1 (14 ounce) can reduced-sodium chicken broth
1 1/2 cups water
3/4 cup quick-cooking grits (not instant)
1/2 teaspoon fresh ground pepper, divided
3/4 cup sharp cheddar cheese (extra-sharp is best)
1 lb peeled and deveined raw shrimp (16-20 per pound)
1 bunch scallion, trimmed and cut into 1-inch pieces
1 tablespoon extra virgin olive oil
1/4 teaspoon garlic powder
1/8 teaspoon salt

Steps:

  • Position rack in upper third of oven; preheat broiler.
  • Bring broth and water to a boil in a large saucepan over medium-high heat. Whisk in grits and half of the pepper. Reduce heat to medium-low, cover and cook, stirring occasionally, until thickened, 5 to 7 minutes. Remove from heat and stir in the cheese. Cover to keep warm.
  • Meanwhile toss the shrimp, scallions, oil, garlic powder, the remaining pepper and the salt in a bowl. Transfer to to a rimmed baking sheet. Broil, stirring once, until the shrimp are pink and just cooked through, 5 to 6 minutes. Serve the grits topped with the broiled shrimp and scallions.

2 cups uncooked quick grits
6 ounces raw chopped shrimp
1/4 teaspoon salt
4 tablespoons butter (1/2 stick)
4 tablespoons sliced scallions (5 to 6 scallions)
2 tablespoons diced tomatoes (about 1 plum tomato)
1 teaspoon chopped fresh cilantro plus several small sprigs for garnish
4 ounces shredded Cheddar
Salt and freshly ground black pepper

Steps:

  • Bring water to a boil. Add grits, chopped shrimp, reduce heat to low and cook until grits are soft, about 5 minutes. Remove from heat and stir in butter, scallions, tomatoes, cilantro, and cheese. Season, to taste, with salt and freshly ground black pepper.

1/2 cup shredded cheddar (2 ounces)
Salt
3 tablespoons unsalted butter, divided
1 bunch scallions, thinly sliced
1 chipotle in adobo sauce, seeded and chopped, plus 1 tablespoon sauce
1/2 cup chicken broth
1 pound frozen large shrimp (31 to 35), thawed, peeled, and deveined (tails left on)
1/4 cup lime juice (from 2 limes)

Steps:

  • In a medium pot, cook grits according to package instructions. Stir in cheddar and season with salt.
  • Meanwhile, in a large skillet, melt 1 tablespoon butter over medium. Add scallions and chipotle and sauce; cook, stirring, until scallions are tender, 4 minutes. Add broth and bring to a simmer. Add shrimp and cook until opaque throughout, 3 minutes. Stir in lime juice and remaining 2 tablespoons butter and cook until sauce is slightly thickened, about 2 minutes. Season with salt. Top grits with shrimp and sauce.

1 cup quick-cooking grits
6 ounces shredded Cheddar cheese

1 onion, chopped
2 teaspoons minced garlic
1 pound uncooked shrimp, peeled and deveined
1 dash hot pepper sauce, or to taste

Steps:

  • Bring chicken broth, milk, and 1 teaspoon garlic to a boil in a saucepan. Stir in grits, reduce heat to low, and simmer until thickened, about 5 minutes.
  • Remove from heat and thoroughly mix in Cheddar cheese; season with salt and black pepper. Set grits aside and keep warm.

1 cup stone-ground grits
2 cups shredded sharp Cheddar cheese
3 tablespoons butter
1 pound shrimp, peeled and deveined
6 slices bacon, chopped
1 cup thinly sliced scallions
2 tablespoons chopped fresh parsley
1 large clove garlic, minced
4 teaspoons lemon juice

Steps:

  • Bring water to a boil in a pot. Add salt and pepper. Stir in grits; reduce heat and let simmer until water is absorbed, 20 to 25 minutes. Remove from heat and stir in Cheddar cheese and butter.
  • Rinse shrimp and pat dry.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease in the skillet over medium heat. Cook shrimp until they are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Add bacon, scallions, parsley, garlic, and lemon juice. Saute for 3 minutes.

  • Combine the first 6 ingredients in inner pot. Lock pressure lid. Press pressure function; select custom. Press timer; set to 10 minutes. Steps:

  • Over medium heat bring water to boil.
  • Add salt & whisk in grits.
  • Let grits cook for 5 minutes.
  • Mix in butter, milk, and cheese.
  • Cover and cook on low for 25-30 minutes.
  • Peel and devined shrimp.
  • Cover shrimp with Old Bay Seasoning.
  • In large skillet, melt butter.
  • Grated garlic into the melted butter.
