Steps:
- Cook the bacon until it is just done but not too crisp. I lined a cookie sheet with foil and baked it at 350 degrees for 16 minutes while I was prepping everything.
- Line your slow cooker with aluminum foil. Leave enough to over hang so that you can wrap the potatoes on the top once in the slow cooker.
- Spray the inside of the foil with cooking spray and layer half of the potatoes along the bottom. Next layer with half of the bacon, green onions, onion, ranch packet and top with cheese. Repeat the layers and top with cheese reserving 1/2 cup. Pour melted butter over top.
- Cover the potatoes with remaining foil. This helps them to steam and cook perfectly. Cook on low for 4-6 hours in your slow cooker. Once finished, top with remaining 1/2 cup cheese and let melt on the top.
- Garnish with fresh green onions if desired.

Steps:
- Lightly coat a 6-quart or larger slow cooker with nonstick spray. In a large skillet, melt the butter over medium heat. Add the onion and sauté until softened, about 6 to 8 minutes, stirring frequently and adjusting the heat so that the onion does not crisp or turn dark brown. Add to the slow cooker.
- To the slow cooker, add the carrots, potatoes, Italian seasoning, salt, cayenne, and 3 cups chicken broth. Stir to combine. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the potatoes and carrots are completely tender.
- While the vegetables cook, in a medium bowl, whisk together the evaporated milk and cornstarch until no lumps remain. During the last 30 minutes of cooking, add the cornstarch/milk mixture. Continue cooking for 30 additional minutes.
- Just before serving, stir in the shredded cheddar and Greek yogurt. With a potato masher or large spoon, mash half of the potatoes directly in the slow cooker. The soup will continue to thicken as it cools. If you would like the soup to be thinner, add the remaining 1 cup chicken broth until you reach your desired consistency (warm up the broth first). Stir to combine, then season with salt and pepper to taste. Serve hot, topped with bacon, chives, and additional cheese/Greek yogurt as desired.

Steps:
- Add to Crockpot
- 1 medium diced onion (diced into small pieces)
- Add 2 pounds of largely diced potatoes. (They will get small as they soften and get mixed in.)
- Add chicken broth, milk, and cream of chicken soup.
- Cover and let cook all day on low setting, or at least 3 hours on the high settingRight before serving:
- Your potatoes will be breaking down to one degree or another depending on how long you've cooked it. f potatoes are still too large and not broken down after stirring, use your potato masher or immersion blender to break them down a bit till it's the texture (creamy or chunky) that you prefer.
- Before serving: In a medium skillet, cook bacon on medium heat for about 7 minutes or till nice and crisp. Then put bacon on a paper towel. Crumble bacon pieces for garnishing.
- Add 2 tablespoons of bacon grease from the skillet to your crockpot for extra flavor. (If you don't want the bacon grease in the soup, try cooking your bacon on paper bags in the oven, like I did here, for the perfectly crispy bacon!!!)
- Stir in the sour cream, 2 cups of cheese, and 1/2 the green onions.
- Cook until cheese is melted.
- GARNISH individual bowls with crispy bacon pieces, shredded cheese, and green onions.
