I really like the rich taste of sesame oil in this Thai-inspired dish. If you don't have it, canola oil does the trick, too. To get a similar nuttiness, toss in a handful sliced almonds before serving. -Kelli Whiting, Fortville, Indiana

1 teaspoon cornstarch
1/2 cup water
2 tablespoons reduced-sodium soy sauce
1 tablespoon honey
2 teaspoons curry powder
1/8 teaspoon crushed red pepper flakes
2 teaspoons sesame or canola oil
1 medium sweet red pepper, julienned
1 small onion, cut into thin wedges
1 garlic clove, minced
2 cups shredded cooked turkey breast
1 green onion, sliced
2 cups hot cooked brown rice
Thinly sliced serrano pepper and toasted sesame seeds, optional

Steps:

  • In a small bowl, mix the first six ingredients until blended. In a large skillet, heat oil over medium-high heat. Add red pepper and onion; stir-fry until crisp-tender. Add garlic; cook 1 minute longer., Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 2 minutes or until sauce is thickened. Add turkey; heat through. Stir in green onion. Serve with rice. If desired, top with serrano pepper and sesame seeds.

3 tablespoons sesame seeds
4 tablespoons fresh lemon juice (from 2 lemons)
2 tablespoons toasted sesame oil
2 tablespoons pure maple syrup
1 tablespoon low-sodium soy sauce
1 tablespoon chopped peeled ginger
1/2 cup frozen cooked wheat berries or brown rice, thawed
8 ounces sugar snap peas, trimmed and halved
1 bunch scallions, roughly chopped
1 pound rotisserie turkey breast or chicken breast (skin removed), cut into 1/2-inch pieces
1 carrot, shaved into ribbons with a vegetable peeler
1 small or 1/2 large head iceberg lettuce, cut into large chunks

Steps:

  • Toast the sesame seeds in a large dry skillet over medium heat, stirring occasionally, 4 to 5 minutes. Transfer to a blender and add the lemon juice, 1 tablespoon sesame oil, the maple syrup, soy sauce, ginger and 3 tablespoons water; pulse until smooth. Set aside.
  • Add the remaining 1 tablespoon sesame oil to the skillet and heat over medium-high heat. Add the wheat berries and stir-fry until golden, about 5 minutes. Add the snap peas and scallions; stir-fry until crisp-tender, about 3 minutes. Transfer to a large bowl. Add the turkey, carrot, lettuce and sesame dressing; toss to coat.

This turkey stir-fry recipe is such an easy and tasty way to use up leftover turkey. It's VERY simple to make, and the sauce is super flavorful!

1/4 cup light soy sauce ((or use a gluten-free alternative))
1 tablespoon rice vinegar
2 teaspoons cornstarch
1/2 teaspoon red pepper flakes ((1/4 teaspoon if you don't like your food spicy))
1 lb. cooked white turkey meat (skinless, cut into thin strips (about 3 cups))
1 (1 lb.) package frozen stir-fry vegetables*
1 tablespoon avocado oil
1 tablespoon minced fresh garlic
1 tablespoon minced fresh ginger root
1 tablespoon sesame oil
1/4 cup green onions (thinly sliced, green parts only)

Steps:

  • Whisk the sauce ingredients in a small bowl. Set aside.
  • In a large, deep skillet, heat the avocado oil over medium-high heat for about 2 minutes. Add the frozen vegetables, garlic, and ginger. Cook, stirring often, until the veggies are defrosted and tender, about 5 minutes.
  • Reduce the heat to medium. Give the sauce another stir, then add the turkey meat and the sauce to the skillet. Cook, stirring, until everything is well-coated and the sauce thickens, about 2 minutes.
  • Transfer the turkey stir-fry to a serving platter. Drizzle with the sesame oil and scatter the scallions on top. Serve immediately.

Steps:

  • Heat canola oil in large skillet over medium-high heat. Add bell pepper and carrot and cook, stirring often, until softened, about 3 minutes. Add garlic and ginger and cook, stirring constantly, until fragrant, 30 seconds. Add turkey and cook, stirring often, until no longer pink, about 5 minutes. Add scallions and cook, stirring often, until scallions are softened, about 1 minute.
  • Stir in peas, soy sauce, sesame oil, salt, and pepper flakes and cook just until heated through, about 2 minutes. Remove from heat and stir in cilantro. Divide rice evenly among 4 bowls; top evenly with turkey mixture. Sprinkle with sesame seeds.
  • Yields 1 1⁄2 cups turkey stir-fry and 1/3 cup rice

1 large wholemeal tortilla wrap
½ x 265g pack stir-fry vegetables (without beansprouts)
½ tbsp sesame seeds

Steps:

  • Mix the tahini with the lemon juice and 1 tbsp water to form a paste. Spread on the base of the wholemeal tortilla wrap with some seasoning. Scatter over the stir-fry vegetables and sesame seeds. Roll up in a tight wrap and halve.
