¼ cup pina colada mix
1 banana, mashed
¼ cup milk
2 drops orange food coloring, or as needed

Steps:

  • Combine mandarin oranges, sugar, pina colada mix, banana, milk, and food coloring in a saucepan. Bring to a gentle boil, stirring until fully combined. Transfer immediately to a small bowl. Cover with plastic wrap and freeze until firm, 8 hours to overnight.

2 cups pineapple juice
1 (15-ounce) can cream of coconut
1 (20-ounce) can pineapple bits, in juice, undrained
2 tablespoons dark rum
1 teaspoon coconut extract
Coconut Whipped Cream, for garnish, recipe follows
Shredded coconut, for garnish
Maraschino cherries, for garnish
1 cup heavy whipping cream, chilled
1/4 cup confectioners' sugar
1 teaspoon coconut extract
2 tablespoons dark rum

Steps:

  • Puree all of the sorbet ingredients in a blender until smooth and refrigerate for 1 hour. Add the mixture to an ice cream machine and run until slushy. Freeze until solid. Serve with Coconut Whipped Cream, shredded coconut, cherries and cocktail umbrella in coconut shells.;
  • Add the whipping cream to a chilled bowl and begin whipping with an electric mixer. Add the remaining ingredients and whip until soft peaks form. Serve on top of sorbet.

A friend who loved to entertain gave me the recipe for this lovely sorbet. Serving it as a refreshing special course adds a bit of elegance to my favorite meal. If you don't have an ice cream freezer, put the mixture into ice cube trays and stir occasionally while freezing. Mix in a blender when ready to serve.

1/2 cup lemon juice
3 medium ripe bananas, cut into chunks
1-1/2 cups sugar
2 cups cold water
1-1/2 cups orange juice

Steps:

  • Place lemon juice and bananas in blender; cover and process until smooth. Add sugar; cover and process until blended. Transfer to a large bowl; stir in water and orange juice. , Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer to a freezer container, allowing headspace for expansion. Freeze 2-4 hours before serving. Repeat with remaining sorbet mixture. May be frozen up to 1 month.

Steps:

  • In a small saucepan, stir together sugar and water. Bring to a boil, then remove from heat and allow to cool.
  • When the sugar syrup is cool, stir in bananas. Pour into a freezer - safe baking dish. Freeze for 3 to 4 hours, until set at the edges.
  • Remove from the freezer and transfer to a mixing bowl. Use an electric mixer to beat until smooth. Return to the freezer until gently set, at least 2 hours.

1 cup water
1 cup white sugar

Steps:

  • Mash bananas until smooth, stir in lemon juice.
  • In a small saucepan, bring water and sugar to a boil over high heat; reduce heat to medium and simmer for 2 minutes, until slightly thickened. Let cool to room temperature. (to speed up cooling of syrup place in fridge for 40 - 45 minutes.).
  • Stir cooled syrop into banana puree.
  • Freeze in ice cream maker according to manufacturers directions.
