SESAME SHRIMP FRIED RICE WITH CABBAGE

Sesame Shrimp Fried Rice with Cabbage image

This dish is a 10 minute meal in a bowl that gives you all the full-flavor satisfaction of fried rice without loads of grease and salt. Make sure you use very cold cooked rice (hello leftover Chinese food), or you will wind up with a sticky mess.

Provided by Ellie Krieger

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 9

1 tablespoon canola oil
4 scallions, white and green parts, thinly sliced
1 tablespoon peeled, grated fresh ginger
1 pound peeled, cleaned small shrimp
5 cups thinly sliced green cabbage, cut crosswise into 3-inch pieces
1 tablespoon toasted sesame oil
4 cups very cold cooked brown rice
3 tablespoons low-sodium soy sauce
2 tablespoons sesame seeds

Steps:

  • Heat the oil in a very large nonstick skillet or wok over a high heat. Add the scallions, ginger and shrimp and cook stirring frequently until the shrimp turn pink, about 1 1/2 minutes. Add the cabbage and continue cooking until it begins to soften, but is still somewhat crisp, about 2 minutes more. Transfer the shrimp-cabbage mixture to a bowl.
  • Heat the sesame oil in the same skillet or wok over a medium-high heat. Add the rice and cook stirring frequently, until heated through, about 3 minutes. Add the shrimp-cabbage mixture back to the skillet, stir in the soy sauce and sesame seeds and serve.

Yield 4 servings

Number Of Ingredients 14

1 (3") piece ginger, peeled, finely grated
2 garlic cloves, finely grated
1/2 cup tahini
1/4 cup low-sodium soy sauce or tamari
1/4 cup mirin (Japanese rice wine)
1/4 cup unseasoned rice vinegar
1/4 cup hot chili sesame oil, plus more for serving
2 Tbsp. vegetable oil
1 lb. ground pork, beef, chicken, or turkey
1 tsp. kosher salt, divided, plus more

1 bunch scallions, white and pale green parts cut into 1" pieces, dark green parts thinly sliced
8 oz. rice noodles of any shape
Toasted sesame seeds and sliced seaweed snacks (for serving; optional)

Steps:

  • Whisk ginger, garlic, tahini, soy sauce, mirin, vinegar, and ¼ cup sesame oil in a medium bowl until smooth; set sauce aside.
  • Heat vegetable oil in a large skillet over high. Break up meat into pieces with your hands and scatter in an even layer across skillet. Cook, undisturbed, until well browned underneath, about 5 minutes; season with 1/2 tsp. salt. Continue to cook, breaking up with a wooden spoon or spatula, until cooked through, about 2 minutes. Add carrots and white and pale green scallion parts; season with 1/2 tsp. salt. Cook, stirring constantly, until combined and warmed through, about 1 minute.
  • Meanwhile, place noodles in a large pot of boiling salted water. Immediately remove pot from heat and let noodles sit until tender, 5-10 minutes, depending on their shape. Drain and transfer to a large bowl
  • Pour reserved sauce and 1/2 cup hot water into skillet and reduce heat to medium. Cook, stirring constantly, just until sauce starts to bubble and is smooth, about 1 minute. Pour over noodles in bowl and toss to coat, adding more hot water if needed to loosen sauce.
  • Divide noodle mixture among bowls. Top with sliced scallion greens, sesame seeds, and/or seaweed, if desired. Drizzle with sesame oil before serving.

SESAME LIME SCALLION RICE

Sesame Lime Scallion Rice image

This delicious, easy rice has a light Asian flavor, and pairs well with almost any protein like fish, chicken or pork! The key here is the sesame oil, so try not to substitute it.

Provided by Faux Chef Lael

Categories     Long Grain Rice

Time 35m

Yield 3 Cups, 4 serving(s)

Number Of Ingredients 8

2 tablespoons sesame oil, divided
6 scallions, thinly sliced, white and green parts divided
1 1/2 cups jasmine rice
3 cups chicken broth (or stock, low-sodium is fine)
1 1/4 teaspoons coarse salt, divided
1/2 teaspoon ground pepper
1 lime, zested and juiced
1 tablespoon toasted sesame seeds

Steps:

  • In a 3- to 4-quart saucepan or skillet, heat 1 tablespoon of sesame oil over medium heat. Add the scallion whites, 1/4 teaspoon of salt, and a pinch of pepper. Cook, stirring often, until tender but not browned, about 5 minutes.
  • Add the rice and cook, stirring often, until it begins to crackle, 2 to 3 minutes.
  • Add the chicken broth, lime zest, 1 teaspoons salt and 1/4 teaspoons pepper; bring to a boil. Cover and turn the heat down to low. Cook until the rice is tender and the liquid is absorbed, about 18 minutes. The trick to perfect is rice is not to lift the lid or stir during this stage. Leave it alone until all the liquid is absorbed.
  • Remove from the heat and using a fork, fluff the scallion greens, 1 tablespoon of sesame oil, and the lime juice into the rice. Let rest 5 minutes.
  • Sprinkle with toasted sesame seeds and serve.

  • Plain Jasmine Rice. This dish is simple and delicate, so it goes well with simple flavor foods such as scallion pancakes. Having said this, it should be noted that jasmine rice is also very bland on its own and needs to be served with a flavorful dish.
  • Stir-Fried Vegetables. This is an easy and straightforward alternative to plain jasmine rice. However, similarly to the rice, stir-fried vegetables need a complimentary dish with a strong flavor profile for best results.
  • Braised Beef Noodle Soup. Have noodles instead of rice or vegetables with your scallion pancakes for an extra tasty meal. The beef broth used in braised beef noodle soup perfectly complements the flavors of scallion pancakes.
  • Chinese-Style Braised Pork Belly. This is a good option for those who want to enjoy scallion pancakes with either meat or noodles. As opposed to the beef noodle soup, the Chinese-style braised pork belly has both noodles and meat.
  • Fried Fish Fillet with Chili Sauce. Scallion pancakes go well with different types of fish and seafood. For example, you can use fried fish fillets as a side dish to your meal.
  • Stir-Fried Sesame Beef. Stir-fried sesame beef is a meal you would eat without rice or noodles, as it has its main ingredient. However, if you want to add something to the dish to make it even better, try using scallion pancakes.
  • Sour and Hot Fish Soup. This is another seafood option that works well with scallion pancakes. This dish has unique flavors that the pancakes’ taste can accentuate.
