2 cups sugar
1 cup vegetable oil
4 eggs
4 bananas
1 cup sour cream
3 teaspoons vanilla
2 teaspoons baking soda
3 cups flour
nuts
1/2 cup sugar
1 tablespoon cinnamon

Steps:

  • Mash bananas.
  • Add sugar, oil, eggs, sour cream, vanilla, baking soda, and flour. Mix until well combined.
  • Pour into greased bread pans until 1/2 full, reserve half of batter.
  • Combine 1/2 cup sugar and cinnamon.
  • Sprinkle generously 1/2 of cinnamon/sugar combination onto batter.
  • Pour rest of batter into pans.
  • Sprinkle rest of cinnamon/sugar on top of batter.
  • Bake at 350 for approximately 1 hour, or until a toothpick comes out clean.

1 c sugar
1/2 tsp salt
1/2 c butter or margarine-one stick
3 ripe bananas-very ripe is great
2 eggs-beaten
1 tsp baking soda
2 c flour
1/2 c nuts chopped-pecans or walnuts

Steps:

  • 1. CREAM SUGAR, SALT AND BUTTER OR MARGARINE WITH BEATER
  • 2. THEN ADD THE 2 EGGS AND 3 MASHED BANANAS to the above mixture and blend well.
  • 3. IN SEPERATE BOWL ADD BAKING SODA PLUS THE FLOUR, SIFT AND MIX.
  • 4. ADD THE DRY INGREDIENTS TO THE CREAMED MIXTURE (OF SUGAR, SALT, BUTTER AND THE BANANA MIXTURE)MIX ALL UNTIL JUST WELL BLENDED THEN ADD THE CHOPPED NUTS.
  • 5. TURN INTO A GREASED LOAF PAN AND BAKE FOR ABOUT 1 HOUR AT 325 degrees or til brown. You can stick a toothpick into center and if it comes out clean it is done. Do not overbake and start checking with toothpick as soon as it starts looking brown which will be around an hr. I like to drizzle a little powered sugar frosting over the top while it is still warm, or just spread a little butter over the top instead. I prefer, the drizzle of frosting; however. It is wonderful bread and the best banana bread I have ever eaten. My grandmother clipped it out of the Omaha World Herald newspaper around 1958.

PEAR BANANA BREAD

A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes).

2 pears, peeled, chopped
2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter
1/4 cup vanilla yogurt
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350.
  • Mash bananas and pears in a bowl.
  • In a separate bowl, mix the rest of the ingredients until creamed together.
  • Stir in the fruit mixture.
  • Pour the batter into a greased loaf pan.
  • Bake for an hour and half.
  • Let cool for at least 10 minutes so it doesn't fall apart (it solidifies more with time).

It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
  • Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
  • Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
  • Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.
  • Spread slices with honey or serve with ice cream.

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
3 medium ripe bananas, mashed (about 1-1/2 cups)
1/2 cup milk
1 cup chopped walnuts or 1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 9x5x3-inch loaf pan. Combine flour, baking powder, baking soda, and salt in a medium bowl.
  • Beat together butter and sugar in another medium bowl until light in color. Beat in eggs, one at a time. Stir in vanilla.
  • Stir in flour mixture alternately with bananas and milk. Stir in 3/4 cup of nuts. Pour in prepared pan.
  • Bake for 1 hour and 10 minutes or until wooden pick inserted comes out clean. Cool on rack for about 10 minutes. Run thin knife around edges. Remove bread from pan to rack to cool. Bread is better next day. Wrap tightly and store at room temperature.

This is my mom's recipe for banana bread. It's of course the best I've ever had. It's the bread I grew up with, and the only thing I could eat on the morning of my wedding!!

3 bananas, ripe
1 cup sugar
2 eggs
1/2 cup canola oil or 1/2 cup vegetable oil
1/2 teaspoon salt
1 teaspoon vanilla
3 tablespoons milk
1/2 teaspoon baking powder
1 teaspoon baking soda
2 cups flour
1/2 cup walnuts, chopped
3/4 cup chocolate chips, any size
1/3 cup candied ginger, chopped

Steps:

  • Using a food processor.
  • Put in bananas and sugar, blend until pureed.
  • Add eggs and oil, blend until incorporated.
  • Add all other ingredients, except the flour, except nuts, choc chips and ginger into the puree and blend.
  • With the processor off, add the flour, PULSE 4 times, one second each pulse.
  • Scrape, pulse one or 2 more times to incorporate all the flour.
  • Add nuts, chips and ginger if desired. Mix by hand.
  • Spray 9x5 baking pan with favorite "non-stick baking spray with flour".
  • Add mixture to pan, scraping bowl.
  • Bake at 350 degrees for 1 hour or until tester comes out clean.
  • Let cool in pan 5 minutes.
  • Turn our on wire rack until cool.
  • Even better the next day.
  • Freezes beautifull.

Growing up in an Irish household, I have had the pleasure of tasting many a soda bread. It seems like every woman had her own recipe, and I have tasted them all. Some are brown and some are white, some have raisins and caraways, some have only one or neither, some are cakey and some are bready, some are round and some are oblong. This recipe uses sour cream instead of the traditional buttermilk, and is on the "cakey" side. You can bake them in either a 8x4-inch loaf pan or an 8-inch round pan.
