AVOCADO STUFFED WITH SHRIMP



Avocado Stuffed with Shrimp image

As typically Mexican as the previous recipe is, this one is just as typically American, right down to the Miracle Whip, which I have always preferred to mayonnaise. Naturally sweet shrimp is highlighted by a creamy, mildly sweet, tangy dressing and rich, buttery avocado. This is one of my favorite summer appetizers.

Yield makes 8 servings

Number Of Ingredients 8

1 pound small shrimp (51 to 60 per pound), peeled, deveined, cooked (page 25), and chilled
1 medium tomato, seeded and chopped
1/2 medium white onion, finely chopped
1 to 2 tablespoons chopped fresh cilantro leaves
1/4 cup Miracle Whip or mayonnaise
Juice of 1/2 lime (about 1 tablespoon)
Kosher salt and ground pepper to taste
4 ripe avocados

Steps:

  • In a large bowl, place the shrimp, tomato, onion, cilantro, Miracle Whip, and lime juice. Stir gently until well mixed. Add salt and pepper to taste.
  • Cut the avocados in half lengthwise and remove the pits. Place one avocado half on each of 8 small plates. Fill each half with a heaping scoop of the shrimp salad and serve.

If you have never had Peppadew peppers you are in for a treat. They are crunchy little jarred sweet red peppers with a small amount of heat jarred in a sweetened vinegar. Oh my! These are delicious. Try this easy recipe as an appetizer or a light lunch for a delicious treat! The smooth and creamy avocado and the crunchy hot sweet peppers are made for each other! Fantastic on a hot day! Remember that there is not a substitute for Peppadews that I am aware of so please use only those. You can get more info on them at peppadewusa.com, where I found this amazing gem of a recipe! Oh and do not discard the liquid in the peppadew jar! It can be used as a flavored vinegar! Hope you enjoy!

Number Of Ingredients 7

3 avocados
lemon juice
6 ounces cream cheese, room temperature (or mascarpone cheese)
8 peppadew peppers, drained and chopped
4 1/4 ounces shrimp, smoked (can of smoked shrimp)
salt and pepper, to taste if desired (I like course ground garlic sea salt on this)
Peppadew pepper (optional)

Steps:

  • Cut the avocados in half and remove the pit.
  • Rub the avocado meat with lemon juice to prevent discoloration.
  • Mix cheese, chopped peppers and smoked shrimp together and spoon mixture into the avocado halves.
  • Garnish with additional sliced or chopped Peppadew Peppers, if desired.
  • Serve immediately or keep chilled until ready to serve.

  • To a large bowl, add all the ingredients (If you're using raw shrimp, I recommend boiling cleaned shrimp for 1 minute or until just done, and setting in an ice bath to chill) and stir to combine. As it pertains to the avocados, you want to widen and somewhat hollow out the area to fill the avocado halves so there's space to add the shrimp mixture, but you don't want them totally clean. Scoop out approximately 50% of the flesh and stir this into the shrimp mixture.
  • Taste the mixture and as desired, add additional salt, pepper, lime juice, hot sauce (the 2 tablespoons I added gave it a kick but it wasn't overly spicy for our tastes), etc. to taste.
  • Spoon the mixture into the hollowed out avocados and serve immediately. Recipe is best fresh.
