SESAME CHICKEN WITH SOY DIP
Liven up chicken breasts with an easy crunchy coating and serve with an Oriental-style dipping sauce

Steps:
- Heat oven to 200C/fan 180C/gas 6 and line a baking tray with baking paper. Mix the breadcrumbs, sesame seeds, five-spice and a little seasoning on a plate. Pat dry the chicken, dip into the egg, then roll in the breadcrumb mix. Arrange on the baking tray, then bake for 25-30 mins until crisp and cooked through.
- When the chicken is almost ready, boil the broccoli in salted water for a few mins until just tender. Mix the soy sauce with the citrus juices and sugar to make a dipping sauce. Serve the crispy chicken with the broccoli and little dishes of the sauce for dipping, plus lime wedges for squeezing over.

- Make dipping sauce. In a medium bowl whisk together soy sauce, rice vinegar, and honey until honey dissolves. Whisk in sesame oil, ginger, and garlic until emulsified. Leave at room temperature or refrigerate if desired. (recipe note #1)
- Preheat a gas grill (or charcoal grill) to high. (recipe note #2)
- Rinse tuna steaks and pat dry with paper towels. Rub all sides of tuna with olive oil and season with salt and pepper. Grill tuna 2 minutes per side, until seared on the outside and rare in the center. (If you prefer a cooked center, cook an additional ~2 minutes per side.) Transfer tuna to cutting board. With a thin, sharp knife, thinly slice tuna across the grain (1/4 to 1/2-inch thick slices). Sprinkle with sesame seeds and sliced green onion. Serve with dipping sauce.

SESAME CHICKEN WITH SPICY DIPPING SAUCE
Steps:
- In a food processor, combine the onion, garlic, and ginger and pulse to mince. Place in a bowl and combine with the lemon juice, olive oil, soy sauce, rum, crushed red pepper, sugar, and salt. Shake, or stir well, before use. Cut the chicken breast into 2-inch strips. Put in plastic bag or tub with marinade. Marinate in the refrigerator overnight.
- Preheat the oven to 400 degrees F.
- Combine sesame seeds with the flour. Dredge marinated chicken strips in the flour-sesame mixture. In a skillet, heat enough canola oil to lightly coat the bottom of the skillet until hot, but not smoking. Cook chicken strips, on both sides until golden brown. Transfer to a shallow roasting pan and finish in the oven.
- To assemble:
- Toss the Sesame Noodles with some Soy-Ginger Vinaigrette and some fresh mesclun greens. Place the noodle salad on a plate and top with the cooked sesame chicken. Drizzle some Spicy Apricot Sauce over the chicken. Garnish with pickled ginger and a side of the apricot dipping sauce.
- Cook angel hair pasta in boiling, salted water for 2 minutes or until al dente. Drain and rinse with cold water to stop the cooking. Add the cilantro, scallions, olive, and sesame oils. Combine well.
- Combine all ingredients, except for the water, in a blender. Blend for 30 seconds. Then add the water and blend for another 10 seconds.
- Put all ingredients in a saucepan, and heat until the glaze melts. Whisk until smooth, and serve at room temperature. Add water if it gets too thick.
SESAME SOY DIPPING SAUCE/MARINADE
I found this on the internet while looking for dipping sauces to use for a fondue party. YUMMY! Tasted great with shrimp, chicken, etc. We found that we like soaking the shrimp for awhile in the sauce after cooking it so I think that I will also try this as a marinade sometime soon.

- Combine vinegar, water, sugar, salt, and chili flakes in a medium saucepan and bring to a boil over high heat.
- Remove from heat. Add cucumber slices and stir.
- Let it rest for 10 minutes, then transfer cucumber to a sealable container and refrigerate until ready to use.
- Whisk together all soy ginger lime sauce ingredients together in a small bowl. Set aside until ready to serve.
- Place sesame seeds on a plate. Pat dry the tuna steaks with a paper towel to remove excess water.
- Dredge and press tuna in sesame seeds, coating evenly. Sprinkle with more seeds as needed.
- In a medium frying pan over medium-high heat, warm the oil until just smoking.
- Frying two portions at a time, arrange the tuna steaks in the pan (do not overcrowd) and cook until the sesame seeds start to turn golden underneath, about 1 minute.
- Turn the tuna over and cook for 1 minute.
- Sear the edges of the tuna for 15 seconds on each edge.
- Transfer the tuna to a plate with a paper towel, gently patting to soak up any excess oil. Repeat with remaining tuna portions.
- Transfer tuna to a cutting board and cut ¼-inch thick slices.
- Arrange tuna on individual serving plates or bowls. Serve with pickled cucumbers and soy ginger lime sauce.
