SESAME GINGER GREEN BEANS
These sesame ginger green beans are tender crisp and a little spicy. A quick keto, paleo and vegan side dish, flavoured with sesame, garlic, ginger and jalapeño.

Steps:
- Wash beans and trim stem end.
- Blanch the beans: plunge into a large pot of boiling water just until the beans turn bright green, then immediately plunge into a large bowl of ice water. Drain in a colander.
- Heat a wok or large skillet, then add the sesame oil. Quickly stir fry the shallot, garlic, ginger and jalapeño for 30 seconds. Add the beans and toss. Cook for 2 minutes, then add the coconut aminos or soy sauce and stir until well coated. Cook for a further 2 minutes or just until beans are crisp tender.
- Transfer to a serving dish and garnish with sesame seeds. Serve immediately.

GREEN BEANS WITH GINGER AND GARLIC
Here is a recipe for fresh green beans, boiled just until barely tender and bright green, then tossed in a pan with minced garlic and ginger. The beans can be cooked a day ahead, leaving nothing more to do before the meal than to assemble everything over high heat.

- Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
- When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

- Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and run under cold water. Drain well.
- Heat a wok shaped skillet or large nonstick frying pan over high heat. Go once-around-the-pan with wok or vegetable oil, add several drops sesame oil, and crushed pepper flakes. The pan will smoke. Add beans and stir-fry for 2 minutes. Add sesame seeds and coarse salt and toss to coat beans evenly.
GINGER, CARROT AND SESAME GREEN BEANS

- Heat a wok over high heat, and then add the vegetable oil. Add the ginger and cook for 30 seconds. Add the carrots and green beans and stir-fry for 2 minutes (adding a splash of water if necessary to facilitate cooking). Season the vegetables with the light soy, rice vinegar and a drizzle of toasted sesame oil. Garnish with a sprinkling of the toasted white and black sesame seeds.
QUICK SESAME GREEN BEANS
This is my interpretation of the green beans from my favorite Japanese restaurant. Serve with a grilled steak! You can omit the miso paste if you choose.

- Place the green beans into a steamer insert and set in a pot over one inch of water. Bring to a boil, cover and steam for 5 minutes. Remove from the heat and transfer beans to a serving bowl.
- Meanwhile, in a small bowl, stir together the soy sauce, miso paste, red pepper flakes, garlic and ginger. Pour over the green beans and toss to coat. Sprinkle sesame seeds on top.

JAPANESE-STYLE SESAME GREEN BEANS
I discovered this dish at my mother-in-law's house during a family holiday buffet. Her being Japanese, she had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

- Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. SESAME ROASTED GREEN BEANS
These are a delicious and different way to prepare green beans. I made these for a dinner party, doubled the recipe and there was not a bean left.

- Preheat oven to 450 degrees. Line rimmed baking sheet with foil, spread beans on baking sheet.
- Drizzle with olive oil and sprinkle with 1/2 tsp salt; Using hands, toss to coat evenly, and distribute in even layer.
- Roast in oven for 10 minutes.
- While roasting, combine garlic, ginger, honey, sesame oil, and red pepper flakes in small bowl.
- Remove beans from oven. Coat beans evenly with the garlic/ginger mixture; redistribute in even layer.
- Return to oven and continue roasting until beans are dark golden brown in spots and starting to shrivel, 10-12 minutes longer.
- Adjust seasoning with salt if necessary, toss well. Sprinkle with sesame seeds.

- Heat the oil until very hot.
- Blanch the beans in the hot oil for 30 seconds.
- Drain on paper towels.
- In a separate pan, saute the ginger, green onion, garlic, and ham for 4 minutes.
- Combine the sugar, vinegar, and soy sauce.
- Mix the chicken stock with the cornstarch.
- Add both liquid mixtures to the pan in which the ham mixture was sauteed and bring to a boil, stirring constantly.
- Add the string beans to the pan, heat, and coat with the sauce.

- Place a 9″ cast iron skillet over medium heat. When the pan is hot, add the avocado oil, garlic, and ginger. Sauté 30-45 seconds or until fragrant, then add the green beans to the pan and stir to distribute the garlic and ginger. Turn the heat up to medium high, and add the 1/4 cup water to the pan. Partially cover the pan with a lid placed slightly askew to steam/sauté. Stir every 1-2 minutes and continue to cook until the water is gone, about 6-7 minutes, or until the green beans are bright green and crisp tender.
- Remove the lid, and turn the heat up to high. Add the maple syrup, coconut aminos, sesame oil, and red pepper flakes. Cook stirring continuously until the sauce reduces to a glaze like consistency, and almost all liquid is gone in the pan, 1-2 minutes.
- Place the finished green beans in a serving dish, sprinkle with the optional sesame seeds, and serve immediately.
