Recipe VIDEO above. A grand Fish Pie, fit for a king yet economical to make! Chunks of fish flakes smothered in a creamy white sauce, topped with mashed potato then baked until golden. Use a combination of both smoked and raw unsmoked fish for optimum flavour and texture. Fresh tarragon is also optional - it gives an extra edge to the flavour that people can't quite put their finger on!

400 g / 14 oz smoked fish of choice ((Note 1))
400 g / 14 oz raw unsmoked fish of choice (, I used Perch (Note 2))
3 cups / 750 ml milk (, low fat or full fat)
1 brown onion (, quartered (Note 3))
4 cloves (, optional (Note 4))
50 g / 3 tbsp unsalted butter
2 garlic cloves (, minced)
1/2 small onion (, finely chopped)
1 small carrot (, finely chopped)
1 small celery stick (, finely chopped)
1/3 cup / 50g plain flour (all purpose flour, Note 11 for GF)
1 tbsp fresh tarragon (, finely chopped (optional))
2 tbsp parsley (, finely chopped)
Salt and pepper
750 g / 1.5 lb floury potatoes (, peeled and cut into 2.5cm / 1" pieces (Note 5))
30 g / 2 tbsp+ unsalted butter
1/2 cup / 125 ml milk, any fat %
1 cup frozen peas
4 hard boiled eggs (, quartered (optional) (Note 6))
30 g / 2 tbsp butter (, melted)
1/4 cup / 15g grated parmesan cheese (, optional)
Finely chopped parsley (, for garnish (optional))

Steps:

  • Push a clove into the skin of each onion. Place in a pot or large skillet, add milk, turn stove onto medium high heat.
  • When milk is barely simmering, add fish - don't worry if it's not entirely covered, it can be turned / moved around.
  • Poach fish for 7 minutes, then use a slotted spoon to transfer fish straight into a medium baking dish (Note 8).
  • Flake into chunks using forks. Remove bones if you see any.
  • Use slotted spoon to remove onion and cloves from milk, discard. RESERVE milk.
  • Preheat oven to 180C/350F. Boil water for potatoes.
  • Melt butter in a large, deep skillet or pot over medium high heat. Add onion and garlic, cook for 1 minute. Then add celery and carrot, cook for 5 minutes until carrot is soft.
  • Turn heat down to medium low. Add flour, mix in - it will look gluey.
  • Add half the milk and quickly start mixing. Once incorporated, the mixture will thicken quickly. Add remaining milk and stir. (Video helpful here)
  • Turn heat up to medium and keep stirring until the mixture thickens to the consistency of honey - about 3 minutes. (Note 7)
  • Take it off the heat, stir through tarragon and parsley. Adjust salt and pepper to taste.
  • Scatter top of flaked fish with peas, then pour over the Sauce. GENTLY stir through (don't want fish to turn into mush!).*
  • Smooth top, then nestle egg in all over the pie.
  • Bring a large pot of water to the boil. Add potatoes and cook for 15 minutes or until soft. (Do this while making the Sauce).
  • Drain potato, add butter, milk, salt and pepper. Mash until creamy - add more milk if required.
  • Immediately dollop then spread onto pie (cold mash = hard to spread).
  • Use fork to draw squiggles on surface (rough surface = better golden bits).
  • Drizzle surface with melted butter, sprinkle with parmesan.
  • Bake for 35 minutes or until top is deep golden.
  • Stand for 5 minutes before serving, garnished with parsley if desired. See notes for reheating and make ahead.

This recipe for salmon pie is a seaside version of the classic French Canadian meat pie. It is often served right along with meat pie on Christmas Eve and New Years Eve.

2 cups unbleached all purpose flour (plus extra for rolling)
1/2 teaspoon kosher salt
2/3 cup butter or lard
6-7 tablespoons cold water
1 beaten egg
2 pounds russet potatoes (about 6 medium)
2 tablespoons unsalted butter
1/4 cup chopped onions
1/2 cup water
1 pound salmon fillet (pin bones removed)
1/2 teaspoon kosher salt (or to taste)
1/4 teaspoon pepper (or to taste)
3 tablespoons unsalted butter
3 tablespoons unbleached all purpose flour
1 cup milk
2 tablespoons lemon juice
1 tablespoon chopped fresh dill (or 1 teaspoon of dried dill)
salt and pepper to taste

Steps:

  • In a large bowl, combine flour and salt. Cut in butter or lard until mixture is an even crumbly texture. Add cold water a tablespoon at a time and mix until dough comes together.
  • Shape the dough into a disc, wrap, and chill in the refrigerator. While pastry is chilling, prepare filling.
  • Wash and peel the potatoes. Cut into chunks and boil in a medium size pot of water until tender, about 12 minutes. Drain, mash the potatoes, and set aside.
  • Melt the butter in a large skillet over medium heat. Add the onions, and sauté until they are softened, about 5 minutes.
  • Add the 1/2-cup of water to the skillet.
  • Season the salmon fillet with salt and pepper, and place it into the skillet skin side down.
  • Spoon liquid and onions over the salmon, cover the skillet, and cook until the salmon is opaque, about 5 minutes. Turn off the heat and let the salmon cool slightly.
  • Remove the skin and break the salmon into pieces. Add the salmon, onions, and poaching liquid to the mashed potatoes and mix to combine. Taste and adjust salt and pepper if needed.
  • Preheat the oven to 400°F.
  • On a lightly floured surface, divide dough in half and form two balls. Flatten one ball with your hands, and roll dough to about 12-inches in diameter, to fit a 9-inch pie pan.
  • Place the pastry into the pie plate and add the salmon pie filling. Gently pat the filling down to remove any air spaces.
  • Brush around the outer edge of the pastry with the beaten egg. Roll out the top pastry and place on top of the pie filling.
  • Fold the top crust under the bottom crust and pinch the edges. Brush with egg wash and cut vent holes.
  • Bake the salmon pie in a preheated oven for 30-35 minutes, or until the pastry is golden brown. While the salmon pie is baking, make the dill béchamel sauce.
  • Melt the butter in a small saucepan over medium heat. Add the flour and whisk until smooth. Gradually add milk stirring constantly. When sauce begins to thicken, add the lemon juice, dill, and salt and pepper to taste. Simmer for 2 minutes. Keep warm until ready to serve.
  • Remove the pie from oven and let it cool for at least 10 minutes before serving. Cut into pie wedges, drizzle with the dill sauce if desired, and serve warm.
  • Yield: Makes 1 pie, about 8 servings.

6 potatoes, peeled
1 small onion, minced
1 clove garlic, minced
1 tablespoon butter
1 (6 ounce) can red salmon, undrained
1 teaspoon dried thyme
1 cup milk
2 (9 inch) unbaked pie shells
1 to taste salt and pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • In a medium saucepan, cook onions, garlic and butter over medium heat until vegetables become transparent in color.
  • Add onion/garlic mixture, salmon and thyme to cooked potatoes. Mash all together with milk, adding just enough to bring about a mashed potato consistency. Spread evenly into pie shell.
  • Place second pie shell over top of salmon mixture. Cut slits into the upper shell, then pinch edges of both pie shells together. Bake on lower rack of oven for 45 minutes.

1kg Maris Piper potato , cut into large chunks
2 large eggs , separated
400g frozen whole-leaf spinach (frozen weight), defrosted and squeezed dry
85g reduced-fat mature cheddar
whole nutmeg , for grating
500g fish - a mix of white and salmon is good (I used 2 frozen salmon fillets and 2 cod, defrosted)
1 onion , halved
a few whole cloves
1 fresh or dried bay leaf
300ml semi-skimmed milk
300ml fish stock (from a cube is fine)
25g butter
2 tbsp extra-virgin olive oil
50g plain flour
1 tsp wholegrain mustard

Steps:

  • Boil the potatoes for 20 mins until tender. Meanwhile, put the fish in a frying pan, skin-side down. Stud the onion with the cloves and put into the pan with the bay, milk and stock. Bring to the boil, then cover and simmer for 2 mins. Remove the cod, which should flake easily, then re-cover and cook for 3 mins more until the salmon is just cooked through. Lift out the fish and set aside. Strain the cooking liquid.
  • In another pan, melt the butter with the oil, stir in the flour and cook for 2 mins until it smells toasty. Take off the heat and slowly whisk in the fish cooking liquid. Return to the heat, whisk until the sauce boils and thickens, then stir in the mustard. Heat oven to 180C/160C fan/gas 4.
  • Drain and mash the potatoes until smooth, then beat in the egg yolks, spinach and most of the cheese. Season generously with salt, pepper and nutmeg. Whisk the egg whites to soft peaks, then fold into the potato in 2 batches.
  • Flake the fish into a large baking dish, pour over the sauce and top with the spinachy potato. Scatter with the rest of the cheese and bake for 35-40 mins until golden and risen.

1 (7-ounce) pouch albacore tuna, drained well and shredded by hand
2 green onions, chopped fine
2 teaspoons Dijon mustard
2 large eggs, beaten
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3/4 cup panko bread crumbs, divided
Olive oil, for sauteing

Steps:

  • Place the tuna, onions, mustard, eggs, lemon juice, salt, pepper and 1/4 cup of the bread crumbs into a medium mixing bowl and stir to combine. Divide the mixture into 8 rounds and set aside on a parchment lined half sheet pan. Allow to rest for 15 minutes. Place the remaining bread crumbs into a pie plate. One at a time, coat each round in the panko on all sides.
  • Heat enough olive oil to cover the bottom of a 12-inch saute pan over medium heat until shimmering. Add the croquettes and cook 2 to 3 minutes on each side or until golden brown. Remove to a cooling rack set over a half sheet pan lined with paper towels. Allow to cool for 2 to 3 minutes before serving.

3/4 cup shortening

1 lb baked fresh salmon or 1 lb tuna
1 large onion, diced
1 clove garlic, minced
2 tablespoons butter
2 cups sour cream
4 eggs
1 1/2 cups gruyere cheese, shredded
1 teaspoon dill weed
1/4 teaspoon salt

Steps:

  • Preheat oven to 375.
  • Make parmesan crust: Combine flour and parmesan cheese.
  • Cut in shortening until mixture resembles size of small peas.
  • Sprinkle with about 2 T water.
  • Form into a dough, adding more water as needed.
  • Press into an 8- or 9-inch springform pan.
  • Bake at 375 for 10 minutes.
  • Make filling: Saute onion and garlic in butter until onion is soft.
  • Beat sour cream and eggs until blended.
  • Drain salmon and break into bite-size pieces (if canned).
  • Stir into sour cream mixture along with vegetables, about 1 cup gruyere (reserving the other 1/2 cup), crumbled dill weed and salt.
  • Pour into baked crust; top with remaining gruyere.
  • Bake at 375 for 65 to 70 minutes.
  • Cool 15 minutes in pan.
  • Remove sides of pan and serve.
