A thick stew with a rich potato base, fresh kale, and slices of savory kielbasa. This is a meal all by itself.

6 large potatoes, peeled and cubed
¼ cup butter
10 cups water
1 teaspoon salt
1 teaspoon ground black pepper
2 ½ pounds kale - rinsed, dried and chopped
⅔ pound kielbasa sausage, sliced into 1/2 inch pieces

Steps:

  • Place the potatoes into a large stockpot, over medium high heat. Add butter and water, and bring to a boil. Cook potatoes until tender, about 20 minutes. Reserve the cooking liquid and mash potatoes in the pan until smooth. Return the potato water to the pot and stir in salt and pepper. Simmer for 20 minutes.
  • Stir in the fresh kale and sausage and simmer for another 30 minutes. Serve hot.

1/2 pound smoked turkey kielbasa or Polish sausage, sliced
1 pound potatoes, peeled and cubed
2 cups shredded cabbage
1 large onion, chopped
1 can (14-1/2 ounces) reduced-sodium chicken broth
3/4 cup water, divided
2 tablespoons sugar
1 teaspoon caraway seeds
1/4 teaspoon pepper
1 can (16 ounces) kidney beans, rinsed and drained
3 tablespoons cider vinegar
2 tablespoons all-purpose flour

Steps:

  • In a large saucepan or nonstick skillet, brown sausage over medium heat. Add the potatoes, cabbage, onion, broth, 1/2 cup water, sugar, caraway seeds and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until potatoes are tender, stirring occasionally., Add beans and cider vinegar; cover and simmer 5-10 minutes longer. Combine flour and remaining water until smooth; stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened.

1 pound kielbasa sausage, cut into 1 inch pieces
1 tablespoon butter
1 (14 ounce) can beef broth
1 (10.75 ounce) can tomato soup
1 ½ cups water
3 cups shredded cabbage
1 onion, chopped
½ cup diced green bell pepper
1 ½ teaspoons salt
½ teaspoon ground black pepper
¼ cup sour cream

Steps:

  • In a large saucepan over medium heat, cook sausage in butter until brown. Pour broth, tomato soup and water into pan with sausage. Stir in cabbage, onion and bell pepper and season with salt and pepper. Bring to a boil, then reduce heat and simmer 45 minutes, or until flavors are well blended. Stir in sour cream and heat through before serving.

A hearty and healthy winter soup full of amazing flavor! I adapted this recipe from one on Allrecipes.com to make it easier and quicker to prepare as well as lower in fat and high in lean protein and healthy veggies with cancer-fighting antioxidants such as kale and cabbage. I always make enough to feed an army, but halving is no problem. Kids love it, too.... Enjoy! **CORRECTION: I had changed my original recipe in order that my Atkins-dieting husband could eat the stew, too. The verdict from the kids after making it a few times was a resounding, "Change it back!" It is much simpler, tastier and quicker to make this way.... So here I am, changing it back. I'm sorry, Geema, that you got to the recipe before then. :(

2 tablespoons olive oil
1 lb turkey kielbasa, cut in half then sliced into 1/2 inch half moon pieces (or other low-fat smoked turkey sausage)
1 lb turkey ham, cubed (or other low-fat ham)
2 cups onions, chopped
12 cups reduced-sodium fat-free chicken broth
1 teaspoon ground black pepper
4 cups instant potato flakes
2 lbs kale, rinsed, deveined and chopped
4 cups napa cabbage, shredded (one head)
4 (15 ounce) cans white kidney beans, drained (cannellini)
salt

Steps:

  • In a large stockpot or dutch oven, heat the oil over medium-high heat, and saute the kielbasa and ham for 5-6 minutes, until browned. Add the onions and saute for a few minutes more, until they are softened. If at any time the pot is looking dry, add a splash of stock to continue the saute.
  • Next add the stock and the black pepper and bring to a boil.
  • When boiling, add the potato flakes, stirring until dissolved.
  • Add the kale and cabbage, then lower the heat to simmer and cover.
  • Simmer for 20-25 minutes, or until the cabbage and kale are tender. Add the drained and rinsed beans, then simmer for an additional 10 minutes.
  • Before serving, taste and add salt as needed. (It shouldn't need any as prepared stock and the smoked meats have plenty, but use your own judgment and add some if you deem it necessary.) Yum!

Kielbasa and cheese is an incredibly comforting combination. And the torn kale in this recipe holds onto the cheese sauce so well it becomes almost tastier than the macaroni itself. We used sharp Cheddar for this recipe, but 1 pound of your favorite melting cheese will work as well. Just don't use a cheese aged longer than 12 months or your sauce might get grainy or separate.

1 pound elbow macaroni
2 tablespoons extra-virgin olive oil
1 pound Tuscan or curly kale or Swiss chard, stems removed, leaves torn
1/2 medium onion, chopped
1 garlic clove, finely grated
12 ounces kielbasa, cut into 1/2-inch-thick slices
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 pound sharp Cheddar cheese (not aged more than 12 months), shredded
Kosher salt
Pinch cayenne pepper

Steps:

  • Bring a large pot of water to a boil. Salt the water and add the macaroni. Cook, stirring occasionally, until al dente, about 9 minutes. Drain.
  • Meanwhile, heat 1 tablespoon oil in a large heavy pot over medium-high heat until very hot, about 1 minute. Add the kale and 1/4 cup water, cover and let cook until wilted and just tender, about 2 minutes. Uncover, toss the kale, and continue cooking until all of the water has evaporated, 4 to 5 minutes. Transfer the kale to a medium bowl and set aside.
  • Heat the remaining 1 tablespoon oil in same pot over medium-high heat. Add the onion and garlic and cook until the onion is tender and begins to brown, 4 to 5 minutes. Add the kielbasa and cook, tossing occasionally, until lightly browned, 2 to 3 minutes. Add the flour, stir to coat and cook for 1 minute. Stir in the milk and kale and bring to a boil; add the cheese a few handfuls at a time and stir to combine. Reduce the heat to low and cook, stirring frequently, until the cheese has completely melted, about 2 minutes.
  • Stir the macaroni into the cheese mixture until evenly coated; remove from the heat. The sauce will look very loose but will thicken off the heat.

This is a recipe passed down from my husband's mom. I have no idea where she got it from, but I am glad I got it from her. It is a quick and easy stew. If you like cabbage and kielbasa, you will like this. What a great winter dish.. enjoy!

1 lb kielbasa
1 large head of cabbage
1 large onion
3 -4 russet potatoes (peeled)
water
garlic (to taste)
salt and pepper (to taste)
vinegar (to add on as wanted per serving)

Steps:

  • Cut the cabbage in about 8 slices and then in chunks. Place this in a pot with enough water to cover. Add onion that has been cut into chunks. Cover and bring to a boil.
  • When the cabbage is almost done, add sliced raw potatoes (about 1/2" thick) and sliced Kielbasa.(sliced thin(about 1/4") if you want meat in every bite, or thick if you want to bite into chunks (about 3/4").
  • Also add your spices. There should be just enough water to barely cover the stew.
  • Cover and cook at a simmer till potatoes are done.(about 15 minutes).
  • I serve this in a soup bowl, and add a bit of vinegar to your liking, just before eating. If you don't care for vinegar, adding a bit of chicken stock and less water while cooking will flavor this dish also.
  • It is a real warm you up meal on a cold winter day. I keep this meal simple. I serve with it with biscuits and butter, or a loaf of garlic bread.
