BACON-WRAPPED JALAPENO POPPER-STUFFED CHICKEN BREASTS

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Combine cream cheese, Cheddar cheese, jalapenos, garlic powder, and barbecue seasoning in a bowl. Mix well until evenly combined.
- Cut a deep pocket into each chicken breast, being careful not to cut all the way through to the other side. Fill the pocket of each chicken breast with cream cheese mixture. Wrap each chicken breast with 3 slices of bacon.
- Place a baking rack on top of a baking sheet and place stuffed chicken on top of the rack.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from oven and let rest for 5 minutes before serving.40

BACON-WRAPPED JALAPEñO POPPER CHICKEN
Here are all the good foods -- jalapeño poppers, cheese, bacon -- rolled up into dinner. Cooking it on the grill gets the bacon crispy while the cheese stays gooey and melted on the inside.

- Wear gloves to protect your hands and use a small paring knife to cut the stem-end off the jalapeño; you should see the white ribs attached to the walls of the jalapeño. Use the paring knife to remove the ribs from the walls. Make a cut down the length of the jalapeño from the top to the tip. Carefully, without breaking the jalapeño in half, scrape out the ribs and seeds. Transfer to a microwave-safe bowl, add 3 tablespoons water, cover tightly with plastic wrap and microwave on high power until the jalapeños turn olive green and are lightly softened but are still firm and hold their shape, 2 to 3 minutes. Let cool.
- Stuff each cooled jalapeño with a piece of cream cheese; squeeze the walls around the cream cheese to force out any air pockets and to seal the jalapeño walls together.
- Mix together the cumin, 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl. Pound the chicken lengthwise down the breast to make a rectangular 1/4-inch-thick cutlet. Sprinkle with a quarter of the seasoned salt. Repeat with the remaining chicken and seasoned salt.
- With one of the narrow ends of the chicken facing you, lay a piece of Colby Jack cheese at the bottom of the cutlet. Place 1 stuffed jalapeño crosswise on top of the cheese about 2 inches from the bottom. Tightly roll up the chicken and the cheese around the jalapeño, folding in the sides as you roll. Repeat with the remaining chicken and jalapeños.
- Lay 5 strips of bacon on a clean work surface so that the strips are slightly overlapping (about 1/4-inch) and are wide enough to completely cover a chicken roll. Place 1 chicken roll at the bottom of the bacon blanket. Wrap the bacon tightly over the chicken roll. Repeat with the remaining bacon and chicken rolls.
- Prepare a grill for indirect grilling and heat to medium-high heat.
- Place the chicken rolls, bacon seam-side down, on the cooler side of the grill. Cover and cook until the bacon is beginning to brown and the cheese is beginning to melt and ooze from the sides, 15 to 20 minutes. Transfer the chicken rolls to the hot side of the grill and cook until lightly charred, 1 to 2 minutes per side. Let cool 10 minutes before serving.
BACON-WRAPPED JALAPENO POPPERS
Steps:
- Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick spray.
- In a medium bowl, mix together the cream cheese, Cheddar, cilantro, salt, pepper and green onions.
- Fill each jalapeno half with a heaping teaspoon of the cream cheese mixture. Wrap the bacon tightly around the jalapenos, overlapping slightly.
- Place the wrapped jalapenos, cheese-side up and spaced 1-inch apart, on the prepared baking sheet. Refrigerate for 30 minutes.
- Transfer to the oven and bake until the bacon is crisp, about 25 minutes.
BACON WRAPPED JALAPENO POPPERS
Can you stand the heat? If so try my most requested starter. They have been a hit everytime I make them. Simple recipe for major taste. I have never had one "left over". They are best when grilled, but you can cook them in the oven. I prefer charcoal, as to harness maximum flavor. Enjoy! Tip: Rub the wooden kabob sticks with raw bacon to make the poppers slide on. You can make these somewhat mild and super hot, what ever you like.

Steps:
- Core the peppers using the blunt edge of a potato peeler, save half the seeds removed, toss the core.
- In a bowl add cream cheese, chili powder, hot sauce (you pick the heat) and liquid smoke and half the jalapeno seeds.
- Mix/Mash together until blended.
- Stuff the cored peppers with cream cheese mix then wrap with raw bacon. Use your fingers!
- Kabob them, repeat untill all the peppers are stuffed and wrapped.
- Grill on an indirect heat, (on tin foil) for about 15 minutes.
- Then on an open flame for 5-8 mins to crisp the bacon, turning a few times.
- Serve and enjoy!

- Mix cream cheese, garlic, sundried tomatoes, cilantro and salt until well blended. You can now set the mixture aside or even freeze for up to a couple of months in a freezer bag.
- You'll want to wear some kitchen gloves for this step! Slice the jalapeños lengthwise, being careful not to slice them in half. Then slice at the top along the width of the pepper just about a quarter inch below the base of the stem until you cut through the core, again being careful not to cut completely through the pepper (This step will probably take some practice). Now you need to decide whether you want to keep the seed webbing for those that like it really hot, or remove them for a lot less heat. I like to do about half and half so that you can please everyone. Anyway, if removing the seeds, gently remove the core using a paring knife by spreading the pepper carefully, you may need to shake some of the remaining seeds out.
- Separate the strips of bacon and cook in the microwave for about 5 minutes on high, just enough to give it a head start. Then pat dry with paper towels. Just to soak up some of the grease. Set it aside to cool.
- Fill either a pastry bag or just a freezer bag (cutting one corner out), and pipe some of the filling into each pepper until full but still able to almost close the pepper.
- Wrap each pepper with a strip of bacon then use two or three toothpicks to secure the pepper closed.
- Place the jalapeños on a medium heat grill and cook until the bacon is crisp. you'll need to turn frequently to heat them evenly. you may even want to use foil to prevent the mess. I find that by cooking the bacon a little first and not over filling that you'll get minimal mess however.
- Let them sit for about 5 to 10 minutes and serve them up! Don't forget which ones have the seeds!

- Preheat oven to 425 degrees.
- She says line a rimmed baking sheet with parchment paper. But I would set them on a baking rack in the rimmed baking sheet to get them out of the grease although they are harder to get out that way.
- Cut a lengthwise slit down center of each pepper.
- Cut a crosswise slit at top of each pepper to form a T.
- Carefully remove seeds from inside of peppers, leaving peppers intact.
- In a large bowl, combine black beans, corn, both cheeses, chili powder, and cumin.
- Spoon about 1 1/2 tablespoons bean mixture evenly into each jalapeno.
- Fold bacon half slice around each jalapeno.
- Secure with wooden picks, if needed.
- Bake for 15 minutes or until bacon is cooked through.
- Serve immediately.

- Cut stems off of peppers and cut them all in half longways.
- Remove seeds from peppers.
- Fill each pepper with cream cheese and sprinkle cheddar cheese on top.
- Wrap 1/2 slice of bacon around each pepper half.
- Place on baking sheets and place in 450 degree oven for 10 to 15 minutes or until bacon is fully cooked.

- Preheat oven to 400. Line a sheet with foil and coat with butter or grease. (I didn't use foil and did not need).
- Cut the jalapenos in half lengthwise and use a spoon to scoop out the seeds and ribs.

Steps:
- Flatten each chicken thigh with a heavy pan or meat hammer or whatever you have.
- Stuff each jalapeno halve with about a T of cream cheese.
- Place the jalapeno in the chicken thigh and roll it up (doesn't matter if it closes all the way).
- wrap each chicken thigh with 2 strips of bacon.
- Bake in 325 oven for about an hour
- For best results setup charcoal grill for indirect cooking (charcoal on one side meat on the other).
- Cook low n slow for about 2 hours.
- Baste with bbq sauce the last 30 minutes.

- Preheat your smoker (or oven). Preheat your smoker to 250 degrees F for indirect heat with mild wood like apple or hickory. You can also bake these in the oven at the same temperature.
- Clean the jalapenos. Prepare your poppers by slicing the tops off of the jalapenos, cutting them in half, and scraping out the ribs and seeds inside of the poppers.
