrimp and vegetables to a platter. Serve with the remaining broth, lemon wedges and hot sauce, if desired.

  • Drain well and chill 1 hour before serving!

2 tablespoons salt
4 quarts water
1 (12 ounce) can beer
8 medium red potatoes, cut in quarters
2 large vidalia onions, cut in wedges

8 ears frozen corn on the cob, thawed (I use Birdseye Little Ears)
4 lbs large shrimp, in shells

Steps:

  • In an 8-quart stock pot, bring Old Bay, salt, water and beer to a boil.
  • Add potatoes and onions; cook over high heat for 8 minutes.
  • Add smoked sausage; continue to cook on high for 5 minutes.

1 large egg yolk

1 teaspoon minced fresh ginger

1 cup vegetable oil

Steps:

  • SHRIMP:.
  • Combine 6 cups water with the ginger, lemon shells, lemon juice, soy sauce, sugar, bay leaves, green onions, garlic, salt, black pepper, and crushed red pepper in a large heavy saucepan and bring to a boil over high heat.
  • Season the shrimp with the Essence and add to the boiling mixture.
  • Cook for 2 minutes, remove from the heat, and steep for 2 minutes.
  • Remove the shrimp with tongs or a slotted spoon and transfer to a large platter to cool.
  • When cool enough to handle, serve, either warm, at room temperature, or chilled, with the Asian Mayonnaise.
  • ASIAN MAYONNAISE: (Make ahead).
  • Combine the egg yolk, lemon juice, ginger, garlic and green onions in a food processor and process 15 seconds.
  • With the motor running, slowly add the vegetable oil through the feed tube.
  • The mixture will thicken.
  • Add the soy sauce, cilantro, pepper, sesame oil and salt.
  • Pulse once or twice to blend.
  • Serve immediately or store in an airtight container for no more than 24 hours before using.
