SOUPE DE BONNE FEMME OR OLD WIVES SOUP
Yesterday we had a very hearty soup called Soupe de Bonne Femme which translates as Old Wives Soup. I dished it up to Malcolm, Megan and myself and we were totally stuffed! Very easy to make and tasted great. It needs very little ingredients and inexpensive to make.

Steps:
- 1.
- Cut off larger green endings of leeks and dispose. Wash tender white part of leeks well and cut into small circles.
- 2.
- Cook leeks for 1 minute with 1 Tablespoon of salted butter.
- 3.
- Add 1 Tablespoon of water and cook for 5 minutes more on low heat.
- 4.
- Peel potatoes and also cut them into circles.
- 5.
- Add them to leeks with 6 cups of water, salt and pepper to taste. Let soup boil very slowly for 45 minutes.
- 6.
- Butter the toast (with salted butter!) and put one piece in the bottom of each soup bowl.
- 7.
- Pour the soup directly on top of the toast and serve immediately.
- Make sure you use French bread with plenty of salted butter as this is whats gives such a fantastic flavour. You can also add some bacon just before the leeks are added and you can also add some green salad if serving as a main meal.

- Combine cinnamon sticks and water in a saucepan or teapot. Bring to a boil and simmer 15 minutes.
- Return to a boil and pour into cups with a teabag in each cup.
- You may add sugar and milk to taste. Do not add lemon or honey.

MINT CINNAMON TEA
This is yet another of my lovely tea creations. This blend's flavor reminds me strongly of various mint-flavored chewing gums. It makes a rather pleasant tea hot, but I prefer it chilled. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

- Assemble all the ingredients and place in a tea ball. Note: If you don't own a tea ball, then you can put the ingredients directly in the water and then strain out later.
- Place tea ball in hot water and steep for 10 minutes.
SWEET ICED CINNAMON TEA
This is a recipe for tea to be made in a 3 quart Mr Coffee Iced Tea Pot. You could probably make it in a saucepan on top of the stove. You can make it as sweet and cinnamonny as you want to. It is very refreshing.

- Put the cinnamon candies in the bottom of the container/well the tea bags go in Put tea bags on top of them.
- Fill the water well of the Iced Tea Pot with water.
- If you don't want to have ice in the pitcher while tea is brewing, you can fill water well a second time.
- Turn the Iced Tea Pot on.
- As tea is brewing, make sure candies are melting.
- You might have to help them along with a fork or spoon.
- If a sweeter tea is desired, put the sugar in the 1/2 cup water and mix well to dissolve sugar.
- Pour into pitcher of tea and stir.
- Pour tea over ice in tall glasses.
- Can also be poured into a cup and heated in a microwave oven for hot tea.

This tea is commonly used in Mid East and Puerto Rico, especially for upset tummies, and it is commonly given to colicky babies. If you like anise try this tea and you will be pleased that it makes a nice light tea.
