SESAME BRAISED CHICKEN & CABBAGE

By using our Healthy Sauté and stovetop braising techniques you get a healthier dish without heated oils that is still full of flavor.

2 boneless skinless chicken breasts, cut into 1 inch pieces
4 cups green cabbage, sliced thin
4 cups finely chopped kale, stems removed
1 medium onion, cut in half and sliced thin
1 tablespoon minced fresh ginger
2 medium garlic cloves, minced
1/2 cup chicken broth
1 tablespoon chicken broth
1 teaspoon turmeric powder
1 teaspoon ground coriander
1 (15 ounce) can diced tomatoes, drained
2 tablespoons rice vinegar
1 tablespoon extra virgin olive oil
1/4 cup chopped scallion top
1 tablespoon sesame seeds
salt
white pepper

Steps:

  • 1. Prepare ingredients as listed above.
  • 2. Heat 1 TBS broth in a stainless steel wok or large skillet. Healthy Sauté onion in broth over medium heat for about 5 minutes, stirring frequently, until translucent. Add garlic and ginger and continue to sauté for another minute.
  • 3. Add chicken pieces and cook for a couple of minutes. Add turmeric, coriander, and mix with chicken. Add kale. Sauté for another couple of minutes, stirring constantly.
  • 4. Add ½ cup broth and bring to a boil on high heat. Reduce heat and simmer over low heat covered for about 3 minutes, stirring occasionally.
  • 5. Add cabbage, diced tomatoes, and vinegar and simmer for another 4 minutes. Remove from heat, toss with olive oil, salt, and pepper.
  • 6. Serve sprinkled with minced scallion tops and sesame seeds.
  • 7. Healthy Cooking Tip: Make sure the cabbage does not cook more than about 4 minutes. If it cooks beyond that it will start releasing liquid and dilute the flavor of your dish. By slicing it thin, it allows it to cook in a short amount of time, creating a fresh tasting dish with a lot of flavor.

Chicken and Cabbage Salad With Miso-Sesame Vinaigrette image

This simple salad calls for a specific set of ingredients, but it can also be considered a loose guideline. Thinly sliced leftover steak, shredded salmon or sliced dense tofu could easily take the place of the chicken - and that chicken can be left over from the night before, whether it's been poached, grilled, pan-seared or cooked on a rotisserie. Any crisp, crunchy lettuce will do. You could opt for shredded carrots and diced jicama instead of cucumber and radish, or add a handful of split cherry tomatoes and raw snap peas cut on a bias. As long as the basic balance of protein, dressing, greens, vegetables and herbs is maintained, the rest is up to you and your vegetable drawer.

Number Of Ingredients 10

8 ounces cooked, shredded chicken (about 2 cups)
1/2 cup Miso-Sesame Vinaigrette, plus more as needed
2 small romaine hearts or 1 small head green or red cabbage, thinly shredded (about 6 cups)
1 small cucumber, peeled, halved lengthwise, seeds removed, then sliced on a sharp bias into 1/4-inch slivers
8 small radishes, thinly sliced
1 (2-inch) knob fresh ginger, peeled, cut into thin planks, then slivered into fine matchsticks
Handful fresh mint leaves, very roughly chopped
Handful fresh cilantro leaves, very roughly chopped
1 small red onion or a few scallions, thinly sliced
Kosher salt and freshly ground pepper

Steps:

  • In a large bowl, toss the chicken with 6 tablespoons miso-sesame vinaigrette. Add remaining ingredients to the bowl, reserving some of the herbs, ginger and onion for garnish. Add another 2 tablespoons vinaigrette and toss to combine. Taste, and adjust seasoning with more dressing, salt or pepper, as desired.
  • Transfer to a serving bowl, sprinkle with reserved herbs, ginger and onion, drizzle with a little more dressing, and serve immediately.

3/4 cup white cabbage, shredded
2 tablespoons vegetable oil
1/4 teaspoon red pepper flakes
1 1/2 teaspoons sesame seeds
1/4 teaspoon soy sauce

Steps:

  • In a saucepan or fry pan, put the oil, half the sesame seeds, the soy sauce and the red pepper flake on a medium high heat. Heat the oil to a light sizzle and until the sesame seeds turn golden brown.
  • Put the cabbage in the pan and turn it in the heat until it wilts, about 3 minutes. Sprinkle the remaining sesame on top of the cabbage, toss to coat and serve.

1 1/2 lbs savoy cabbage
1/4 cup canola oil (plus 1 tablespoon)
2 whole cloves
1 tablespoon black mustard seeds
20 curry leaves
1 bay leaf
2 tablespoons shallots, minced
2 teaspoons garlic cloves, minced (about 4 whole cloves)
2 tablespoons fresh ginger, peeled and julienned
1/2 tablespoon ground turmeric
1 -2 tablespoon jalapeno pepper, minced
1 cup tomatoes, diced (fresh or canned)
1 1/2 cups vegetable broth
kosher salt

Steps:

  • Cut cabbage into 2-inch wedges (you'll have 6 to 8 of them), leaving the core intact so that the wedges stay together while they cook.
  • Heat a heavy skillet, over medium heat, and add 1/4 cup oil; heat this until it shimmers, then add cabbage.
  • Cook cabbage, turning once, so that it is browned on both sides, abut 2 to 3 minutes per side; transfer to a plate and set aside.
  • Reduce heat in skillet to medium low, add remaining tablespoon oil; add cloves, mustard seeds, curry leaves, bay leaf, shallot, and garlic, cooking and stirring 1 minute.
  • Add ginger, turmeric, 1 tablespoon jalapeno, tomato, and broth; season with salt (you can add more jalapeno to taste).
  • Increase heat to medium high and bring to a boil; return cabbage, cover, reduce heat to medium, and braise until tender, about 10 minutes (turn once halfway through braising).
  • Remove and discard cloves, curry leaves, and bay leaf.

Open, sesame! This is a family favorite. For a variation, you can also use bone-in chicken pieces, but be sure to increase the cooking time in this case. Tip: To toast sesame seeds, place in a baking dish in a heated oven for about 5 to 10 minutes, watching carefully not to burn.

2 tablespoons soy sauce
¼ cup toasted sesame seeds
2 tablespoons all-purpose flour
¼ teaspoon salt
1 pinch ground black pepper
4 skinless, boneless chicken breast halves
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place soy sauce in a 9x13 inch baking dish. On a piece of wax paper, mix together the sesame seeds, flour, salt and pepper. Dip the chicken pieces in the soy sauce to coat, then dredge in the sesame seed mixture. Arrange in baking dish in a single layer, then drizzle with melted butter.
  • Bake at 400 degrees F (200 degrees C) for approximately 40 minutes, or until chicken is cooked through and tender and juices run clear. Baste with drippings once during cooking time. Garnish with extra sesame seeds if desired, and serve.
