SESAME TURKEY STIR-FRY
I really like the rich taste of sesame oil in this Thai-inspired dish. If you don't have it, canola oil does the trick, too. To get a similar nuttiness, toss in a handful sliced almonds before serving. -Kelli Whiting, Fortville, Indiana

Steps:
- In a small bowl, mix the first six ingredients until blended. In a large skillet, heat oil over medium-high heat. Add red pepper and onion; stir-fry until crisp-tender. Add garlic; cook 1 minute longer., Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 2 minutes or until sauce is thickened. Add turkey; heat through. Stir in green onion. Serve with rice. If desired, top with serrano pepper and sesame seeds.

- Toast the sesame seeds in a large dry skillet over medium heat, stirring occasionally, 4 to 5 minutes. Transfer to a blender and add the lemon juice, 1 tablespoon sesame oil, the maple syrup, soy sauce, ginger and 3 tablespoons water; pulse until smooth. Set aside.
- Add the remaining 1 tablespoon sesame oil to the skillet and heat over medium-high heat. Add the wheat berries and stir-fry until golden, about 5 minutes. Add the snap peas and scallions; stir-fry until crisp-tender, about 3 minutes. Transfer to a large bowl. Add the turkey, carrot, lettuce and sesame dressing; toss to coat.

TURKEY STIR-FRY
This turkey stir-fry recipe is such an easy and tasty way to use up leftover turkey. It's VERY simple to make, and the sauce is super flavorful!

- Whisk the sauce ingredients in a small bowl. Set aside.
- In a large, deep skillet, heat the avocado oil over medium-high heat for about 2 minutes. Add the frozen vegetables, garlic, and ginger. Cook, stirring often, until the veggies are defrosted and tender, about 5 minutes.
- Reduce the heat to medium. Give the sauce another stir, then add the turkey meat and the sauce to the skillet. Cook, stirring, until everything is well-coated and the sauce thickens, about 2 minutes.
- Transfer the turkey stir-fry to a serving platter. Drizzle with the sesame oil and scatter the scallions on top. Serve immediately.

- Heat canola oil in large skillet over medium-high heat. Add bell pepper and carrot and cook, stirring often, until softened, about 3 minutes. Add garlic and ginger and cook, stirring constantly, until fragrant, 30 seconds. Add turkey and cook, stirring often, until no longer pink, about 5 minutes. Add scallions and cook, stirring often, until scallions are softened, about 1 minute.
- Stir in peas, soy sauce, sesame oil, salt, and pepper flakes and cook just until heated through, about 2 minutes. Remove from heat and stir in cilantro. Divide rice evenly among 4 bowls; top evenly with turkey mixture. Sprinkle with sesame seeds.
- Yields 1 1⁄2 cups turkey stir-fry and 1/3 cup rice
