Fast-and-Fabulous Egg and Cottage Cheese Casserole image

This is the easiest and best egg casserole I have tried so far. My sweet mother-in-law shared this recipe with me. I make 3 or 4 at the time and keep them in the freezer to take to gatherings, feed guests, or surprise kids. Green chilies make it pop!

10 eggs, beaten
2 (16 ounce) packages cottage cheese
1 pound shredded Monterey Jack cheese
1 (4 ounce) can diced green chiles
½ cup butter, melted
½ cup all-purpose flour
½ cup cooked crumbled bacon
1 teaspoon baking powder

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a 10x13-inch baking dish with cooking spray.
  • Mix eggs, cottage cheese, Monterey Jack cheese, green chiles, butter, flour, bacon, and baking powder together in a large bowl; pour into prepared baking dish.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until a toothpick inserted into the center of the casserole comes out clean, about 30 minutes more.

1 cup whole-milk ricotta cheese
3 ounces cream cheese, softened
7 large eggs
6 tablespoons butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons all-purpose flour
1/2 teaspoon baking powder
3 cups grated Gruyere or Swiss cheese
2 tablespoons minced chives or chopped green onions
1/4 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 350°. Beat ricotta and cream cheese until smooth. Add eggs, butter, salt and pepper; beat until blended. In another bowl, whisk flour with baking powder; add to egg mixture. Stir in Gruyere and chives. Pour into a greased 13x9-in. baking dish. Sprinkle with Parmesan., Bake, uncovered, until a knife inserted in center comes out clean, 25-30 minutes. Let stand 10 minutes before cutting.

3 cups uncooked macaroni
1 (28 ounce) can whole peeled tomatoes, drained and chopped
1 teaspoon Italian seasoning
1 teaspoon dried oregano
1 teaspoon basil
salt and pepper to taste
1 ½ cups grated Cheddar cheese
1 ½ cups shredded mozzarella cheese
¾ cup freshly grated Parmesan cheese
¼ cup crumbled feta cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to boil over high heat. Add macaroni, and cook until al dente, about 8 to 10 minutes. Drain, and pour hot pasta into a casserole dish.
  • Meanwhile, in a large bowl, stir together tomatoes, italian seasoning, oregano, basil, salt, and pepper.
  • Stir into the hot pasta 1 cup of Cheddar, 1 cup of mozzarella, and 1/2 cup of Parmesan. Continue to stir until the cheeses have melted. Then stir in tomato and herb mixture. Sprinkle 1/2 cup Cheddar, 1/2 cup mozzarella, 1/4 cup Parmesan, and 1/4 cup feta over the top of the casserole.
  • Bake in preheated oven for 15 to 25 minutes.

4 cups ORE-IDA Diced Hash Brown Potatoes
3 Tbsp. oil
1/4 tsp. black pepper
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese
5 eggs
1/2 cup milk
1-1/2 cups KRAFT Shredded Cheddar & Monterey Jack Cheeses
2 Tbsp. finely chopped onions
1 Tbsp. maple-flavored or pancake syrup

Steps:

  • Heat oven to 400ºF.
  • Place 4 bacon slices, with long sides together, on foil-covered pizza pan sprayed with cooking spray. Weave remaining bacon slices, 1 at a time, horizontally though bacon slices on pizza pan to form lattice pattern.
  • Bake 20 min. or until crisp and golden brown.
  • Meanwhile, cook potatoes in hot oil in skillet as directed on package. Spoon into 9-inch pie plate. Use bottom of dry measuring cup to press potato mixture onto bottom and up side of pie plate. Sprinkle with pepper.
  • Microwave cream cheese in large microwaveable bowl on HIGH 30 sec.; whisk until creamy. Add eggs, 1 at a time, beating after each addition until well blended. Stir in milk. Add shredded cheese and onions; mix well.
  • Reduce oven temperature to 350ºF. Pour cream cheese filling into potato crust. Bake 30 min. or until center is almost set. Meanwhile, use wide spatula to carefully transfer bacon lattice from pizza pan to double layer of paper towels to drain.
  • Place bacon on top of potato mixture; brush with syrup. Bake 10 to 15 min. or until bacon is heated through.

Steps:

  • Place croutons on bottom of greased casserole, top with 1 1/2 cups of cheese.
  • Brown and drain sausage, put on top of cheese.
  • Beat eggs with milk and seasonings, pour over top.
  • Refrigerate overnight.
  • Next Day:
  • Dilute soup with 1/2 cup milk.
  • Pour over and spread remaining 1/2 cup of cheese on top.
  • Bake at 300 F. for 1 1/2 hours.
