This is a mild-tasting, fast rice recipe suitable as a side dish to chicken or fish. You can switch the butter out for oil or omit it entirely, but the dish isn't as tasty without it!

1 cup instant brown rice (such as Minute®)
½ teaspoon dried parsley
¼ teaspoon ground black pepper
1 tablespoon unsalted butter
½ teaspoon lemon juice
7 fluid ounces low-sodium chicken broth, or more if needed

Steps:

  • Combine instant brown rice, parsley, and black pepper in a microwave-safe dish.
  • Place butter and lemon juice in a measuring cup.
  • Pour chicken broth into measuring cup with butter and lemon juice to measure a total of 1 cup.
  • Stir chicken broth mixture into rice mixture until all ingredients are moistened. Cover with microwave-safe lid.
  • Heat in the microwave oven until rice is tender and has absorbed the liquid, about 7 minutes.
  • Remove and let stand for 5 minutes. Fluff with fork before serving.

  • Stir chicken broth mixture into rice mixture until all ingredients are moistened. Cover with microwave-safe lid.
  • Heat in the microwave oven until rice is tender and has absorbed the liquid, about 7 minutes. Remove and let stand for 5 minutes.
  • Fluff with fork before serving.
  • Note: You can adjust the seasonings to taste: lime juice and cilantro for a Mexican side, orange juice and thyme for another variety, etc.
  • Note: You can switch out brown rice for instant white rice or regular-cooking brown rice, but you'll need to read the package to make liquid to dry ratio adjustments.

Most likely it will come out mushy. In this recipe, the boiling (uncovered) cooks it thoroughly, and the steaming at the end make it light and fluffy.

12 cups water

Steps:

  • Rinse the starch off the rice in a strainer under cold water for 30 seconds.
  • Bring the water to a boil over high heat in a large pot that has a tight fitting lid.
  • Add the rice, stir it just once, and boil, uncovered, for 30 minutes.
  • Pour the rice into a strainer over the sink and drain for 10 seconds.
  • Return the rice to the same pot, off the heat.
  • Cover immediately and set aside for 10 minutes (this is the steaming part).
  • Uncover, fluff with a fork, and season with salt.
