Steps:
- Sauté the onions in a pot in a little bit of oil until slightly browned.
- Add the carrot, celery, and garlic and 6 cups of vegetable broth.
- Bring to the boil and then simmer for 30 minutes.
- Season to taste with salt and pepper.
- Strain the veggies from the broth and add the mushrooms and scallions before serving.
- Serve with soy sauce and sriracha sauce to add for additional flavor.

JAPANESE CLEAR SOUP
This low-calorie Japanese Clear Soup makes a perfect appetizer before the main meal or a delicious light lunch!

- To make the dashi stock, soak the kombu in a pot with water for 10 minutes. After that, turn on the heat and wait until just starting to boil. Remove from heat and add the katsuobushi. Wait for 3-4 minutes and pour the stock through a strainer discarding the solids.
- In a skillet, add the sesame oil and spread the sweet potato cubes in a single layer. Cook for 1 minute, then shake the skillet to flip them and cook for a minute more. Set aside.
- In a 2-quart pot, bring the stock to a rolling boil. Reduce the heat to a simmer and add the daikon, carrot, and salt. Simmer for 2 minutes or until the veggies are barely tender. Skim away any froth if it appears.
- Add the shiitake mushrooms. Cook for 3-4 minutes. Add the soy sauce and mirin. Add the sweet potato cubes.
- Mix the cornstarch with water to get a paste and stir it into the soup, on a high heat. Continue stirring for about a minute, until the soup thickens. Sprinkle with the chopped green onions and serve. Enjoy!

- Place a large 8-quart stock pot over medium-high heat. Add the oil and place the onion, garlic, carrots, and ginger in the pot. Sear the veggies on all sides to caramelize, making sure not to burn the garlic.
- Pour in the chicken broth, beef broth, and water. Bring to a boil. Lower the heat to a low boil and simmer for at least one hour.
- Use a skimmer to remove the vegetables from the broth. Taste, then salt as needed.
- To serve: ladle hot broth into bowls and sprinkle chopped scallion and sliced mushrooms over the top.

- Bring your broth to a boil.
- Add Mushrooms& Carrots simmer for 2 minutes.
- Add raw prawns& Scallops, simmer until the prawns are just pink.
- Stir in the lemon juice, Soy& Sherry.
- Strain the broth into 6 soup bowls and artistically arrange some carrots, mushrooms, 2 prawns, 2 scallops.
- a slice of lemon and a green onion in each bowl- Serve.
- N.B ***To clarify Broth:Whisk an egg white into one cup cool broth, Whisk this mixture into the rest of the cooled broth, heat to boiling whisking the entire time. - Wrap the tofu in kitchen paper and place it on a tilted cutting board. Place a small cutting board or a container with a weight in it on the tofu. Leave it for 30 minutes or so. Do this step before preparing the vegetables.
- Cut konnyaku lengthwise into three equal strips. Then slice each strip perpendicular to the first cut to 5mm thick. Pouer boiling water over the konnyaku pieces. Drain.
- Cut the pressed tofu into half, horizontal to the cutting board. Cut the two layers of tofu lengthwise to half, then cut to 1.5cm thick perpendicular to the second cut.
